Angel-Hair Pasta with Shrimp and Greens image

Balance out carbs with shrimp: A dozen shrimp is just 85 calories, plus shrimp is packed with protein and selenium, a powerful antioxidant.

3 tablespoons extra-virgin olive oil
4 cloves garlic, chopped
1 pint cherry tomatoes, halved
Kosher salt
8 ounces angel-hair pasta
8 cups chopped escarole, kale and/or Swiss chard
1 pound medium shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
Freshly ground pepper
1/2 cup fresh basil, chopped
Grated zest and juice of 1/2 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the greens to the water. Drain and rinse under cold water; transfer to a large bowl.
  • Combine the shrimp, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until golden, about 1 minute. Add the shrimp and cook until pink, about 3 minutes per side. Add the tomatoes and cook, stirring often, until slightly softened, about 2 minutes.
  • Add the shrimp mixture to the bowl with the pasta along with the basil and lemon zest and juice; toss to combine.

A super easy to make shrimp and pasta recipe! It's flavored with parmesan, lemon, garlic and herbs for a delicious combo that will leave you craving more.

1 1/4 lbs peeled and deveined shrimp
12 oz dry angel hair pasta
3 Tbsp olive oil
3 Tbsp unsalted butter
Salt and freshly ground black pepper
3 cloves garlic (, minced)
1 1/2 tsp lemon zest
3 Tbsp fresh lemon juice
3 Tbsp chopped fresh basil
3 Tbsp chopped fresh parsley
1/2 cup finely shredded parmesan

Steps:

  • Cook pasta in salted water according to directions listed on package (keep in mind it will only take about 4 minutes so I recommend adding the pasta to water when you begin cooking the shrimp), reserve 1/2 cup pasta water before draining.
  • In a large skillet, heat olive and butter over medium-high heat. Add shrimp (you can remove tails first if desired), season with salt and pepper and saute 2 minutes, then add garlic and saute until shrimp has cooked through, about 2 minutes longer.
  • Toss drained pasta in with shrimp along with 1/3 cup reserved pasta water, lemon zest and lemon juice. Add more water 1 Tbsp at a time as needed. Toss in 2 Tbsp of each parsley and basil, then sprinkle top with parmesan cheese and remaining 1 Tbsp of each parsley and basil. Serve warm.

Need a last-minute appetizer? These quick and easy peel-and-eat shrimp will be on the table in no time. These "steam" in the shell, which helps keep the shrimp moist. I like to use "extra jumbo" size shrimp, which are 16 to 20 shrimps per pound. Will serve 4 as an appetizer, or 2 as a main entree.

1 pound shell-on deveined jumbo shrimp
nonstick cooking spray
3 tablespoons butter
1 tablespoon hot pepper sauce
1 teaspoon reduced-sodium seafood seasoning (such as Old Bay®)
2 wedges lemon, for serving

Steps:

  • Preheat an air fryer to 390 degrees F (200 degrees C).
  • Quickly rinse shrimp under cold water to remove any ice or sediment. Pat dry with paper towels. Place shrimp in one layer in the basket of the air fryer and lightly mist with cooking spray. You may have to do 2 batches depending on the size of your air fryer.
  • Air-fry shrimp for 5 minutes. Flip and continue cooking shrimp until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes longer.
  • Meanwhile, place butter in a small microwave-safe bowl. Heat butter at 50 percent power until melted, 30 to 60 seconds. Mix in hot sauce and Old Bay® seasoning.
  • Place cooked shrimp into a large bowl. Drizzle with butter mixture and toss to coat. Serve immediately with lemon wedges.

6 ounces angel hair pasta, uncooked
2 tablespoons reduced-calorie margarine
1/4 cup sliced green onion (about 3 large)
3 tablespoons fresh lemon juice (1 large)
2 large garlic cloves, minced
1 lb peeled deveined large raw shrimp
1/2 cup fat-free half-and-half or 1/2 cup fat-free evaporated milk
1/4 cup tub-style light cream cheese
2 tablespoons chopped fresh dill weed or 1 1/2 teaspoons dried dill

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain.
  • While pasta cooks, melt margarine in a large nonstick skillet over medium-high heat.
  • Add green onions, lemon juice, and garlic; cook 2 minutes, stirring often.
  • Add shrimp, and cook 5 minutes or until shrimp turn pink.
  • Remove shrimp from skillet; set aside.
  • Add half-and half, cream cheese, and dillweed to skillet, stirring until smooth.
  • Cook 1 to 2 minutes or until mixture is bubbly.
  • Return shrimp to skillet, and cook until thoroughly heated.
  • Combine shrimp mixture and pasta, tossing well.
  • Serve immeditately.

3/4 cup oil
1/4 cup fresh parsley, chopped
1/4 cup scallion, chopped
1/4 cup dill, chopped
3 tablespoons Dijon mustard
1 1/2 teaspoon black pepper
1 tablespoon minced garlic
3 bay leaves
3 teaspoons salt
6 pounds angel hair pasta

Steps:

  • Combine all ingredients except pasta into 3 small ziplock bags. Divide pasta into 3 larger bags and place the smaller ones inside and freeze until later.
