DOUBLE NUT TORTE



Double Nut Torte image

4 cups nuts, 1 kind or an assortment, roasted and cooled
1 1/2 cups sugar
3/4 cups butter or margarine
5 large eggs, separated
1 1/2 tablespoons lemon juice
1 tablespoon grated lemon peel
1/3 cup all-purpose flour

Steps:

  • Place nuts in a food processor and grind until finely ground.
  • In a bowl beat 1/2 cup of sugar and 1/4 cup of the butter until blended. Add the egg yolks, one at a time, beating well after each addition. Mix in the ground nuts, lemon juice, lemon peel and all but 2 tablespoons of the flour.
  • In a deep bowl beat egg whites with a mixer on high speed until soft peeks form. Gradually beat in 1/4 cup sugar until the whites hold stiff, shiny peaks. Gently fold the whites into the yolk mixture.
  • Spoon the batter into a buttered and floured 9-inch cheesecake pan with removable rim. Bake in a 350 degree oven until the torte is very lightly browned and the center feels just barely firm to the touch, about 20 to 25 minutes.
  • To prepare the topping, in a medium sized pot melt remaining 1/2 cup butter over a medium heat. Add the remaining sugar, flour and nuts. Stir the mixture until bubbling. Immediately spoon the toffee topping evenly over hot torte, pushing nuts with a spoon to arrange decoratively. Return to oven and bake until nuts and topping are slightly more brown, about 15 to 20 minutes longer.
  • Cool torte in the pan for 10 minutes, then run a knife inside the pan rim to release. Remove pan rim. Serve torte warm or cool.
  • TIP: PAN ROASTING ALMONDS
  • Spread shelled nuts in a single layer on a baking pan. Bake in a 350 degree oven, stirring often, until golden, about 15 minutes.

DUBUSH TORTE

12 eggs separated
1 cup sugar
1 cup cake flour
2 tablespoons baking powder
1 lemon rind and juice
1 pound sweet butter
1 pound powdered sugar
1 egg yolk*
6 tablespoons cocoa
2 tablespoons cream
1 teaspoon vanilla
2 cups crushed walnuts

Steps:

  • Preheat the oven to 350 degrees F. Beat egg yolks well, about 4 to 6 minutes. Add sugar and continue beating well, another 4 to 6 minutes. Sift together the flour and the baking powder. Gradually add dry ingredients and lemon juice and rind to wet mix. Beat egg whites to medium peaks and fold into batter. Butter and flour 3 (9-inch) cake rounds. Place a parchment paper circle in the bottom of each cake round. Pour the batter into the prepared cake rounds and bake at 350 degrees for 30 minutes. Cool cakes completely. With a serrated knife, slice each cake into 3 layers.
  • Cream all ingredients until smooth. Frost each layer and the outside of cake. Cover the whole cake with crushed walnuts. Refrigerate cake for 2 hours before slicing.

HOPPIN JOHN HUGUENOT TORTE

3/4 cup ground pecans
3/4 cup ground English walnuts
1/2 cup ground black walnuts
2 medium apples, peeled
4 large egg, at room temperature
1 large egg yolk, at room temperature
1 3/4 cup sugar
3/4 cup unbleached all-purpose flour
16 perfect pecan halves
Sugar
2/3 cup cream

Steps:

  • Prepare two 9-inch cake pans by lightly greasing them, lining them with waxed paper or parchment, greasing the paper, and lightly dusting with flour. Preheat the oven to 375 degrees F. and put a pan of water in the bottom of the oven. Mix the ground nuts together. Very finely chop the apples with a knife. You should have 1 3/4 cups. In a warmed electric mixer bowl, beat the eggs and egg yolk on high speed until doubled in volume. It may take 10 minutes or more. Slowly add the sugar while beating and continue beating until the volume is tripled. The eggs should be very thick and light in color. Don't be afraid of over-beating. Sift the flour over the egg mixture. Sprinkle the ground nuts over all, followed by the apples. With a large spatula, fold the mixture together rapidly but gently, being certain to bring all the elements from the bottom of the bowl up into the mixture. Divide the batter between 2 cake pans and bake in the middle of the oven for about 25 to 30 minutes, or until the top is golden brown and the sides have begun to pull away. Do not push on the meringue like top, or it may cave in. Place on a rack in a draft-free place and let cool completely. Lightly toast the pecan halves while the cake are in the oven. While the pecans are hot, quickly dip them in water and then roll them in granulated sugar until they are lightly coated. Let them dry on a rack. The cakes must be perfectly cool, or the heat with melt the cream. Invert the pans to remove the cakes, discarding the paper liners, and turn the cakes back over again so that the crusty top surface is in its original position. Place each cake on a serving platter. Using an electric standing mixer, fitted with a whip attachment, whip the cream with some sugar until stiff and place 8 dollops of the cream evenly around each cake. Garnish each bit of cream with a sugared pecan and serve with a shot glass of bourbon neat.

4 egg yolks
Grated rind of a small lemon
8 ounces sugar
8 ounces grated peeled carrots
8 ounces grated almonds, blanched or not as you wish
2 tablespoons flour
4 egg whites
2 tablespoons pine nuts

Steps:

  • Preheat the oven to 350 degrees. Line the bottom of an 8 inch round cake pan with parchment, butter and lightly dust the sides with flour.
  • Beat yolks, lemon rind and sugar until light and creamy looking. Blend in carrots, almonds and flour. Whip egg whites until glossy and stiff but not cottony looking. Fold them into the batter and transfer to the cake pan. Sprinkle with pine nuts and bake for 45 minutes.
  • Cool on a cake rack and remove from pan. Dust with confectioners' sugar before serving.

KONA COFFEE APPLE TORTE

6 tablespoons butter
1/4 cup firmly packed dark brown sugar
1 1/2 cups all-purpose flour
1/3 cup very finely ground, fresh, medium roasted Kona coffee beans
1/2 cup chopped, freshly roasted macadamia nuts
1 teaspoon vanilla extract
2 tablespoons Kona coffee liquid, chilled
3 large apples, peeled and sliced
1 cup firmly packed dark brown sugar
1 tablespoon flour
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1 teaspoon fresh ground Kona coffee
3 tablespoons butter, cut into small pieces
Sauce, recipe follows
1/4 cup brewed espresso
1 cup powdered sugar
2 tablespoons butter
1 teaspoon coffee liqueur

Steps:

  • Crust: In a mixing bowl cream the butter, brown sugar, flour, and ground coffee together. Process until mixture is evenly fine textured. Add the nuts. In a separate bowl, combine the vanilla and coffee liquids together, then add them to the nut mixture. Process only until mixed, do not overprocess. Turn mixture into 9-inch pie plate, spread, and press evenly and lightly over the bottom and sides. Filling: Arrange apple slices around the edge of the crust-covered pan. Chop some pieces into cubes for the center. In a small bowl, combine the brown sugar, flour, nutmeg, cinnamon, cloves, and coffee, and pour over the apples. Dot the butter over the top. Preheat oven to 400 degrees F.
  • Bake for 10 minutes, and then reduce the oven temperature to 350 F. Bake 15 minutes more, until the apple begins to bubble. Place puddle of sauce in plate and set torte slice on top of sauce and serve.
  • Combine sauce ingredients in a microwave-safe bowl and microwave for 3 minutes. Stir until smooth and chill.

GRANDMA'S FRENCH CANADIAN BUTTER TARTS

I remember as a little girl visiting Grandma in northern Ontario and always wondering what kind of treats she would have ready for us. These old fashion butter tarts were always our favorite. She told me when she was young, white sugar was sometimes scarce, and so her mother always used maple syrup as a sweetener in baking. The taste is absolutely decadent.

1 1/2 cups raisins
1/2 cup butter, room temperature
1/2 cup brown sugar, packed
2 pinches salt
1/2 teaspoon cinnamon
1 cup maple syrup
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Prepare muffin pans by rolling out pie dough and cutting 5-1/2 inch (approx) circles; fit dough circles into muffin cups; set aside in fridge until ready to fill. (I use the top of a Kraft peanut butter jar.).
  • In a small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes.
  • In a large bowl, using a wooden spoon, mix together the soft butter, brown sugar, salt, maple syrup, and cinnamon. Stir well until sugar is dissolved and butter is creamed.
  • Add egg and vanilla and mix well.
  • Drain raisins.
  • Retrieve tart shells and divide raisins equally into all shells; then divide butter mixture into all tarts.
  • Bake at 400°F for 15-25 minutes; filling will be lightly browned but still bubbling. Runny tarts - 15 minutes. Firm tarts - 20-25 minutes.
  • Let cooked butter tarts cool in pans for 10 minutes after removing from oven; then remove and place on racks until completely cool.
