XINJIANG STYLE NOODLES



Xinjiang Style Noodles image

This recipe is from a restaurant in the city of Kashgar, Xinjiang Province, China. Normally you would use fresh pulled noodles but they are very hard to find unless you make your own and they are not easy so the closest equivalent is udon noodles.

3 tablespoons vegetable oil
5 garlic cloves, thinly sliced
1 medium onion, thinly sliced into half-moons
8 ounces boneless lamb, cubed
1 1/2 teaspoons salt
1 (28 ounce) can tomatoes with juice, coarsely chopped
2 green bell peppers, seeded chopped into 1 1/2-inch squares
5 green onions, white parts only chopped into 1-inch lengths
1 tablespoon chili oil (oil that has had a lot of red pepper flakes steeping in it)
1 lb fresh udon noodles
1 cup fresh cilantro leaves, chopped

Steps:

  • Heat the oil in a wok over medium heat. Drop in the garlic, onion, lamb, and 1 teaspoon of the salt and stir-fry for about 8 minutes, or until the onion is translucent.
  • Add the tomatoes and their juice, the peppers, green onions, and chili oil. Bring to a simmer and cook for 15 minutes, or until the peppers are tender.
  • Meanwhile, bring a large pot of water to a boil, add the remaining 1/2 teaspoon salt. Add the udon noodles and cook for 8 to 10 minutes or until they are tender. Drain well and divide them among 4 serving plates. Top the noodles with the sauce, scatter with the cilantro leaves, and serve.

Traveling through China, you might stumble upon a person donning a white skull cap toting a BBQ grill sometimes by bicycle. He sells lamb kabobs spiced with irresistible goodness that it's hard to have just one. The person is from Western China, a predominantly Muslim region with cultures blended from Kyrgyzstan, Tajikistan, and others in the region. This spice mix is a great ingredient to have around for sautés, roasts, BBQ's or whatever else you feel like adding some Western China spice to. If you're in China, you can buy a packet in your grocery store.

1/4 cup cumin seed
2 tablespoons dried szechuan chile flakes
2 tablespoons black pepper
1 tablespoon szechuan peppercorns
1 tablespoon ground ginger powder
1 tablespoon garlic powder
1 1/2 teaspoons chili powder
1 1/2 teaspoons sea salt

Steps:

  • Toast Sichuan peppercorns til fragrant. Toast cumin until lightly browned.
  • Grind Sichuan peppercorns, cumin, chili flakes and black pepper in a spice grinder.
  • Stir in remaining ingredients.
