FLYING SAUCER TOSTADA

Not wanting to heat up the kitchen on this hot summer night and feeling on the lazy side, I created this very quick, easy, hearty and delicious recipe. There is no limit to the assortment of fillings that could be added; I am listing the ones that I used. I hope you and yours enjoy as much as my family did. This one will have you out of the kitchen lickety split.

Number Of Ingredients 9

2 large flour tortillas
1/2 cup refried beans (homemade or canned)
1/4 cup cheddar cheese, grated (use your favorite)
1/2 tomatoes, diced
1 green onion, thinly sliced tops included
1/2 avocado, sliced
1 tablespoon chopped cilantro
2 tablespoons salsa
2 tablespoons sour cream

Steps:

  • Heat comal, griddle or large frying pan.
  • Slice and dice vegetables as noted in ingredients list; set aside.
  • Set aside grated cheddar cheese.
  • Heat refried beans on stovetop or microwave oven.
  • Heat tortillas on both side until brown spots appear and they bubble up a bit.
  • Place one tortilla on plate.
  • Spread tortilla with refried beans.
  • Top with cheese, onion, tomato, avocado and cilantro.
  • Spoon on salsa and sour cream.
  • Top with second tortilla.
  • Slice in wedges and serve.

Like flying saucers, just pick them up and eat! Another of Michael's Mexican dishes. As with the burritos, Michael puts meat on his, I prefer no meat.

Number Of Ingredients 9

3 (6 inch) corn tortillas
1 teaspoon peanut oil
3 tablespoons refried beans
3 kalamata olives (sliced)
3 teaspoons stuffed green olives (sliced)
3 tablespoons salsa
3 teaspoons onions (diced)
3 ounces cheddar cheese (grated)
1 cup iceberg lettuce (thinly sliced)

Steps:

  • Fry tortillas in skillet in oil until crisp.
  • Take off heat and spread on beans.
  • Return to skillet and add olives, salsa, onions, and cheese.
  • When cheese melts, serve onto plate and top with lettuce.

Hearty cookie with oats, coconut and wheat flakes cereal. Great for a snack.

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups rolled oats
2 cups whole wheat flake cereal
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the baking powder, baking soda and oats; stir into the sugar mixture. Fold in the wheat cereal, and coconut. Drop dough by teaspoonfuls onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, or until light brown.

  • In a large skillet over medium heat, brown the ground beef with the onion. Cook until the beef is cooked through and the onions have softened and translucent, about 5-7 minutes. Drain excess fat.
  • Add in the chili enchilada sauce, lime juice, taco seasoning, salt, and cayenne pepper. Cook the beef in the chili enchilada sauce for 2-3 additional minutes or until the sauce has thickened, then remove the skillet from the heat.
  • Use a small microwavable bowl to heat the refried beans. Make sure to put a paper towel over the top so it doesn’t explode and get all over the microwave.
  • Take a spoonful of the refried beans and spread them over each tostada. Layer the tostada with the ground beef next, then your choice of garnishes: a handful of lettuce, some chopped tomatoes, chopped avocados, a spoonful of salsa, a handful of Mexican cheese, and/or a drizzle of Mexican crema. Top with chopped cilantro and then plate and serve.
