Steps:

  • Beat eggs in a bowl with a fork. Add milk, salt, and pepper; beat until well mixed.
  • Coat a small skillet with olive oil and heat over medium heat. Pour egg mixture into hot skillet; cook and stir until eggs are set, 3 to 5 minutes.

6 large eggs
1/4 cup evaporated milk or half-and-half cream
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon canola oil
2 tablespoons process cheese sauce

Steps:

  • In a bowl, whisk eggs, milk, salt and pepper. In a large skillet, heat oil over medium heat. Pour in egg mixture; stir in cheese sauce. Cook and stir until eggs are thickened and no liquid egg remains.

So light and fluffy, but it literally melts on your tongue. I like it half done, but the flavour is just as good when fully cooked. Its desperately simple and one really good start to the morning!! Relatively healthy and adds to your daily calcium serving!

3 eggs
3 tablespoons cheddar cheese, grated
3 tablespoons milk
1 pinch salt and pepper, to taste

Steps:

  • Break the eggs in a saucepan.
  • Turn on the fire on its minimum and cook until the egg white is visible (white coloured). It should take about 20 to 30 seconds.
  • Add the milk into the pan and rapidly stir the mixture.
  • Sprinkle the grated cheddar evenly across the top of the egg.
  • When the cheese has become runny but not fully melted, stir the mixture vigorously.
  • Then let it stand for about 20 seconds (depending on how cooked you want your egg to be).
  • Add salt and pepper to your personal taste and rapidly stir again.
  • Turn off the heat and continue to stir rapidly to break the egg bits to tiny pieces. They kind of stick back together (when half done that is --) so it doesn't look ugly, it just creates a nice texture.
  • Voila! Serve with toast or bagel. Absolutely gorgeous!

¼ cup diced bell pepper
¼ cup chopped fresh mushrooms
4 large eggs
1 pinch salt
4 teaspoons butter

Steps:

  • Heat oil in a skillet over medium-high heat. Saute bell pepper and mushrooms until soft, about 5 minutes. Set aside.
  • Whisk eggs with salt until completely combined and very foamy.
  • Melt butter in another skillet over low heat until bubbling. Add eggs and stir frequently for even, moist curds, 2 to 3 minutes. Once eggs are thickened and creamy, but still shiny, add sauteed vegetables, and stir to incorporate. Remove scrambled eggs from the pan before they begin to look dry, as they will continue to thicken off the heat.

Steps:

  • Preheat oven to 350°.
  • Pour melted butter into a glass 9x13 inch baking dish.

  • Crack eggs into a medium bowl and add kosher salt. Using an immersion blender or whisk, whip eggs until completely homogenous and pale yellow in color, about 30 seconds.
  • Cook butter in an 8" nonstick skillet over medium-low heat. When foam subsides, add eggs and cook, undisturbed, until a thin layer of cooked egg appears around the edge of the skillet. Using a rubber spatula and broad sweeping motions, push eggs all the way around the circumference of the skillet, then across the bottom. Continue to push eggs around and across skillet until fluffy and barely set, about 2 minutes; they should still look runny on top. Immediately divide between 2 plates and sprinkle with sea salt.
  • Stir 2 Tbsp. crumbled feta and ¼ tsp. za'atar into eggs halfway through cooking. Sprinkle with flaky sea salt and more za'atar just before serving.
