CINNAMON-HONEY PANCAKES

- Mix flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
- Mix milk, eggs, and vanilla extract together in a separate bowl. Pour into flour mixture slowly, while stirring, until batter is combined.
- Heat 1 tablespoon butter in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and edges are dry, 3 to 4 minutes. Drizzle some honey lightly on pancakes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter, adding 1 tablespoon of butter to the pan before each new batch.

EXTRA-YUMMY FLUFFY PANCAKES
This is my favorite recipe for pancakes. Over time I tweaked a recipe I found, till i got it just right! It makes fluffy pancakes with that little bit of extra from the vanilla and cinnamon! These pancakes are especially good with your favorite berry syrup.

- Whisk together flour, sugar, baking powder, cinnamon, and salt in a bowl. Whisk in the milk, egg, 3 tablespoons vegetable oil, and vanilla extract until only a few lumps remain. Let the batter stand for 5 full minutes for extra fluffiness.
- Heat a skillet or griddle over medium heat, and brush with 1 teaspoon vegetable oil. When the oil shimmers, slowly pour about 1/4 cup of batter into the hot pan. Cook until bottom is browned, about 2 minutes, then flip and cook until the center of the pancake is set and the other side is browned, about 2 more minutes. Keep warm until serving.

- In a medium mixing bowl, stir together flour, sugar, baking powder, salt, and cinnamon. Make a well in the centre of the dry mixture and set aside.
- In a second medium mixing bowl, combine the eggs and milk. Add egg mixture all at once to the dry mixture. Stir until just moistened. (Batter should be lumpy).
- For standard-size pancakes, pour about 60ml (1/4 cup) of batter onto a hot, lightly greased griddle or non-stick pan. Cook over medium heat about 2 minutes on each side, or until pancakes brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
- Serve immediately with fresh fruit, maple syrup, and a knob of butter!

A tried and true recipe, this is definitely a family favorite and most certainly my comfort food. Best part, it's not too complicated to make from scratch!

- 1. Preheat griddle to 325°F.
- 2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
- 3. In a medium mixing bowl, combine milk, butter, vanilla extract, honey, and egg.
- 4. Combine both dry and wet ingredients and mix well until pancake batter is smooth.
- 5. Use a 1/4 cup to evenly scoop pancake batter onto griddle.
- 6. When bubbles start to form, pancakes are ready to flip! NOTE: To maintain fluffiness, do NOT flatten pancakes with spatula.
- 7. When both sides of pancakes are golden brown, remove from griddle and place on a plate until ready to serve. Recipe makes about 14 pancakes.
RESTAURANT STYLE FLUFFY HONEY PANCAKES
I got this recipe from a friend after having trouble making a pancake with whole wheat flour that my 2 boys will eat. I made these and I swear they were the best pancakes I ever made. They looked so fluffy and browned just right. The boys loved them. We usu. eat maple syrup or powdered sugar over them. I just tried making a homemade syrup and that turned out good too. This is freshly ground whole wheat flour, so if you have store bought whole wheat, I would recommend doing it 1/2 white and half wheat.

- In a bowl, combine the flour, powder, soda and salt.
- In a large bowl, combine the buttermilk, egg yolks, olive oil and honey, stirring well.
- Add the dry ingredients to the wet ingredients.
- In a glass or ceramic bowl, beat the egg whites until stiff peaks form; fold them gently into the pancake mixture.
- Heat an electric skillet to 375° F and spray with cooking oil.
- Drop about 1/2 cupfuls onto hot skillet and cook until underside is golden (you may not get a lot of bubbles, since this is very airy).
- Flip and cook until second side is done. You should have 5-6" pancakes.
