ROSEMARY SHORTBREAD COOKIES

- In a large bowl, cream butter and confectioners' sugar until light and fluffy. Combine the flour, rosemary and salt; gradually add to creamed mixture and mix well., Shape into two 8-1/4-in. rolls; wrap each in plastic. Refrigerate overnight. Cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets., Bake at 350° for 11-13 minutes or until edges begin to brown. Cool for 1 minute before removing from pans to wire racks. Store in an airtight container.

- Preheat oven to 375 degrees F (190 degrees C).
- Beat margarine, brown sugar, and white sugar together with an electric mixer in a large bowl until smooth and creamy. Beat first egg into butter mixture. Beat second egg into mixture along with vanilla extract.
- Combine flour, baking soda, and salt in a bowl; stir into creamed margarine mixture until dough is almost white. Fold chocolate chips into dough. Drop small spoonfuls of dough onto a baking sheet.
- Bake in the preheated oven until edges are lightly browned, 10 to 12 minutes.

PINE-NUT COOKIES WITH ROSEMARY

- Preheat oven to 325 degrees. Finely chop rosemary in a food processor. Add pine nuts; pulse until coarsely ground. Transfer to a large bowl. Whisk in 2 cups flour, the baking soda, ginger, and salt; set aside.
- Put butter and granulated sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on high speed until pale and fluffy, about 5 minutes. Mix in oil. Reduce speed to low. Mix in flour mixture. Add cream; mix until well combined, about 2 minutes. Mix in egg, then remaining 1/4 cup flour.
- Shape dough into 3/4-inch balls, and space 2 inches apart on baking sheets lined with parchment paper. Flatten slightly with fingers, and top each with a pine nut. Sprinkle with sanding sugar.
- Bake cookies, rotating sheets halfway through, until edges are golden, about 13 minutes. Let cool 10 minutes on sheets on wire racks. Transfer cookies to racks to cool completely.
FLUFFO COOKIES, ROSEMARY BLAIR KINNEY
Sherry sent me this recipe of Rosemary's for the family cookbook, and said baking time was a guess, and wasn't sure if you could even still find Fluffo! Fluffo was available in the US when Rosemary would have baked, but no longer. It was a butter flavor shortening stick, so I might try Crisco Butter Flavored in the sticks. My cousin Robin and I were thinking Marshmallow Cream/Fluff, boy would that have been a messy dough! LOL

- 375 degree oven. If desired, sprinkle colored sugars on cookie prior to baking.
- I would suggest maybe 8-10 minutes to bake, however, check 1st batch and adjust accordingly.
