These healthy oatmeal raisin cookies are soft, chewy, and made in just one bowl! Using just 4 ingredients, they take just 12 minutes to bake.

2 cups rolled oats (gluten free, if needed)
3 large bananas (mashed (approximately 1.25 cups) * See notes)
1/2 cup almond butter (can substitute for any nut or seed butter ** See notes)
1/2 cup raisins
1 tablespoon cinnamon (optional)

Steps:

  • Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.
  • In a large mixing bowl, combine all of your ingredients, except for your raisins, and mix well. Fold through your raisins using a rubber spatula.
  • Using a cookie scoop or your hands, form 12 balls using the cookie dough. Transfer them onto the lined tray and place around 1-2 inches apart. Press down on each cookie to form a cookie shape (they will not spread, so make them your desired size and thickness). Place them in the oven and bake for 10-12 minutes, or until

¾ cup butter, softened
¾ cup white sugar
¾ cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon salt
2 ¾ cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

Kinda like a healthy monster cookie, I really enjoy spiced oatmeal raisin cookies but cannot eat gluten. This recipe is also sugar-free.

1 ounce butter, melted
1/2 cup honey or 1/2 cup agave syrup
2 eggs
1/4 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon cinnamon
1 cup quick oatmeal
1 cup rolled oats
1/2 cup raisins
2 tablespoons flax seed meal (optional)

Steps:

  • Stir together butter and honey.
  • Add eggs, beat well.
  • Blend together dry ingredients.
  • Add wet to dry, stir until moistened.
  • Fold in raisins.
  • Scoop onto parchment lined sheet pans.
  • Bake 8-10 minutes @ 325*F convection (350*F conventional).

2 T brown sugar
1 T plus 2 tsp white sugar or evaporated cane juice
2 T raisins
1 T oil or pre-melted margarine
1-2 T milk of choice (start with 1)

Steps:

  • Blend first 5 ingredients together in a food processor or blender. (I used a Magic Bullet.) Mix with other ingredients, form into cookie shapes, and place on a greased cookie sheet. Cook 6 minutes at 375 F.

  • In a large mixing bowl, combine the oats, almond flour, sugar, cornstarch, cinnamon, and baking soda. Add the flax egg, maple syrup and butter, mixing until fully combined. Add the raisins. The dough should be a little sticky but still easy to work with. If it’s too sticky, add a tablespoon of almond flour at a time until it’s easier to handle.
  • Using a tablespoon, scoop out the dough and roll it into a ball between your palms. Drop the dough onto your prepared baking sheet and gently flatten it with your fingers. The cookies won’t really spread, so flatten and shape them how you want the finished cookie to look.
