INSTANT POT® FRESH STEAMED OYSTERS WITH SPICY BUTTER



Instant Pot® Fresh Steamed Oysters with Spicy Butter image

I have baked, grilled, steamed on the stovetop, and even air fried oysters, but steaming in the Instant Pot® is hands down the best method. They are easy to open up and tender without any rubbery texture whatsoever.

1 cup water
20 fresh oysters in shells, rinsed and scrubbed clean
2 teaspoons Mexican-style hot sauce (such as Valentina®)
½ teaspoon dried parsley flakes
4 tablespoons unsalted butter, melted

Steps:

  • Pour water into a multi-functional pressure cooker (such as Instant Pot®) and set trivet inside. Place oysters on the trivet. Close and lock the lid. Select Steam function according to manufacturer's instructions; set timer for 2 minutes. Allow 15 minutes for pressure to build.
  • Meanwhile, stir hot sauce and parsley into the melted butter until well combined.
  • Release pressure using quick release according to manufacture's directions, 3 to 5 minutes.
  • Carefully open the oysters using a spoon; set on a serving plate. Spoon butter over the top.

Flash Fried Oysters

Number Of Ingredients 20

1/2 gallon peanut oil
8 ounces yellow cornmeal
Salt and pepper
Salt and pepper
1-ounce cayenne
1-ounce paprika
24 oysters, shucked
1 tomato
1/2 bunch watercress, trimmed and cleaned
3 ounces favorite vinaigrette
4 slices pullman loaf bread
Truffle mayonnaise, recipe follows
1 small black truffle, very thinly sliced
1-ounce white truffle oil
2 ounces black truffle ends and pieces
6 egg yolks
1-ounce white wine vinegar
5 ounces canola oil
2 ounces truffle oil
Salt and pepper

Steps:

  • Heat the oil in a large deep pot to 325 degrees F.
  • Season the cornmeal with salt, pepper, cayenne, and paprika and mix well. Dredge the oysters in the seasoned cornmeal, shaking off any excess.
  • Slice the tomatoes into thin slices. Season tomato slices and watercress with some of the vinaigrette, and salt and pepper.
  • Toast the pullman bread. Spread bread with truffle mayonnaise and place tomato and watercress on each piece of bread.
  • Flash-fry oysters in peanut oil for about 30 seconds, or until golden brown and season with salt and pepper. Place tomato-watercress bread and oysters on each of 4 plates. Garnish with black truffle slices and truffle oil.
  • Combine ingredients, except for oils in a blender or food processor and mix. With the machine running on low, slowly drizzle in the oils until a mayonnaise consistency develops. Season with salt and pepper.

Romaine, banana or Napa cabbage leaves for steaming
1 dozen shucked oysters
1 tablespoon ginger, fine julienne
1/4 cup scallions, finely sliced
1 lime, juiced
Fresh coarse cracked black pepper
1/2 cup curry oil (1/4 cup curry powder, water to make a paste and 1/2 cup canola oil, whisk together and let stand for 2 hours. Use only the top yellow oil.)
Rock salt, for plating

Steps:

  • Prepare a large steamer basket lined with romaine, banana leaves or Napa cabbage. Top each oyster with ginger, scallions, a squirt of juice and black pepper. Steam hard for 3 to 5 minutes until the oysters are warm to hot in the middle. Meanwhile, heat the curry oil to very hot. Place the steamed oysters on a bed of rock salt.
  • PLATING Flash each oyster with 1 teaspoon of oil. Serve as soon as possible.
  • WINE: Veuve Clicquot Champagne, Blanc de Blanc

OYSTERS WITH TRUFFLE FROTH



Oysters with Truffle Froth image

18 medium oysters*
2 to 3 cups coarse or kosher salt
1 tablespoon truffle oil
Truffle Froth, recipe follows
2 egg yolks
1 tablespoon oyster liquor, strained
1/2 cup heavy cream
1/4 teaspoon kosher salt
1 tablespoon truffle oil
1 tablespoon finely chopped parsley leaves

Steps:

  • Preheat oven to 300 degrees F.
  • Shuck the oysters. Discard the top shell. Strain oysters and oyster liquor (see Cook's Note*) through fine sieve into a ceramic or glass bowl. Cover in plastic wrap and place in the refrigerator. Scrub the bottoms shells of the oysters under running water and arrange them on a baking sheet. Bake for 10 minutes. Remove and set aside to cool.
  • Turn oven to broil.
  • Drain 2/3 of the liquid from the oysters for the sauce and set aside. Make a 1-inch bed of salt in a large pan. Evenly space the cleaned oyster shells on the salt bed with the outside edge of the shell facing down. Place 1 oyster on each shell. Place 1 drop of truffle oil on each oyster (truffle oil is potent so use sparingly). Drizzle 1 teaspoon of the froth over each oyster. Place the pan under the broiler until the froth turns golden brown, about 1 minute. Serve immediately.
  • In a small bowl lightly froth the egg yolks with the hand held blender.
  • In a heavy bottomed saucepan bring the oyster liquor and cream just to the boil. Reduce the heat to low. Pour 1/3 of the mixture into the 2 egg yolks and froth with the hand held blender. Slowly add the frothed egg mixture to the saucepan. Immediately begin frothing the mixture in the saucepan over low heat. Pour froth over truffle laced oysters on the half shell.

1/2 cup boiling water
Butter or margarine, melted, if desired

Steps:

  • Discard any broken-shell or open (dead) oysters. Scrub remaining oysters in cold water, removing any barnacles with a dull paring knife.
  • Place half of the oysters in a steamer with boiling water. Cover and steam 5 to 8 minutes, removing oysters as they open. Discard any unopened oysters. Repeat with remaining oysters.
  • Serve hot oysters in shells with butter.
