FLANK STEAK SANDWICHES

"My sister and I found this recipe 15 years ago, changed a few ingredients and made it our own," recalls Elizabeth Hiner of Chico, California. "Now, when family and friends hear we're making these sandwiches, they come running! It's a quick, healthy crowd-pleaser that goes great with summer."

1 cup chopped onion
1 cup dry red wine or beef broth
3/4 cup reduced-sodium soy sauce
1/2 cup olive oil, divided
4-1/2 teaspoons minced garlic, divided
1-1/2 teaspoons ground mustard
1-1/2 teaspoons ground ginger
1 beef flank steak (1-1/2 pounds)
1 medium sweet red pepper, cut into 1-inch strips
1 medium sweet yellow pepper, cut into 1-inch strips
1 medium red onion, thickly sliced
1/4 teaspoon pepper
6 French rolls, split

Steps:

  • In a small bowl, combine the onion, wine, soy sauce, 1/4 cup olive oil, 2-1/2 teaspoons garlic, mustard and ginger. Pour 1-3/4 cups into a shallow dish; add steak, turn to coat and cover. Pour remaining marinade into another shallow dish resealable; add the peppers and onion, turn to coat and cover. Refrigerate both for 3 hours or overnight, turning occasionally., Drain and discard marinade from steak. Lightly oil the grill rack. Grill, covered, over medium heat for 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Drain and discard marinade from vegetables. Place in a grill basket. Grill, uncovered, over medium-hot heat for 9-11 minutes or until tender, stirring frequently. , In a small bowl, combine the pepper, and remaining oil and garlic; brush over cut sides of rolls. Place cut side down on grill for 2-3 minutes or until golden brown. , Thinly slice steak across the grain; place on bun bottoms. Top with vegetables and bun tops. Serve immediately.

Make-ahead Meal 3 Minute Steak Hoagies with Homemade Steak Sauce image

1 large shallot, coarsely chopped
1 red Holland or Fresno chile pepper
2 large cloves garlic
2 large fresh bay leaves
1 teaspoon mustard seed or dry mustard, 1/3 palmful
1/4 cup dry sherry
1/4 cup Worcestershire sauce
1 tablespoon black peppercorns
1 cup organic ketchup or low-sugar ketchup
2 tablespoons soy or tamari sauce
1 cup beef stock
1 tablespoon high temperature cooking oil (recommended: canola or peanut oil)
1 1/4 pounds flank steak
4 hoagie rolls of choice
1 big bundle watercress, upland cress or baby arugula

Steps:

  • For the make-ahead sauce: In food processor bowl, combine the shallot, chile, garlic, bay leaves, mustard seed, sherry, Worcestershire sauce, and peppercorns, process into a smooth paste. Place the flavor paste in a pot and combine with the ketchup, soy, and stock. Bring the mixture to a boil, reduce the heat to a simmer and cook 30 minutes. Cool and refrigerate for make-ahead meal.
  • Preheat the oven to 325 degrees F to crisp the bread.
  • Reheat the sauce over medium-low heat.
  • Place the flank steak in the freezer 5 minutes or until cold. Remove and shred or cut the cold flank steak against the grain. Throw the bread in the oven to crisp it up. In a skillet, heat the high-temperature oil over high heat until it smokes. Add the meat and toss 2 minutes. Turn off the heat and combine with warm sauce. Cut the rolls open and stuff the hoagies with spicy greens and hot-n-saucy steak.

1 1/2 pound top round steak
Kosher salt and freshly ground black pepper
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon spicy brown mustard
1 teaspoon chopped rosemary leaves
1/2 teaspoon red pepper flakes
4 hoagie rolls, sliced down the middle
1 cup shredded Monterey jack cheese
1/2 cup mayonnaise
1 tablespoon hot sauce

Steps:

  • Heat an outdoor grill or grill pan over medium-high heat. Preheat the broiler.
  • Season the steak with salt and pepper, to taste. Grill the meat until it is medium-rare, about 3 to 4 minutes per side.
  • In a large bowl, whisk together the Worcestershire sauce, soy sauce, mustard, rosemary, and red pepper flakes. Set aside.
  • Remove the steak from the grill to a cutting board, cover it with foil, and allow it to rest for 5 minutes. Slice the steak thinly and toss the slices in the Worcestershire sauce mixture.
  • Spread the rolls open and arrange on a baking sheet. Sprinkle each roll with a 1/4 cup of the cheese and put them under the broiler until the cheese is melted and bubbling, about 1 to 2 minutes.
  • In a small bowl, whisk together the mayonnaise and hot sauce. Spread the mayonnaise onto the bottom of each roll. Put a quarter of the beef into each of the rolls. (Reserve 4 pieces of beef for the Round 2 Recipe Couscous Stuffed Tomatoes). Cover with the roll tops, cut in half and serve.

This recipe both tenderizes and seasons the meat considerably. The steak is marinated overnight, uncooked, then quickly broiled. The rare, thinly sliced pieces are then marinated a second time, with olive oil, feta cheese, lemon juice, peppers and onions. Serve the savory slices of steak and vegetables on crusty rolls, with plenty of the feta marinade, or serve them as a salad, atop a bed of mixed greens. Prep time does not include marinating.

1 (2 lb) flank steaks, 1-inch thick
4 crusty French rolls, sliced in half and toasted
2 tablespoons extra virgin olive oil
1 lemon, juice of

1 red onion, sliced into thin rings
1 red pepper, sliced into thin strips

Steps:

  • In a plastic or glass container large enough to hold the steak, mix together the ingredients for the BROILING MARINADE; Place the steak in the dish and turn to coat both sides; Cover and refrigerate overnight, turning once.
  • The next day, preheat the broiler until very hot; Place the steak on a broiling pan and broil 3 inches from the heat for 2 to 3 minutes per side, or until rare to medium-rare; Let sit 10 minutes before cutting.
  • Meanwhile, mix together the ingredients listed for the FETA MARINADE.
  • Slice the steak against the grain (on the bias) into thin strips; Place them into the bowl with the FETA MARINADE, mixing to coat; Let sit at room temperature 3 hours, stirring occasionally.
  • Stuff the rolls with the marinated meat and vegetables; If desired, garnish with tart, mildly hot Italian pepperoncini peppers.

I always end up with left over bloody mary mix after hosting a weekend brunch. So I created my bloody mary steak hoagies as a perfect way to repurpose this cocktail mix with its bold flavors into a quick and easy steak sandwich. The cocktail's spices and layers of flavors take my steak sandwich to a whole new level.

1 tablespoon avocado or grapeseed oil (or any oil with a higher smoke point)
1 scallion (white and light green parts only), sliced
1 large clove garlic, minced
1 cup bloody mary mix or tomato juice
4 to 6 dashes Worcestershire sauce
Fresh coarsely ground black pepper
1 tablespoon fresh parsley leaves, plus more for serving
1 tablespoon sliced pickled jalapenos
1 tablespoon cold unsalted butter
2 tablespoons avocado oil (or grapeseed, canola or any oil with a higher smoke point)
12 to 14 ounces flank steak, thinly sliced against the grain (see Cook's Notes)
Good salt, such as Himalayan pink, gray sea salt, Maldon or kosher
Fresh coarsely ground black pepper
1/2 small Vidalia or sweet onion, sliced
2 soft hoagie rolls, sliced open three-quarters of the way through
2 tablespoons unsalted butter, at room temperature
4 slices provolone

Steps:

  • For the bloody mary sauce: Heat the oil in a medium skillet over medium-high heat. Add the scallions and garlic and cook until wilted, about 1 minute. Add the bloody mary mix and Worcestershire sauce, season with pepper and scrape up the brown bits (suc) on the bottom of the skillet with a wooden spoon. Bring to a boil, then reduce to a simmer and allow to thicken and reduce by half, 1 to 2 minutes.
  • To finish the sauce, stir in the parsley and pickled peppers. Remove from the heat and whisk in the cold butter. Set aside.
  • For the hoagies: Heat the oil in a cast-iron grill pan or skillet over high heat. Spread the steak in an even layer on one side of the pan and, without touching, cook until it is easily released, about 2 minutes. Sprinkle the meat with salt and pepper, flip and cook to desired temperature, about 1 minute more for medium. Allow the steak to rest, about 10 to 15 minutes.
  • Meanwhile, add the onions to other side of the grill pan and cook until they begin to caramelize, 2 to 3 minutes.
  • Butter the insides of the cut hoagie rolls. Toast the rolls, open-side down, on a griddle or large skillet over medium-high heat until light golden brown, about 2 minutes. Set aside.
  • Toss the steak and onions together on the grill pan over medium heat, then divide the mixture in half, making two mounds in the shape of the hoagie roll. Ladle some of the warm steak sauce over top of each mound and immediately cover each with 2 slices of provolone so that the steam melts the cheese.
  • Place the toasted hoagies rolls, open-side down, on top of the cheese-covered steak mix. Using a large spatula to get underneath the steak with one hand and holding the roll with the other hand, flip the sandwich over, pressing the spatula into the hoagie roll once inverted to scrape all the yumminess into the toasted roll. Serve topped with parsley and more sauce on the side for dipping, then eat and enjoy!
