FANTASTIC FISH PIE



Fantastic fish pie image

The whole fish pie thing is one of the most homely, comforting and moreish dinners I can think of. This is a cracking recipe which does it for me.

5 large potatoes
2 large free-range eggs
2 large handfuls of baby spinach
1 onion
1 carrot
olive oil
250 ml double cream
mature Cheddar or Parmesan cheese
1 lemon
1 heaped teaspoon English mustard
1 large handful of fresh flat-leaf parsley
450 g haddock, or cod fillet, skin off, pin-boned, from sustainable sources
1 whole nutmeg, for grating (optional)

Steps:

  • Preheat the oven to 230°C/450°F/gas 8.
  • Peel and dice the potatoes into 2.5cm chunks, then put into boiling salted water and bring back to the boil for 2 minutes.
  • Carefully add the eggs to the pan and cook for a further 8 minutes, or until hard-boiled, by which time the potatoes should also be cooked.
  • At the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze out any excess moisture.
  • Drain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter them. Place to one side.
  • Peel and finely chop the onion, then peel, halve and finely chop the carrot.
  • In a separate pan, slowly fry the onion and carrot in a little oil for about 5 minutes, then add the double cream and bring just to the boil.
  • Remove from the heat and finely grate in 2 good handfuls of cheese, then squeeze in the lemon juice and stir through the mustard.
  • Pick and finely chop the parsley and stir into the cream mixture.
  • Slice the fish into strips then place in an earthenware dish with the spinach and eggs and mix together, pouring over the creamy vegetable sauce.
  • The cooked potatoes should be drained and mashed - add a bit of oil, sea salt, black pepper and a touch of nutmeg (if using). Spread on top of the fish. Don't bother piping it to make it look pretty - it's a homely hearty thing.
  • Place in the oven for 25 to 30 minutes, or until the potatoes are golden.
  • Serve with some nice peas or greens, not forgetting your baked beans and tomato ketchup. Tacky but tasty, and that's what I like.

ROASTED COD WITH PANCETTA & PEA MASH

This quick cod recipe looks a bit posh for dinner parties, but is really quick and simple

4 thick pieces of cod fillet, about 120g each, from sustainable sources
8 thin slices of higher-welfare pancetta
2 lemons
500 g potatoes
300 g frozen garden peas
½ a fresh red chilli, (optional)
1 small knob of butter
1 splash of milk
½ a bunch of fresh mint, (15g)
60 g rocket
extra virgin olive oil

Steps:

  • Preheat your oven to 200°C/400°F/gas 6.
  • Season the cod with sea salt and black pepper, place on an oiled baking tray and lay two slices of pancetta over the top of each fillet.
  • Halve the lemons and place the four lemon halves, cut side down, on the tray next to the fish. Roast in the preheated oven for 10 to 15 minutes, or until the fish flakes easily.
  • Peel and quarter the potatoes and cook until soft in boiling salted water. Meanwhile, cook the peas to packet instructions, then drain and blitz the peas in a food processor (or mash up with a fork if you don't have one).
  • Deseed and finely dice the red chilli, if using.
  • Drain the potatoes and mash with butter, hot milk, salt and pepper, whizzed-up peas and the red chilli if using.
  • Put the rocket in a mixing bowl, pick in the mint leaves and toss together and dress with extra virgin olive oil.
  • Serve each piece of cod on a dollop of pea and potato mash, with a little salad on the side.

PERFECT TUNA MORNAY

This is a dish we had a lot growing up. Mum would use potato chips for a crunchy topping, but I hardly ever have those in the house. It is relatively quick, and inexpensive and can be stretched even further with a green salad.

250 g macaroni style pasta (penne, rigatoni, bow ties..etc.)
1/2 onion, chopped finely.
4 tablespoons butter
4 tablespoons cornflour
cayenne pepper
500 -750 ml milk
200 g cheddar cheese, cubed
1 (400 g) can tuna in brine or 1 (400 g) can tuna in water, drained and flaked.
1/2 cup frozen peas
1/2 cup frozen corn kernels
1 tablespoon lemon juice
1 -1 1/2 cup grated cheddar cheese
1/4 cup of prepared dried breadcrumbs

Steps:

  • Boil water and cook pasta according to packet instructions.
  • Add chopped onion to pasta water while pasta cooks.
  • Drain well.
  • Melt butter over a low heat.
  • Add flour and whisk to form a roux off the heat.
  • Season well with salt, pepper and cayenne.
  • Return to heat and add milk gradually, stirring all the time until white sauce thickens.
  • Remove from heat.
  • Add cheese cubes and stir till they melt.
  • Add tuna, peas, corn and lemon juice and combine.
  • Set aside.
  • In a casserole dish place pasta and white sauce mixture.
  • Stir to mix gently, making sure the pasta is well coated.
  • Top the casserole with most of the grated cheese, then add the breadcrumbs, cover breadcrumbs with remaining cheese.
  • Season well once again.
  • Bake casserole at 200 C for 20 minutes, or until cheese is melted and golden.
  • Voila.

COD, CAULIFLOWER & CHORIZO MORNAY



Cod, cauliflower & chorizo mornay image

A comforting fish bake with a buttery cheese sauce that will warm you up on the coldest of evenings

1 small head of cauliflower , cut into florets
½ chorizo ring (about 100g/4oz), roughly chopped
25g butter
3 tbsp plain flour
500ml milk
140g gruyère , grated
500g cod loin, chopped into large chunks
50g breadcrumbs
½ small pack parsley , finely chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. Bring a large pan of water to the boil and blanch the cauliflower for 3-4 mins until al dente. Drain and set aside.
  • Heat a non-stick frying pan and cook the chorizo for a couple of mins to brown, then remove from the pan with a slotted spoon, leaving the oil behind. Melt the butter in the pan, then add the flour to make a roux. Pour in the milk gradually, whisking constantly, until smooth. Add the Gruyère, stir until melted, then season.
  • Put the cauliflower in a baking dish (or divide between individual dishes) with the chorizo and cod. Spoon over the cheese sauce and sprinkle with the breadcrumbs and parsley. Bake for 30-40 mins until the top is golden.

ENGLISH FISH MORNAY



English Fish Mornay image

A great way to use fish in the winter months, hearty and delicious. I use whatever fish is on sale or a large can of tuna (canned crabmeat works too). Snapper, flake and any other thicker style but delicate tasting fish fillet will do well for this recipe. A seafod mix would also work well, but I have not tried that yet.

40 g butter
1 onion, chopped fine
1 1/2 tablespoons flour
1 cup milk
2 teaspoons mild English mustard
500 g fish fillets, skin and bones removed, chopped into 1cm peices
1/2 cup cream
4 medium potatoes, peeled and cooked
2 tablespoons milk
2 tablespoons butter
1 cup grated tasty cheese
1/2 cup fresh breadcrumb

Steps:

  • Melt the butter in a large pan, fry the onions until tender (about 2 minutes).
  • Add the flour and cook for a full minute, add the milk and milk. Reduce the heat and whisk. Add the mustard and mix through.
  • Add the fish and simmer for 5 minutes stirring carefully. Add the cream and pour into a well buttered pie plate or shallow ceramic baking dish.
  • Top with the potato topping very carefully in small spoonfuls (so it doesn't sink to the bottom).
  • Top with the cheese and breadcrumbs and bake for 40 minutes at 180oC (360F).
  • Serve with bread and butter and steamed seasonal veggies.
  • To make topping:.
  • Mash the potatoes in a large bowl with the milk and butter. I like to use my hand beater to get it really smooth.
