BEER BATTER-FRIED FISH



Beer Batter-Fried Fish image

Original Bisquick® mix provides a simple addition to this batter-fried fish - dinner ready in just 20 minutes!

Vegetable oil
1 lb walleye, sole or other delicate- to medium-texture fish fillets, about 3/4 inch thick
3 to 4 tablespoons Original Bisquick™ mix
1 cup Original Bisquick™ mix
1/2 cup regular or nonalcoholic beer
1 large egg
1/2 teaspoon salt
Tartar sauce, if desired

Steps:

  • In 4-quart Dutch oven or deep fryer, heat oil (1 1/2 inches) to 350°F. Cut fish into 8 serving pieces. Lightly coat fish with 3 to 4 tablespoons Bisquick mix.
  • In medium bowl, mix remaining ingredients except Tartar Sauce with hand beater until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.) Dip fish into batter, letting excess drip into bowl.
  • Fry batches of fish in oil about 4 minutes, turning once, until golden brown. Remove with slotted spoon; drain on paper towels. Serve hot with Tartar Sauce.

3 to 4 tablespoons Original Bisquick™ mix
1 cup Original Bisquick™ mix
1/2 cup regular or nonalcoholic beer
1/2 teaspoon salt
1 egg
Tartar sauce, if desired

Steps:

  • Heat oil (1 1/2 inches) in heavy 3-quart saucepan or deep fryer to 350°. Lightly coat fish with 3 to 4 tablespoons Bisquick mix.
  • Beat 1 cup Bisquick mix, the beer, salt and egg with hand beater until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.) Dip fish into batter, letting excess drip into bowl.
  • Fry fish in oil about 2 minutes on each side or until golden brown; drain. Serve hot with tartar sauce.

Steps:

  • Heat oil to 375 degrees F.
  • Combine dry ingredients; add beer to get a sticky consistency for dipping.
  • Salt fish; dip in batter.
  • Deep fry until fish is golden brown.
  • Note: a thicker cut of fish would be more suitable for this recipe such as Snapper, Walleye White Bass White Perch etc.

Since our daughter was diagnosed with celiac disease I have been experimenting and finally came up with a good fish batter. It fries up crisp and golden brown and is very tasty.

1 cup gluten free Bisquick
1 tablespoon gluten free seasoning salt, we use Lawry's
1 tablespoon gluten free cornstarch, we use Argo
1 teaspoon gluten free garlic powder, we use McCormick
1 teaspoon gluten free onion powder, we use McCormick
1 teaspoon gluten free lemon pepper, we use McCormick
milk

Steps:

  • Have your fish at room temperature. Place them in a gallon storage bag with some Gluten free Bisquick. Shake them to coat. Put the fillets in a strainer to shake off the excess coating of Bisquick.
  • Mix all of the above dry ingredients together, add enough milk to make a thin batter. Dip each fillet into batter and let the excess drip off before putting into your hot oil.

1 lb uncooked peeled deveined large (16 to 20 count) shrimp, thawed if frozen, tail shells removed
3 to 4 tablespoons Original Bisquick™ mix
Vegetable oil for frying
1/2 cup sweet-and-sour sauce

Steps:

  • In deep 10-inch skillet, heat 1 1/2 inches oil over medium heat to 375°F.
  • In medium bowl, stir 1 cup Bisquick mix, the garlic powder, beer and egg with wire whisk or fork until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.)
  • Lightly coat 6 shrimp with 1/4 cup Bisquick mix. Dip shrimp into batter, letting excess drip into bowl. Fry in oil about 2 minutes on each side or until golden brown; drain on paper towels. Repeat with remaining shrimp. Serve hot with sweet-and-sour sauce.

3/4 cup Original Bisquick™ mix
1/2 cup yellow cornmeal
1 tablespoon seafood seasoning
4 catfish fillets (4 to 6 oz each)
1/2 cup ranch dressing
3 tablespoons vegetable oil
Lemon wedges

Steps:

  • In shallow bowl, stir together Bisquick mix, cornmeal and seafood seasoning. Pat catfish fillets dry with paper towels; brush both sides of fillets with dressing. Coat with Bisquick mixture, lightly pressing mixture onto fillets.
  • In 10-inch nonstick skillet, heat oil over medium-high heat. Cook catfish in hot oil 6 to 10 minutes, turning once, until fish flakes easily with fork. Serve immediately with lemon.

Double the recipe for a batch of onion rings on the side. If desired, season the batter to taste with Old Bay or Cajun Seasoning blends in place of salt and pepper.
