SPICY STRAWBERRY BBQ SAUCE
Sweet, fruity, savory, and spicy. This sauce screams summertime in every aspect. It has the fresh, fruity flavor of strawberry as well as the savory, spicy notes that complement anything being grilled at a summertime BBQ! Refrigerate remaining sauce for up to 14 days.

Steps:
- Combine strawberry preserves, tomato puree, vinegar, sugar, chili powder, red pepper flakes, cumin, cayenne, and black pepper in a medium pot. Whisk to remove any lumps.
- Bring strawberry mixture to a slow simmer over medium-low heat. Cook until sauce evenly coats the back of a metal spoon and is glossy, about 30 minutes, whisking frequently; never allow the bottom of the pot to scorch. Season with kosher salt.
- Remove sauce from heat and let cool before transferring to a tightly sealed quart-sized container.

Steps:
- 1. Cut the rib eye into 1/2 inch cubes... Place beef in a large Dutch Oven and add the butter and brown on all sides... Drain excess fat off...
- 2. Add onion to the Dutch Oven along with beef stock, sugar, salt, pepper, allspice, thyme, fennel, season salt, garlic parsnips, red and green bell peppers, and worcestershire sauce. Allow to simmer for 4 hours...
- 3. Add the carrots, potatoes, celery, and peas... Allow to cook for 30 to 40 more minutes or until vegetables are done to your liking...
- 4. When done, take 2 cups of the liquid and add the flour and kitchen bouquet to make the " slurry " to thicken the stew... Stir till desired thickness is reached...
- 5. Serve hot with a good Crusty Bread... ENJOY

- 1. Place tomatoes in food processor and puree till smooth
- 2. Combine all ingredients in a large saucepan over medium low heat. Stir to combine and simmer 25 minutes. Use warm or let cool, pour into a container and refrigerate until needed.
