This is the perfect marinade for tender rib eye steak.

1 (12 ounce) bottle red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
½ tablespoon minced onion
1 teaspoon ground black pepper
2 (10 ounce) beef rib eye steaks

Steps:

  • In a shallow, nonreactive dish, mix red wine vinegar, Worcestershire sauce, garlic, onion, and pepper. Place steaks in the mixture. Cover, and marinate 1 hour in the refrigerator.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill steaks on the prepared grill 5 to 7 minutes per side, to desired doneness. Discard remaining marinade.

Actually, this is an excellent marinade for any steak. The marinade mainly consists of Worcestershire sauce and brown sugar. The sugar makes the steaks tender and gives just a hint of sweetness. I sometimes add some Dijon mustard or red pepper flakes for a little zing.

4 (1/2 pound) rib-eye steaks
garlic powder to taste
onion powder to taste
salt and pepper to taste
1 ¾ cups Worcestershire sauce
⅓ cup brown sugar

Steps:

  • Season the steaks with the garlic powder, onion powder, salt, and pepper, and set aside.
  • Pour the Worcestershire sauce and brown sugar into a large resealable plastic bag, seal, and shake to mix. Pour half of the marinade into another large resealable bag. Place two steaks in each bag, and turn to coat. Squeeze out excess air, and seal the bags. Refrigerate for at least 1 hour.
  • Preheat grill for high heat. Drain the marinade from the steaks into a small saucepan, and bring to a boil; boil for several minutes.
  • Brush grill grate with oil. Grill steaks 7 minutes per side, to desired doneness. Baste often with the boiled marinade during the final 5 minutes of cook time.

BOURBON STREET RIB-EYE STEAK

After eating this style of steak in a restaurant a few times, I worked on making my own marinade. The results are tender and do not have an overbearing bourbon taste. This marinade is very different from the only other one I have seen on this site.

1 cup water
⅔ cup bourbon whiskey
½ cup soy sauce
¼ cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
4 (6 ounce) beef rib-eye steaks

Steps:

  • Whisk together the water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a bowl, and pour into a plastic zipper bag. Add the rib-eye steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the rib-eye steaks from the marinade, and shake off excess. Discard the remaining marinade. Grill the steaks on high, 1 to 2 minutes per side, to sear the meat. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side, if desired.

4 pound(s) beef flank steak - 1 pound per steak ( if needed, ask your meat man to cut for you )
1/4 cup(s) fresh squeezed lemon juice
2 tablespoon(s) soy sauce - dark
1 teaspoon(s) cumin
1 teaspoon(s) fennel seeds - crushed
3 tablespoon(s) fresh cilantro - chopped - divided
2 teaspoon(s) extra virgin oil
6 clove(s) garlic - minced
2 cup(s) tomatillos - chopped
1/2 cup(s) gooseberries - stems removed and chopped
2 large roasted chipotle peppers - seeded, and finely chopped
1/2 cup(s) red onion - chopped
1 tablespoon(s) lemon zest
1/2 teaspoon(s) course sea salt - or to taste

Steps:

  • Place meat in a large plastic bag. ( You can use an Oven Bag, as for " Turkey " ) Prepare the marinade by stirring together lemon juice, soy sauce, cumin, fennel seeds, 1 chipotle pepper, 1 tablespoon cilantro, oil, and 3 garlic. Pour over steak in bag, close the bag. Marinate in the refrigerator for 6 hours, turning bag over about every 2 hours.
  • Chipotle-Tomatillo Salsa, stir together tomatillos, 1 chipotle pepper, gooseberries, red onion, the lemon zest, 1 tablespoon lemon juice, 1 tablespoon cilantro, 3 cloves garlic, and salt. Cover and refrigerator for 4 hours.
  • Drain steak, reserving marinade. Grill steak on the grill directly over hot coals for 6 to 7 minutes per side, or to desired doneness, when You turn steak over baste by brushing with reserved marinade.
  • NOTE: *** Once done with basting on the second side during grilling, *** MAKE SURE YOU DISCARD any reserved marinade. *** DO NOT EAT ***
  • Serve with the Salsa and a nice Crusty bread ENJOY !!!

1/3 cup hot water
3 tablespoons finely chopped onions
2 tablespoons cider vinegar
2 tablespoons olive oil or 2 tablespoons vegetable oil
2 tablespoons soy sauce
1 teaspoon beef bouillon granules
1 garlic clove, minced
1/2 teaspoon paprika
1/2 teaspoon fresh coarse ground black pepper
2 (12 ounce) rib eye steaks (about 1 inch thick)

Steps:

  • In a bowl, combine the first nine ingredients.
  • Remove 1/2 cup marinade and refrigerate.
  • Pierce steaks several times on both sides with a fork; place in an 11X7 glass dish.
  • Pour remaining marinade over steaks; turn to coat.
  • Cover and refrigerate overnight.
  • Remove steaks, discarding marinade.
  • Grill, uncovered, over medium-hot heat for 4-8 minutes on each side or until the meat reaches desired doneness (for rate, a meat thermometer should read 140 degrees; medium 160, well done 170).
  • Warm reserved marinade and serve with steaks.

4 lb rib eye beef roast
3 beef bullion cubes
3 Tbsp extra virgin olive oil
3 c beef stock
8 clove garlic - chopped fine
6 small leeks
6 small turnips, peeled and halved
6 small parsnips, peeled and halved
6 small potatoes, peeled and halved
6 large shallots, peeled and halved
1 bunch celery - cut into 2" pieces
4 Tbsp fennel seeds

Steps:

  • 1. Pre-heat Oven to 195 degrees Create a " paste " with the 3 beef cubes and the oil. Rub this into the beef. Heat Large Iron skillet, place the beef roast fat side down. Once the fat has rendered and turned golden brown, turn to sear all sides.
  • 2. Remove the beef from the skillet and place in a Dutch Oven, Return the skillet (with the beef fat) to the heat. Add the leeks to the skillet and cook until golden brown, remove and add to the Dutch Oven.
  • 3. Repeat this for the parsnips, turnips, garlic and fennel. Add the shallots to the Dutch Oven. Place the celery on top of the beef. Add beef broth to Dutch Oven. Drizzle the fat from the skillet over the roast and vegetables, and cover the Dutch Oven and place in the Oven.
  • 4. Cook for 4 hours at 195 degrees. Let the roast and vegetables rest for 10 minutes. Bring the juices to a boil for 2 minutes. Reduce the juices to thicken and pour over the roast and vegetables. Enjoy !
