One Pan Baked Salmon And Vegetables image

Salmon and vegetables baked together in one pan for an easy, healthy and quick dinner. Salmon fillets and fresh veggies rubbed with olive oil, herbs and spices and, baked to perfection.

12-16 oz salmon cut into 4 fillets (see notes)
1 zucchini
1 red and yellow pepper each
1 medium onion
1 tsp Italian seasonings
1 tsp paprika
1 tsp garlic powder
salt and pepper
1 tbsp olive oil divided
2-3 tbsp fresh parsley finely chopped
1 lemon cut into wedges or slices

Steps:

  • Preheat oven to 400F.
  • In a small bowl mix Italian seasoning, paprika, garlic powder, salt, and pepper.
  • Cut zucchini, peppers, and onion into 1/2" cubes. Place all vegetables on the baking sheet.
  • Add half the spice mixture, 1/2 tbsp olive oil (reserve remaining oil and spices for the salmon) and mix thoroughly to coat all the vegetables. Evenly spread the veggies on the baking sheet pan and cook the vegetables in the oven for 10 min.
  • Remove the pan and make space for the salmon fillets. Rub remaining spice mixture on the salmon fillets and place them in the gap among the vegetables. Drizzle remaining oil on the salmon.
  • Return the pan to oven and cook for 5-8 min or until salmon is well done.
  • Garnish with fresh parsley and lemon slices.

Number Of Ingredients 20

3 tablespoons olive oil
3 tablespoons chopped shallots
2 cloves garlic, peeled
3/4 cup white wine
24 littleneck clams, rinsed under cold water
1/2 cup fennel, chopped
1/2 cup chopped red onions
1/2 cup chopped celery
1/2 cup leeks, trimmed, washed and cubed (the white, and a little of the green)
2 sprigs fresh thyme (or 1/2 teaspoon dried)
1 bay leaf
4 salmon fillets, 6 ounces each, skinless and boneless
Salt and pepper to taste
3/4 cup sliced scallions
4 plum tomatoes, peeled, seeded and diced ( 3/4 cup)
10 leaves fresh basil, shredded ( 1/3 cup)
1/3 cup chopped chives
1 teaspoon balsamic vinegar
1/2 cup light-colored celery leaves for garnish
Sea salt to taste

Steps:

  • In a pot, combine 1 tablespoon of olive oil, 2 tablespoons shallots and 1 garlic clove (sliced thinly) over medium heat. Cook briefly until the shallots are wilted, then add 1/2 cup of white wine and the clams. Cover, bring to a boil, reduce to simmer, and cook for 5 minutes, stirring. As the clams open, remove them immediately with a slotted spoon. Remove meat from the shell and set aside. Strain the broth through a very fine sieve, return to the pan over medium heat and reduce to 1 cup (if the clams yield a cup of broth or less, there is no need to reduce).
  • To another saucepan over medium heat, add 2 tablespoons of olive oil. Add the fennel, red onions and celery. Cook for 1 minute, stirring. Add the leeks and stir. Add the remaining wine, 3/4-cup water, thyme, bay leaf and whole clove of garlic. Do not add salt yet because the clam base is salty. Cook over high heat until the vegetables are only slightly crunchy and most of the liquid has evaporated. Cover, remove from heat, and keep warm.
  • Place the salmon fillets on a steamer rack. Season with salt and pepper to taste. Place water in the bottom of the steamer, bring to a boil, and place the salmon rack over it, covered with foil. Cook over high heat for about 5 minutes; do not overcook. Remove from heat and keep warm.
  • Meanwhile, to the vegetable saucepan, add the clam broth, scallions, tomatoes, remaining chopped shallots, basil, salt and pepper to taste, chives and the balsamic vinegar. Bring to a boil over medium-high heat and cook for about 5 minutes or until the liquid has reduced by about half. Remove the bay leaf and the thyme.
  • Place each salmon fillet on the center of a warm plate. Arrange the vegetables and sauce over and around the fish. Garnish with celery leaves and sprinkle with sea salt.

Number Of Ingredients 18

2 tablespoons fresh chives, chopped
2 tablespoons fresh basil, chopped
2 tablespoons fresh tarragon, chopped
2 tablespoons fresh parsley, chopped
1/2 cup plus 2 tablespoons fresh mint, chopped (from 2 bunches)
6 cloves garlic, finely chopped (about 2 tablespoons)
1 1/4 cup extra-virgin olive oil
8 (1-inch-thick) salmon steaks, preferably sockeye or another wild variety
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 medium fennel bulb, stalks cut off and discarded, and bulb cored and thinly sliced lengthwise
1 medium sweet onion, such as Vidalia, thinly sliced
1 cup dry white wine
1/2 cup (1 stick) unsalted butter
1 teaspoon saffron threads
32 small (less than 2 inches wide) hard-shelled clams such as littleneck*, scrubbed (about 3 1/2 pounds total)
*If littleneck clams are unavailable, Manila or brown-shelled may be substituted.

Steps:

  • In large sealable plastic bag, combine chives, basil, tarragon, parsley, 2 tablespoons mint, garlic, and 3/4 cup olive oil. Add salmon and seal bag, pressing out air. Turn bag to coat salmon, then refrigerate, turning bag over occasionally, at least 1 hour and up to 4 hours. (Alternatively, marinate salmon in large glass baking dish.)
  • Preheat grill to moderate heat.
  • Remove fish from marinade and pat dry. Sprinkle with salt and pepper. Grill steaks, turning once, until just opaque in center, about 4 minutes per side. Transfer to platter and cover loosely with foil to keep warm.
  • In 6-quart heavy stock pot over moderate heat, heat remaining 1/2 cup olive oil until hot but not smoking. Add fennel and onion and sauté until just soft, about 2 minutes. Add wine, butter, saffron, remaining 1/2 cup mint, and clams, cover and bring to boil. Cook until clams open, about 10 minutes. Discard any clams that have not opened.
  • Place 1 piece salmon on center of each of 8 wide shallow bowls. Spoon clams, broth, onions, and fennel around salmon and serve immediately.

2 lb small red potato, or yellow, quartered
4 tablespoons olive oil
salt, to taste
pepper, to taste
4 cloves garlic, minced
4 tablespoons lemon juice
2 tablespoons fresh thyme
2 teaspoons ginger
2 salmon fillets
1 bunch asparagus, roughly 1 pound (455g)

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Cover a sheet pan with foil or parchment paper. Spread out potatoes on the pan and drizzle with olive oil. Season with salt, pepper, 2 cloves of garlic, and 1 tablespoon lemon juice.
  • Bake for 30 minutes.
  • Make salmon glaze. Combine salt, pepper, 1 tablespoon thyme, 2 garlic cloves, ginger, 2 tablespoons of olive oil, and 2 tablespoons of lemon juice. Mix well.
  • Remove potatoes from the oven and push them to the top or side of your pan. Place your salmon fillets on the pan. Brush both sides of the salmon with the glaze.
  • Place asparagus on the pan and top with 1 tablespoon olive oil, 1 tablespoon lemon juice, salt, and pepper. Sprinkle 1 tablespoon of thyme on the asparagus and potatoes.
  • Bake for 10-12 minutes. (The salmon should flake easily with a fork when it's ready.)
  • Enjoy!

2 tablespoons olive oil
2 cloves garlic, peeled and smashed
1 large onion, peeled and sliced
1 small fennel bulb, thinly sliced
1 large pinch saffron, soaked in 2 tablespoons orange juice for 10 minutes (optional)
1 strip orange zest
1 (14-ounce) can whole peeled tomatoes, in juice
6 cups seafood stock (sold at most fish markets) or clam juice
Some or all of the following seafood (ask your fish seller for enough to serve 4 to 6 people): halibut, cod, tilapia, or snapper (in large chunks); shell-on large shrimp or lump crabmeat; clams or mussels
1 bunch Italian parsley, chopped

Steps:

  • 1. Heat the olive oil in a large, heavy pot over medium-high heat. Add the garlic, onion, and fennel and saut until just brown, 5 to 10 minutes.
  • 2. Add the saffron (if using), orange zest, tomatoes, and stock or clam juice.
  • 3. Bring to a boil and cook until the vegetables are tender and the liquid is reduced by half, about 20 minutes.
  • 4. Reduce heat to medium and add the fish (but not shellfish). Cook for about 2 minutes.
  • 5. Add any clams, mussels, and shrimp. Simmer until the shells just begin to open, about 4 minutes more.
  • 6. Add any crabmeat.
  • 7. Cook until all shells have opened, the shrimp is pink and curled, and the fish flakes easily, about 2 minutes.
  • 8. Serve from the pot, sprinkled with the parsley and topped with crusty bread and a dollop of rouille.

4 medium-size endives
1/2 pound (about 1 head) red-leaf lettuce, cut into large pieces, or an equal amount of radicchio
1/3 pound arugula, cut into 4-inch pieces
1 1/2 pounds skinless, boneless salmon fillets
6 tablespoons olive oil
Freshly ground black pepper to taste
1/2 cup chopped scallions
2 tablespoons chopped shallots
2 tablespoons finely chopped ginger root
1/3 cup red-wine vinegar
2 tablespoons light soy sauce
2 tablespoons dry white wine
6 tablespoons chopped fresh dill leaves
6 teaspoons salmon caviar or caviar of your choice, optional

Steps:

  • Trim the hard bottoms from the endives and remove the leaves. Arrange eight leaves on each of six plates with the bottoms at the center and the tops forming a fan pattern. Leave room between each leaf.
  • Distribute the red-leaf lettuce over each of the plates between the endive leaves. Place a clump of arugula at the center of the fan pattern.
  • Cut each salmon fillet into thirds lengthwise. Then cut each strip on the bias into two-inch-long pieces.
  • Heat the oil in a nonstick frying pan. Put the salmon in the pan and sprinkle with pepper. Cook briefly. Add the scallions, shallots and ginger. Saute the salmon for one minute on each side. Add the vinegar and soy sauce and then the white wine. Blend well. Remove from the heat.
  • Place the salmon strips over the salad. Evenly distribute the sauce over the salmon and greens. Garnish each plate with a tablespoon of chopped dill and a teaspoon of caviar, if desired.
