FRESH FIG CAKE
This recipe makes a moist cake filled with a mixture of fresh figs, brown sugar, and lemon juice.

- Preheat oven to 350 degrees F (175 degrees C). Spray two 8-inch round cake pans with vegetable oil spray.
- In a medium bowl, sift together flour, salt and baking powder. Set aside.
- In a large mixing bowl, cream butter with the sugar until fluffy. Add egg and beat well. Add flour mixture alternately with the evaporated milk. Fold in vanilla and almond extracts and 1 cup chopped figs.
- Divide into two prepared 8-inch round cake pans. Bake in preheated oven until cake springs back when lightly touched with a fingertip and a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool cake layers on wire rack.
- To make the filling: In a saucepan, combine 2 cups chopped figs, brown sugar, water and lemon juice. Bring to a boil. Reduce heat to a simmer and cook until thickened, about 20 minutes. Spread thinly between cooled cake layers and on top.

FIG CAKE II
This is a very moist cake that doesn't last long in my house. For a different taste, toast the pecans slightly. Dates can be substituted for figs to make a date cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour, salt, cinnamon, nutmeg and allspice. Set aside. Dissolve 1 teaspoon baking soda in 2 teaspoons hot water; set aside.
- In a large bowl, beat eggs with electric mixer until thick and lemon colored. Beat in 1 1/2 cups sugar and 1 cup oil. Combine buttermilk and dissolved baking soda. Beat in the flour mixture alternately with buttermilk mixture. Stir in 1 teaspoon vanilla, figs, and nuts. Pour into prepared pan.
- Bake in the preheated oven for 70 to 75 minutes. Remove from pan and pour hot Buttermilk Icing over warm cake.
- To make Buttermilk Icing: In a heavy saucepan, combine 1 cup sugar, 1/2 cup buttermilk, 1/2 teaspoon baking soda, corn syrup and butter. Bring to a boil and cook to soft ball stage (240 degrees F/ 115 degrees C). Remove from stove and stir in vanilla. Pour over warm cake.

FIG PRESERVES CAKE
From The Ultimate Southern Living Cookbook. My favorite way to use all of those fig preserves I insist on making. A nice moist spice cake, good with coffee when the weather starts to get cool.

- Combine first 8 ingredients in a large mixing bowl; add oil and eggs, beating at medium speed with an electric mixer until blended.
- Add buttermilk and vanilla, beating well.
- Stir in preserves and pecans.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake at 350 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
- Cool in a pan on a wire rack 10 minutes.
- Remove from pan and place on a serving plate.
- Pour buttermilk glaze over cake while both are still warm.
- For Buttermilk Glaze: Bring sugar, baking soda, buttermilk, butter and corn syrup to a boil in a Dutch oven over medium heat.
- Boil 4 minutes, stirring constantly until glaze is golden.
- Remove from heat, stir in vanilla.
- Cool slightly.
- Yield: 1/2 cups.
FIG AND ALMOND CAKE
Figs are baked into an almond batter for this rustic cake to have with coffee or tea. With figs, ripeness is everything. A ripe fig (the object of your desire) is soft, yielding, beginning to crack, nearly wrinkled. When you cut into it, the flesh is bright and juicy and the taste is ethereal.

- Heat oven to 375 degrees. Butter a 9-inch fluted tart pan or pie pan; set aside. Put almonds and 1/4 cup sugar in a food processor and grind to a coarse powder. Add flour, baking powder, cinnamon and salt; pulse to combine.
- In a mixing bowl, whisk together eggs, melted butter, honey and almond extract. Add almond mixture and beat for a minute until batter is just mixed. Pour batter into pan.
- Remove stem from each fig and cut in half. Arrange fig halves cut-side up over the batter. Sprinkle figs with sugar and bake for 30 minutes, until golden outside and dry at center when probed with a cake tester. Cool before serving.

- Prepare the Cake: Preheat oven to 350°F. Grease (with butter) and flour a 10-inch, 12-cup light-colored metal tube (angel food) pan. Sift together flour, nutmeg, allspice, cinnamon, and salt into a large bowl.
- Beat eggs in bowl of a stand mixer fitted with paddle attachment on medium speed until foamy, about 1 minute. Gradually add sugar, beating on medium speed until mixture is thick and pale, 2 to 3 minutes. Gradually add oil, beating until well combined. With mixer running on low speed, add flour mixture alternatively with buttermilk, beginning and ending with flour mixture, beating until just combined after each addition.
- Stir together water and baking soda in a small bowl until dissolved; add to batter with jam and vanilla. Beat on low speed until just combined. Gently fold in walnuts. Pour batter into prepared pan; spread into even layer. Bake in preheated oven until a wooden pick inserted into center of cake comes out clean, about 1 hour and 10 minutes. Cool on a wire rack 15 minutes. Invert and remove cake from pan to wire rack, and let cool completely, about 1 ½ hours.
- Meanwhile, prepare the Glaze: Stir together sugar, cornstarch, buttermilk, butter, corn syrup, cornstarch, and baking soda in a medium saucepan over medium; bring to a boil, stirring occasionally. Cook, stirring occasionally, until sugar is dissolved and is light golden brown, about 5 minutes. Remove from heat; stir in vanilla, and let cool 30 minutes. Drizzle slightly warm glaze over cooled cake.

- Mix dry ingredients, add wet ingredients, fold in pecans and figs. Pour into greased & floured Bundt pan. Bake at 350* for approx. 30 -35 min. Check for done-ness with toothpick. Mine wasn't done after 30 mins. so I left it in about 5-10 more minutes.
