PISTACHIO AND FIG LAYERED ICE CREAM CAKE

Pistachio and Fig Layered Ice Cream Cake image

Fig cookies and ice cream make strangely good bedfellows in this super simple layered ice cream cake. For a fun variation, mix up your ice creams flavors-try strawberry and orange sherbet or chocolate and vanilla bean.

Categories     dessert

Time 4h55m

Yield 8 servings

Number Of Ingredients 6

1 1/2 pints butter pecan ice cream (3 cups)
18 fig cookies, such as Fig Newtons
1 1/2 pints pistachio ice cream, preferably the green variety (3 cups)
1/2 cup heavy cream
1 tablespoon confectioners' sugar
1 tablespoon roasted pistachios, chopped

Steps:

  • Let the butter pecan ice cream soften slightly at room temperature for about 10 minutes. Evenly spread it on the bottom of an 8-inch springform pan; freeze until hardened, about 30 minutes.
  • Arrange the fig cookies in an even layer over the ice cream (don't press them down into it) so they fit snugly together, cutting to fit if necessary.
  • Meanwhile, let the pistachio ice cream sit at room temperature for about 10 minutes. Evenly spread it over the cookies. Cover the top of the cake with plastic wrap, and freeze until solid, at least 4 hours up to overnight.
  • When ready to serve, remove the plastic wrap and let the cake sit at room temperature for 10 minutes.
  • Meanwhile, whip the cream with an electric mixer on medium speed in a small bowl until firm peaks form; stir in the sugar. Run a knife around the cake edge, and remove the springform collar. Top with the whipped cream, and sprinkle with the pistachios. Cut into slices with a sharp, heavy knife.

PISTACHIO ICE CREAM

Pistachio Ice Cream image

Provided by Food Network

Categories     dessert

Time 3h40m

Yield about 2 quarts

Number Of Ingredients 8

1 cup unsalted shelled pistachios
1 cup sugar
2 cups milk (do not use low-fat or nonfat)
3 cups heavy cream
12 large egg yolks
1/2 teaspoon almond extract
1 cup whipped cream, for garnish
1 cup unsalted shelled pistachios, toasted, coarsely chopped, for garnish

Steps:

  • Finely grind 1 cup of the pistachios and 1/2 cup of the sugar in a food processor, being careful not to turn the mixture into butter. Bring the milk and cream to a boil in heavy large saucepan. Remove from heat.
  • Combine the egg yolks and remaining 1/2-cup sugar in a mixing bowl and whisk to blend. Gradually whisk 1 cup of the hot milk mixture into the eggs. Gradually add the egg mixture in a slow, steady stream into the hot cream in the saucepan. Cook over low heat, stirring occasionally, until the custard thickens enough to coat the back of a spoon and reaches 170 degrees on an instant-read thermometer, about 6 minutes.
  • Remove from the heat and strain into a large bowl. Add pistachio mixture and almond extract. Cover with plastic wrap, pressing down against the surface to keep a skin from forming, and chill in the refrigerator for at least 2 hours.
  • Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. After the ice cream is made, transfer to an airtight container and freeze until ready to serve.
  • Garnish with whipped cream and toasted pistachios.

This pale green iced treat works as an accompaniment to desserts, or on its own with wafers on a hot day

Provided by Mary Cadogan

Categories     Dessert

Time 50m

Yield Serves 6 with leftovers

Number Of Ingredients 6

100g shelled pistachio
150ml milk
100g golden caster sugar
300ml double cream
300ml ready-made custard
½ tsp almond extract

  • Place the milk, cream, vanilla bean and seeds in a large saucepan and bring to the boil. While the mixture is heating combine the egg yolks and sugar in the bowl of an electric mixer fitter with a whisk attachment. Whisk until the mixture is lightly thickened and then gradually add the milk mixture into the egg yolks. Do this slowly so as not to curdle the eggs.
  • Pour the mixture back into the saucepan and return to a medium low heat and stir and check the consistency by turning the spoon over and running your finger through the mixture that has coated the spoon. If the line from your finger remains clear then the custard is ready. Pour the custard into a large bowl and cover with cling film and refrigerate overnight.
  • Preheat the oven to 200 celsius (400 Fahrenheit) and line a roasting pan with baking paper. Combine the figs, honey and brown sugar in a bowl and then spread the mixture evenly over the roasting pan. Bake for 15 to 20 minutes or until caramelised and set aside to cool.
  • Once the figs have cooled place into a food processor and process. Loosen the mixture with the vodka.

  • Add the milk and cream to a large heavy-bottom saucepan and gently scald it. While the milk and cream mixture is scalding, add 1/2 cup of pistachios and the granulated sugar to a food processor, blend until a fine paste forms.
  • Pour the pistachio paste into the cream and milk mixture, then continue to heat it, constantly whisking every minute until the sugar dissolves about 3-4 minutes. Set the ice cream base aside.
  • Add the egg yolks to a medium mixing bowl and beat well using a whisk. Slowly pour a cup of the hot cream pistachio mixture into the eggs, constantly whisking to prevent the eggs from coagulating. Gradually pour the egg mixture into a steady stream back into the heavy bottom saucepan with the remaining cream, stir to combine, then simmer the base over medium-low heat for 5-10 minutes, stirring every so often until the custard thickens and reaches a temperature of 170 F.
  • Remove the ice cream base from the range and pour it through a fine-mesh sieve placed on top of a large mixing bowl, then stir in the almond and vanilla extracts. Let the pistachio ice cream base cool to room temperature, then place a plastic wrap over it, directly pressing it into the base to stop skin from forming on the surface of the ice cream base. Refrigerate the base overnight.
