1 box Betty Crocker™ Seasoned Skillets® hash brown potatoes
4 cups very hot water
2 tablespoons margarine, butter or spread, melted
1 egg, slightly beaten
2 cups shredded Colby-Monterey Jack cheese (8 ounces)
2 small jalapeño chiles, seeded and finely chopped
1 small red bell pepper, finely chopped (1/2 cup)
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
2 eggs
2/3 cup milk
Shredded lettuce, if desired
Sour cream, if desired
Sliced chile peppers, if desired

Steps:

  • Heat oven to 375°F. Cover potatoes with water. Let stand 15 minutes; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mixture on bottom and up side of ungreased pie plate, 9x1 1/2 inches. Bake 20 minutes.
  • Reduce oven temperature to 350°F. Sprinkle half of the cheese, finely chopped chiles and bell pepper in potato crust; repeat. Beat flour, salt and 2 eggs until blended; stir in milk. Pour over cheese mixture.
  • Bake about 35 minutes or until center is set and top is golden brown. Let stand 10 minutes before cutting. Garnish with shredded lettuce, sour cream and sliced chile peppers.

This is a dish that I make about twice a month. My family loves this served with fresh cantaloupe and spanish rice.

1 onion, chopped
1 1/2 lbs ground beef
1 package taco seasoning mix
1 package medium flour tortilla
1 (16 ounce) can refried beans
taco sauce
1 (4 ounce) can peeled and chopped green chilies
2 cups shredded taco cheese (colby and monterey jack)
2 cups crushed tortilla chips
2 medium tomatoes, chopped

Steps:

  • saute onion in a small amount of oil until tender.
  • Add beef and brown, stirring.
  • Drain grease from meat and add taco seasoning packet along with 1/3 cup of water.
  • simmer, stirring occasionally.
  • Meanwhile, place 3 flour tortillas on bottom of a 9 inch pie pan, spreading tortillas out to cover the entire bottom of the pan.
  • Spread 1/2 of the refried beans over the tortillas.
  • Add 1/2 of the green chilies.
  • Cover with half of the meat mixtureand 1 cup of the cheese.
  • Repeat the layers and top with cruched tortilla chips.
  • Bake at 350 degrees for 30 minutes.
  • top with chopped tomatoes and serve with taco sauce, if desired.

1 1/2 lbs ground pork or 1 1/2 lbs ground turkey (or combo)
1 large onion, chopped
1 (15 ounce) can beans, drained
1 sweet red pepper, chopped
2 large potatoes, thin sliced and steamed til tender
4 -10 ounces canned green chilies or 4 -10 ounces frozen green chilies, depending on how much you like chile
7 ounces corn chips or 7 ounces tortilla chips
1 cup salsa
3 ounces monterey jack cheese or 3 ounces mozzarella cheese
1/2 cup fat free sour cream
cilantro

Steps:

  • Preheat the oven to 400.
  • Saute the meat, onion, and sweet peppers.
  • Drain.
  • Add beans, and chile.
  • Season with s& p to taste.
  • Spray an 8x8 pan with Pam.
  • Layer chips, potatoes, salsa, meat mix, cheese.
  • Repeat layers.
  • Bake 20 minutes.
  • Remove from oven; spread sour cream and cilantro on top.
  • Serve.

3/4 cup yellow cornmeal
1 cup beef broth
1 lb lean ground beef
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 (16 ounce) jar thick & chunky salsa
1 (16 ounce) can whole kernel corn, drained
1/4 cup sliced ripe olives
2 ounces low-fat cheddar cheese, shredded

Steps:

  • In large bowl, mix cornmeal and broth.
  • Let stand 5 minutes.
  • Stir in beef, chili powder, cumin, salsa, corn and olives.
  • Pour into a 3 1/2 quart slow cooker.
  • Cover and cook on LOW 5-7 hours or until set.
  • Sprinkle cheese over top.
  • Cover and cook another 5 minutes or until cheese melts.

3/4 cup milk
2 cups STOVE TOP Everyday Stuffing Mix for Chicken
1-1/2 cups chopped cooked chicken
1 large tomato, chopped
1 can (4 oz.) chopped green chiles, drained
3/4 cup green onion slices

Steps:

  • Beat eggs and milk with wire whisk in large bowl until well blended. Add remaining ingredients; mix well.
  • Spoon into greased 9-inch microwavable pie plate. Cover loosely with wax paper. Microwave on HIGH 5 minutes. Stir to completely mix the center and outside edge; smooth top. Cover.
  • Microwave an additional 4 minutes or until no longer moist in center. Let stand 5 minutes before serving.

This is from a book called "Make Ahead Meals". The Siesta Fiesta comes from being to rest if you already had it made in your freezer! You can combine all of the ingredients except cheese and cornbread mix and freeze in a large freezer bag. When you are ready to fix it, thaw it and go from there!

1 clove garlic, minced
1 (19 ounce) can enchilada sauce (I use Las Palmas Original)
1 can small ripe pitted olive
1 teaspoon salt
1 tablespoon chili powder
1 package cornbread mix (Jiffy is a good one)
1 cup shredded cheddar cheese

Steps:

  • Combine all ingredients except cornbread and cheese.
  • Pour into a 2 quart casserole dish.
  • Preheat oven to 375 degrees.
  • Prepare cornbread according to mix and spread over meat mixture.
  • Sprinkle with cheese and bake 30 to 40 minutes until cornbread is done and meat is bubbly.

1 package pillsbury refrigerated pie crust
1 lb ground beef
1 (15 ounce) can spicy chili beans, undrained
1/2 cup salsa
6 ounces shredded cheddar cheese (1 1/2 cups)
1 cup shredded lettuce
1/2 cup chopped tomato
green onion, slices (optional)
sour cream (optional)
ripe olives (optional)
chopped jalapeno (optional)

Steps:

  • Unfold pie crust; place in 9" pie pan.
  • Prick bottom and sides with fork; flute edge.
  • Cut 13 (2") triangle pieces from remaining crust; place around crust edge.
  • Bake at 425 degrees for 9 to 11 minutes or until light golden brown.
  • Cook in large skillet: Brown ground beef, drain.
  • Add chili beans, salsa and 1 cup of cheese; mix well.
  • Cook over low heat for 2 to 3 minutes or until cheese is melted.
  • Fill: Spoon meat mixture into baked shell.
  • Top with remaining ingredients.
  • Serve and Enjoy!

1 cup TACO BELL® Thick & Chunky Salsa
1 can (8 oz.) refrigerated crescent dinner rolls
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 400°F
  • Cook turkey in nonstick skillet on medium heat 10 min. or until no longer pink, stirring frequently. Remove from heat; stir in salsa.
  • Unroll crescent dough; separate into triangles. Place in 9-inch pie plate, with short ends of triangles at outside edge of pie plate. Press seams together to seal.
  • Spoon turkey mixture into crust; sprinkle with cheese.
  • Bake 18 to 20 min. or until cheese is melted and edge of crust is golden brown.
