1 prepared pizza crust (12 inch)
1 tablespoon vegetable oil
2 boneless skinless chicken breast halves, cut into thin strips
1 (1 1/4 ounce) package taco seasoning mix
1 tablespoon water
1 cup salsa
1/2 cup four-cheese Mexican blend cheese, shredded (6 oz)
to taste black olives, sliced
to taste green onion
to taste green bell pepper
to taste red onion
to taste taco sauce (optional)
to taste sour cream (optional)

Steps:

  • Preheat oven. ( See pizza crust package directions)
  • Heat vegetable oil in large skillet over medium heat. Add chicken; cook for 4 to 5 minutes or until no longer pink.
  • Add seasoning mix and water; mix well.
  • Spread salsa over crust.
  • Top with chicken mixture, cheese and vegetable toppings.
  • Bake according to pizza crust package directions or until crust is crisp and cheese is melted.
  • Drizzle with taco sauce and top with sour cream before serving.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 small tomatoes, chopped
1/3 cup picante sauce
1 medium green pepper, chopped
1 small onion, chopped
2 to 3 teaspoons chili powder
12 corn tortillas (6 inches), cut into 1-inch strips
3 cups cubed cooked chicken
1 cup shredded Colby cheese

Steps:

  • In a large bowl, combine the soups, tomatoes, picante sauce, green pepper, onion and chili powder. In a greased 13x9-in. baking dish, layer half of the tortilla strips, chicken, soup mixture and cheese. Repeat layers. , Cover and bake at 350° until bubbly, 40-50 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

  • In a sauce pan over medium-high heat, add all ingredients for chicken and let boil for 15 minutes. Remove chicken from pan and chop into small pieces.
  • In another sauce pan over medium heat, add butter, garlic powder and onion powder. Once melted whisk in flour to make roux. Cook 2 minutes then whisk in chicken broth. Cook 2 minutes then add heavy cream and green chilies. Cook 2 minutes then add cheese by handfuls until fully incorporated. Reduce heat to low.
  • Lay one pizza dough out on a parchment paper covered pans (baked for 15 minutes). Spread one can of refried beans over top. Top with half of chicken then half of queso sauce. Sprinkle with 1 cup cheddar cheese and half of cilantro. Repeat with second pizza dough. Place in oven for 20 minutes.
