DARK CHOCOLATE FIBER ONE HAYSTACKS

This was originally a weight watcher recipe but theirs included peanut butter and regular chocolate chips. Using the 60% cacao makes them feel a bit healthier as well as taste better!

10 oz dk chocolate (i use ghirardelli 60% cacao
1 bag(s) fiber one cereal (2 bags/16.2 oz box)

Steps:

  • 1. Melt chocolate according to package directions. Microwave works great!
  • 2. Once it is smooth and shiny, stir in cereal
  • 3. Drop onto wax paper lined tray Note: be sure it fits in the refrigerator!
  • 4. Place in refrigerator until set. Can be stored in fridge but is not necessary once set.

1/2 cup reduced-fat peanut butter
1 pouch (3 3/4 cups) Fiber One™ original bran cereal (from 16.2-oz box)

Steps:

  • Line cookie sheets with waxed paper. In large microwavable bowl, microwave chocolate chips and peanut butter uncovered on High 1 minute, stirring after 30 seconds. Microwave 30 seconds to 1 minute longer, stirring every 15 seconds, until melted and smooth.
  • Stir in cereal until well coated. Drop mixture by rounded teaspoonfuls onto waxed paper. Refrigerate until chocolate is firm.

8 1/8 ounces general mills Fiber One cereal (one sleeve)
12 ounces semi-sweet chocolate chips
2 teaspoons peanut butter (optional)

Steps:

  • Melt 1 bag of good semi-sweet chocolate chips in microwave in a large bowl on high for about 2 minutes or until melted (stirring occasionally).
  • Once melted, mix in 1 sleeve of Fiber One cereal (8.1 oz). Once well blended, use a tablespoon to scoop out rounded cookies onto a cookie sheet lined with wax paper. Refrigerate until set (about 1/2 hour). Can freeze portions until ready to eat.

1 (12 ounce) package chocolate chips
3/4 cup creamy peanut butter
8 1/2 ounces chow mein noodles
7 ounces miniature marshmallows

Steps:

  • In a large bowl microwave chips on Medium-High (70) power for 1 minute, stir.
  • Microwave 10-20 second more until smooth.
  • Take out and add peanut butter, stir until well blended.
  • Add chow mein noodles and marshmallows; stir until all ingredients are coated.
  • Drop by rounded tablespoon onto cookie sheet lined with waxed paper.
  • Refrigerate until ready to serve.

This is a quick and easy chocolate-fix that the kids and adults will love. It's easy to play around with the ingredients to suit. My family has been making it for years and it's still a fave! Ingredients can be switched up with great results. It's also great with white chocolate and cranberries or crushed peppermints. You can use any nuts in place of the almonds.

2 cups rolled oats
1 (12 ounce) package semisweet chocolate chips
1 cup shredded coconut
1 cup chopped almonds
1 cup white sugar
½ cup milk
½ cup butter
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with waxed paper.
  • Stir oats, chocolate chips, coconut, and almonds together in a large bowl.
  • Whisk sugar, milk, butter, and salt together in a saucepan; bring mixture to a boil, add vanilla, and remove from heat. Pour milk mixture over chocolate chips mixture; stir until well-combined. Drop spoonfuls of chocolate mixture onto prepared baking sheet. Chill in the refrigerator until haystacks are set, 15 to 20 minutes.
