FETA TACOS WITH GUACAMOLE
Feta cheese and coriander add a fresh new twist to guacamole, turning a quick meal into something special and oozing with flavour

Steps:
- Preheat oven to 190C/Gas 5/fan oven 170C. Heat the oil in a large frying pan, add the onions and cumin seeds and fry until softened.
- Tip the beans into the pan with the onions and start to warm. Halve the tomatoes, chop the coriander and dice the feta. Add to the pan and gently heat just until bubbling.
- Place the tortillas directly on the oven shelves and heat for 1-2 minutes until warm and starting to puff. Now get everyone to help themselves and create their own tacos. Pile pieces of lettuce on the warmed tortillas and add a spoonful of the spicy bean and feta mixture. Top with a spoonful of guacamole, and an olive if you like. Fold over and serve.

- In a large bowl, toss beef with vinaigrette; let stand 15 minutes. In a small bowl, mix yogurt and lime juice., In a large skillet, heat oil from sun-dried tomatoes over medium-high heat. Add pepper and onion; cook and stir until crisp-tender, 3-4 minutes. Remove to a small bowl; stir in sun-dried tomatoes and olives., Place same skillet over medium-high heat. Add beef; cook and stir until no longer pink, 2-3 minutes. Remove from pan., Serve steak and pepper mixture in tortillas; top with cheese. Serve with yogurt mixture and lime wedges.

- 1. Remove avocado skin and stone and place in a bowl. Mash avocados.
- 2. Add small diced tomato, onion, garlic and cilantro. Season with salt and gently mix until all nicely incorporated.
- 3. Add Feta Cheese and gently mix again. Reserve some of the Feta Cheese to sprinkle on top.
- 4. Serve with your favorite chips! Super easy and delicious, don't you think??!!

- Place beans and cumin in small bowl; partially mash. Mix 2 teaspoons olive oil and lime juice in medium bowl; add coleslaw, green onions, and cilantro and toss to coat. Season slaw to taste with salt and pepper.
- Heat 3 teaspoons olive oil in large nonstick skillet over medium-high heat. Add tortillas in single layer. Spoon 1/4 of bean mixture onto half of each tortilla; cook 1 minute. Fold tacos in half. Cook until golden brown, about 1 minute per side. Fill tacos with feta and slaw. Pass hot sauce alongside.
AVOCADO AND FETA GUACAMOLE
This has to be one of my favorite salsas! You don't mash the avocados you cut them in cubes. Something like plain guacamole but with a twist. If you love avocados and you love feta - put them together. Try it. You will love this recipe!

- Cube avocado, do not mash - sprinkle w/lemon juice, set aside.
- In a medium bowl mix together the rest of the ingredients and fold in the avocados, gently.
