FETA-BRINED CHICKEN BREASTS



Feta-Brined Chicken Breasts image

The secret to these moist and tender chicken breasts is the feta brine. Not only does the brine prevent the breasts from drying out, the feta adds a subtle, tangy yet fresh flavor. This also works well with bone-in, skin-on chicken pieces, but be sure to adjust the cooking time accordingly. Bruising the herbs releases their lovely aromatic oils without having to worry about picking the bits off the chicken when done brining.

4 skinless, boneless chicken breasts
2 sprigs fresh oregano
1 sprig fresh rosemary
2 ounces feta cheese in brine, with 2 ounces of brine reserved
1 cup water
1 clove garlic
2 tablespoons olive oil
freshly cracked black pepper to taste
4 slices lemon

Steps:

  • Pound chicken to an even 1-inch thickness and place in a gallon-sized resealable bag.
  • Lightly crush oregano and rosemary sprigs using the back of a knife or a meat mallet so they are lightly bruised but still whole. Place on top of chicken.
  • Combine feta cheese, reserved brine, water, and garlic in a blender and process until smooth. Pour brine mixture over chicken, seal the bag, and refrigerate for 8 hours to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Remove chicken from brine and pat dry. Brush with olive oil place in a large baking dish. Season with black pepper and place a lemon slice on each breast.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 22 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

For a casual summer lunch, try this Mediterranean roast with chickpeas, vegetables and salty Greek cheese

1 garlic bulb, separated into cloves, 3 crushed, remainder left whole
2 tbsp chopped oregano
2 lemons , juice of 1, the other cut into wedges
4 tbsp olive oil
1 chicken (about 1.6kg/3lb 8oz)
3 large red peppers , deseeded and cut into large chunks
3 small red onions , cut into wedges
4 large courgettes , cut into thick wedges
3 tbsp chopped mint , plus a few sprigs to serve
200g pack feta cheese , crumbled into chunks
400g can chickpea , drained
crusty bread , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the crushed garlic and oregano with the lemon juice and 3 tbsp of the oil to make a dressing. Season. Make a few slashes in each chicken leg, then put the chicken in a large roasting tin and rub with 2 tbsp of the dressing. Stuff the squeezed lemon shells inside the body cavity. Roast for 30 mins.
  • Meanwhile, tip the peppers, onions, whole garlic cloves and courgettes into a large bowl, and toss with the remaining oil and some seasoning. After 30 mins, pile the veg around the chicken, drizzle with half the remaining dressing and roast for 1 hr.
  • Remove the chicken from the oven, lift onto a platter, cover with foil and leave to rest. Check the roasting tin, and if the chicken has rendered a lot of fat, pour it off, skim and return the juices to the tin. Stir the lemon wedges, mint, feta, chickpeas and remaining dressing through the veg and juices, then return to the oven for 10 mins to warm through. Pile around the chicken, scatter with mint sprigs and serve with bread, if you like, to mop up the juices.

  • The night before cooking, blend 2 ounces of the feta, the feta brine, 1 teaspoon salt, and 3 cups water until smooth. Place the chicken in a mixing bowl large enough to submerge the chicken completely, and cover with the brine.   • Just before cooking, preheat the oven to 450F. In a 12-inch cast-iron or otherwise heavy bottomed ovenproof skillet, heat the remaining 1/4 cup of olive oil until just smoking. Turn the heat off, then place the chicken in the skillet, breast-side up. Transfer the pan to the oven.
