Easy Festive Fruit Salad image

As colorful as the leaves on the autumn trees, this fruit salad disappears fast down to the last spoonful. The light dressing doesn't hide the refreshing flavors of the fruit. Pecans add crunch and the rich flavor of the harvest season. -Julianne Johnson, Grove City, Minnesota

Number Of Ingredients 9

1 can (20 ounces) pineapple chunks
1/2 cup sugar
3 tablespoons all-purpose flour
1 egg, lightly beaten
2 cans (11 ounces each) mandarin oranges, drained
1 can (20 ounces) pears, drained and chopped
3 kiwifruit, peeled and sliced
2 large unpeeled apples, chopped
1 cup pecan halves

Steps:

  • Drain pineapple, reserving juice. Set pineapple aside. In a small saucepan, combine sugar and flour; stir in reserved pineapple juice until smooth. Bring to a boil. Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 1 minute or until thickened. Remove from the heat; cool for 15 minutes. Cover and refrigerate. , In a large serving bowl, combine the oranges, pears, kiwi, apples, pecans and reserved pineapple. Drizzle with dressing; toss to coat. Cover and chill for 1 hour.

1 medium fresh pineapple
3 medium apples (red, yellow and green), cubed
1 small cantaloupe, cubed
1 large firm banana, sliced
1 pint strawberries, halved
1 pint blueberries
4 cups seedless red and green grapes
3 kiwifruit, peeled and sliced
DRESSING:
3 ounces cream cheese, softened
1/2 cup confectioners' sugar
2 teaspoons lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
Additional berries for garnish, optional

Steps:

  • Peel and core pineapple; cut into cubes. Place in a 3- or 4-qt. glass serving bowl. Stir in remaining fruit., In a large bowl, beat cream cheese until fluffy. Gradually add sugar and lemon juice and mix well. Fold in whipped topping. , Spread over fruit. Garnish with additional berries if desired. Store leftovers in the refrigerator.

From one of the TOH magazines submitted by J Johnson. I love the combo of the different fruits and the walnuts - just a good blend. The dressing is light and does not mask the flavors of the fruit. Allow 30 minutes at least for dressing to cool and another hour for salad to set before serving.

1 (20 ounce) can pineapple chunks (in juice not syrup)
1/2 cup sugar
3 tablespoons flour
1 egg, lightly beaten
2 (11 ounce) cans mandarin oranges (in juice)
1 (20 ounce) can pears (in juice)
3 kiwi fruits, peeled and sliced
2 large apples, unpeeled and chopped
1 cup walnuts, coarsley chopped

Steps:

  • Drain pineapple and reserve the juice and set the pineapple aside.
  • Pour the pineapple juice into a small saucepan, add sugar and flour; then bring to a boil.
  • Quickly stir in the lightly beaten egg and cook until thickened.
  • Remove dressing from heat and let cool - then refrigerate till using.
  • In a large bowl, combine all the fruit and the nuts.
  • Pour the dressing over the fruit and blend well.
  • Cover and chill for one hour so flavors blend.

3/4 cup sugar
1/3 cup all-purpose flour
1 cup milk
1 can (20 ounces) crushed pineapple, drained
2 tablespoons butter
4 medium unpeeled red apples, cut into chunks
1 cup green grapes
1 cup chopped pecans, toasted
1/4 cup red maraschino cherries, quartered
1/4 cup green maraschino cherries, quartered

Steps:

  • In a saucepan, combine sugar and flour. Stir in milk and pineapple until blended. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes or until thickened. , Remove from the heat; add butter. Cool. In a bowl, combine the apples, grapes, pecans and cherries. Add dressing; stir to coat. Cover and refrigerate until serving.

3/4 cup water
1/2 cup sugar
5 medium apples, diced
2 medium firm bananas, sliced
1-1/2 cups fresh or frozen blueberries, thawed
1 can (11 ounces) mandarin oranges, undrained
1 cup fresh or frozen raspberries, thawed
3/4 cup fresh strawberries, halved

Steps:

  • In a large saucepan, combine the cranberries, water and sugar. Cook and stir over medium heat until berries pop, about 15 minutes. Remove from the heat; cool slightly., In a large bowl, combine the remaining ingredients. Add cranberry mixture; stir gently. Refrigerate until serving.

1 (16 ounce) package small bow tie pasta, cooked and rinsed
1 cup craisins or 1 cup dried cranberries
1 cup red grapes, washed and cut in half
1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) pineapple tidbits, drained
1 large apple, cut in small cubes
1/2 cup finely chopped pecans
2 green onions, finely chopped
1/2 cup diced celery
1 cup light sour cream
1/2 cup Miracle Whip light or 1/2 cup mayonnaise

Steps:

  • In a large bowl combine cooked pasta, craisins or dried cranberries, grapes, oranges, pineapple, apple, pecans, green onions and celery. In a small bowl combine sour cream and Miracle Whip, (or mayonnaise). Drizzle dressing over salad and gently toss to combine all the ingredients. Refrigerate until serving time.
