Rich bars recipe with coconut, dried cranberries and brown sugar atop a buttery shortbread crust.

Crust
1 1/2 cups all-purpose flour
3/4 cup sugar
3/4 cup cold Land O Lakes® Butter cut into chunks
Topping
2 cups sweetened flaked coconut
1 cup sweetened dried cranberries
3/4 cup firmly packed brown sugar
1/3 cup all-purpose flour
3 large Land O Lakes® Eggs
1 1/2 teaspoons vanilla
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F.
  • Combine 1 1/2 cups flour and sugar in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake 15 minutes or until edges are lightly browned.
  • Combine all topping ingredients in bowl; mix well. Spread over hot, partially baked crust. Continue baking 20-25 minutes or until golden brown. Cool completely. Cut into bars.

Number Of Ingredients 16

1 cup all-purpose flour
1/2 cup finely chopped pecans
1/2 cup packed brown sugar
1/2 teaspoon salt
6 tablespoons cold butter
FILLING:
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
2 large eggs, beaten
1 cup sugar
1 tablespoon whole milk
1 tablespoon vanilla extract
1 cup fresh or frozen cranberries, chopped
1/2 cup sweetened shredded coconut
1/2 cup chopped pecans
1-1/2 teaspoons grated orange zest

Steps:

  • In a large bowl, combine the flour, pecans, brown sugar and salt. Cut in butter until crumbly. Press onto a greased 9-in. square baking dish. Bake at 350° for 15-20 minutes or until edges are lightly browned., Meanwhile, in a large bowl, combine flour and baking powder. Combine the eggs, sugar, milk and vanilla; add to the dry ingredients. Fold in the cranberries, coconut, pecans and orange zest. Pour over crust. Bake 25-30 minutes longer or until set. Cool on a wire rack. Cut into bars. Refrigerate leftovers.

6 tablespoons cold unsalted butter, cut into pieces
1/2 cup light brown sugar
1/2 teaspoon kosher salt
1 cup all-purpose flour
1/2 cup finely chopped pecans
1 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
2 large eggs, beaten
1 tablespoon whole or 2 percent milk
1 tablespoon vanilla extract
1 tablespoon freshly grated orange rind
1 cup fresh or if unavailable, frozen cranberries, coarsely chopped (if using frozen, chop berries while still frozen)
1/2 cup flaked coconut, sweetened
1/2 cup coarsely chopped pecans

Steps:

  • Crust: Preheat the oven to 350 degrees F. In a mixing bowl, combine the butter, sugar, and salt and mix well. Gradually add the flour, mixing to combine. Stir in the pecans. Press the mixture into the bottom of an ungreased 9-inch square baking pan. Bake 15 to 20 minutes, until browned.
  • Filling: In a mixer, combine the sugar, flour, and baking powder and mix well. Add the eggs, milk, vanilla, and zest and mix well. Fold in the cranberries, coconut, and pecans. When the crust is baked, remove from the oven and spread the filling over it. Return to the oven and bake an additional 30 minutes. Cool in the pan on a wire rack. Cut into bars for serving.

1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
1 ½ cups white chocolate chips
1 ½ cups dried cranberries
1 cup flaked coconut
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Combine cracker crumbs and melted butter. Press into the prepared pan.
  • Combine condensed milk, chocolate chips, cranberries, coconut, and pecans in a bowl; mix well. Gently spread over the crust.
  • Bake in the preheated oven until the edges are brown and the chips have almost fully melted, 25 to 28 minutes. Remove from the oven and cool to room temperature, about 30 minutes. Cut into 36 bars.

1/2 cup dried cranberries
1/4 cup confectioners' sugar
1/2 teaspoon salt
1 cup cold butter, cubed
FILLING:
5 large eggs, room temperature
1-3/4 cups sugar
3 tablespoons cornstarch
2 tablespoons butter, melted
1 to 2 tablespoons grated clementine or orange zest
1/3 cup clementine or orange juice
1 teaspoon vanilla extract
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil., Place flour, cranberries, confectioners' sugar and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. Press onto bottom of prepared pan. Bake 14-18 minutes or until edges are golden brown., In a large bowl, whisk eggs, sugar, cornstarch, melted butter, clementine zest, juice, vanilla and salt until blended. Pour over warm crust.
