FAVORITE BAKE-OFF BANANA WHEAT QUICK BREAD
This recipe is from the 1973 Pillsbury Bake-off contest and is my favorite version of banana bread. I usually make a powdered sugar glaze for the top, which makes it extra special.

Steps:
- Heat oven to 350.
- Grease and flour bottom only of 9X5 or 8X4 inch loaf pan.
- In large bowl, combine all ingredients except raisins; beat 3 minutes at medium speed.
- Fold in raisins.
- Pour batter into greased and floured pan.
- Bake at 350 for 55 to 65 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes; remove from pan.
- Cool on wire rack.
- Wrap tightly and store in refrigerator.

- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Freeze option: Freeze sliced loaf in resealable plastic freezer bag. To use, thaw at room temperature.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Line the bottom of a 9x5-inch nonstick loaf pan with parchment paper.
- Beat brown sugar and oil together in a large bowl until well-blended. Add eggs, applesauce, and vanilla extract; mix well to combine. Stir in mashed bananas. Add whole wheat flour and baking soda; stir until incorporated. Fold walnuts into the batter.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cover loaf with a clean towel and cool on a wire rack for 30 minutes before slicing.

QUICK BANANA BREAD
This is from my Joy of Cooking Book dated 1973. I get so many requests for it I just thought that I would send it in. I also use this batter to make muffins, when I do this I bake them for 18 to 23 minutes. So Enjoy!!

- Sift flour, baking powder and salt. Set aside.
- Blend until creamy, shortening, sugar and lemon rind. Next add eggs and banana pulp and beat.
- Add the dry flour mix in by 3 parts. Beat until smooth.
- Fold in nuts.
- Place in greased loaf pan or in paper mufin cups.
- Bake bread for 1 hour, In you used muffins bake for 18 to 23 minutes.

- Heat oven to 350°F. Grease bottoms only of 2 (9x5- or 8x4-inch) loaf pans with shortening or cooking spray.
- In large bowl, beat all ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 45 seconds, scraping bowl frequently. Pour batter into pans.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9×5 inch loaf pan with non-stick spray. Set aside.
- You can use an electric mixer or mix everything by hand. I like to use an electric mixer because I use it to mash the bananas. Using a handheld or stand mixer fitted with a paddle or whisk attachment on medium-high speed, beat the mashed bananas, applesauce, and eggs together until combined. (Or whisk by hand.) Add the honey, brown sugar, milk, and vanilla extract. Beat on medium-high speed (or whisk) until combined. Set aside.
- Whisk the flour, baking soda, cinnamon, and salt together. Pour into the wet ingredients and beat on medium speed (or by hand) until combined. Fold in the walnuts.
- Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.
