DADDY'S GAME CHANGING TURKEY WITH QUICK PAN GRAVY



Daddy's Game Changing Turkey with Quick Pan Gravy image

Number Of Ingredients 27

1 (14 to 16 pound) turkey, gizzards and neck removed
6 quarts water
1 bunch sage
1 bunch thyme
1 lemon, halved
1/4 cup kosher salt
1/2 teaspoon whole black peppercorns
1 tablespoon dried marjoram
1 tablespoon dry rubbed sage
1/2 teaspoon cayenne pepper
1/4 teaspoon ground white pepper
1/4 teaspoon ground black pepper
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil
1/2 bunch thyme
1/2 bunch sage
1 rosemary stalk
6 cloves garlic
1 red onion, quartered
1 cup turkey broth, plus extra if needed
Quick Pan Gravy, recipe follows
Pan drippings
1 cup white wine
4 tablespoons all-purpose flour
4 tablespoons butter, softened
3 cups turkey broth
Kosher salt and freshly ground black pepper

Steps:

  • Brine: In a large pot over medium-high heat, add the water, sage, thyme, lemon, salt, and peppercorns. Bring to a boil, then lower the heat and simmer until the salt is dissolved, and the water is fragrant. Turn off the heat and let the brine cool. Put the turkey in a roasting bag, a large plastic bag, or a bowl large enough to fit it with space for the brine. Pour in the brining liquid and seal or cover. If there is not enough room for all of the liquid in the brine, be sure to at least include the herbs, lemon and peppercorns. Refrigerate the turkey for up to 3 days. When ready to cook, remove the turkey from the refrigerator and discard all of brining liquid and solids. Pat the turkey dry with paper towels.
  • In a small bowl, mix the marjoram, sage, all the peppers, and salt to make the rub. Rub on all sides of the turkey, and drizzle with oil. Stuff the thyme, sage, and rosemary into the cavity, along with 4 of the garlic cloves, and 1 of the red onion quarters. Allow it to sit on the countertop for about 2 hours to come to room temperature.
  • Preheat the oven to 400 degrees F.
  • Put the remaining 2 garlic cloves, red onion quarters, and broth in the bottom of a roasting pan. Put the turkey on a rack in the roasting pan. Tuck the wing tips under and tie the legs together with butcher's twine.
  • Put the turkey in the oven and lower the heat to 350 degrees F. Roast, basting every 30 minutes, until an instant-read thermometer inserted between the thigh and the body registers 160 degrees F, about 2 to 3 hours. Add more broth to the bottom of the pan so the drippings do not burn. Allow the turkey to rest under loosely tented aluminum foil for about 10 minutes. Remove the turkey from the pan to a cutting board. Arrange the carved turkey on a serving platter and serve with Quick Pan Gravy.
  • Put the roasting pan on the stove top. Remove any large solids, like onions or stalks of rosemary, leaving only the pan drippings, softened garlic cloves, juices and fat. Turn the burner to medium-high heat and add the wine. Using a wooden spoon scrape up all bits from the bottom of the roasting pan. In a small bowl, mix together the flour and butter. Add it to the pan, breaking it up with a wooden spoon, while stirring. Cook for about 1 minute, and then whisk in the turkey broth and stir until thickened, about 5 minutes. Season with salt and pepper, to taste, and pour it into a serving bowl.

FAUX "FRIES" WITH RASPBERRY "KETCHUP"

1 loaf pound cake
1 cardboard french fry container (ask politely and you shall receive)
Raspberry Ketchup, recipe follows
1 empty ketchup squeeze bottle
1 (12-ounce) bag frozen raspberries, thawed, or 2 cups fresh raspberries
2 tablespoons confectioners' (icing) sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Trim off a thin layer of the cake's brown exterior crust. Cut pound cake lengthwise into 1/4-inch slices. Turn slices on their side and cut into 1/4-inch strips. Trim to 4 to 5 inches in length (if this sounds confusing, just remember, you are creating French fry-shaped strips).
  • Arrange strips on cookie sheet and bake for approximately 10 minutes, or until browned on top and bottom. Turn strips and bake for approximately 4 more minutes, or until remaining 2 sides are browned. Let cool, then arrange in fry container.
  • Place raspberries in a blender or food processor, and puree (add a few tablespoons of water, or lemon juice, if necessary, to facilitate blending). Add sugar, 1 teaspoon at a time, to taste, until tartness is gone.
  • Place raspberry puree in a fine mesh strainer over a bowl. Use a rubber spatula to force the puree through the strainer. Discard the seeds and transfer the puree to the squeeze bottle. Serve alongside "fries".

CHICKEN AND CHORIZO HASH WITH OJ GRAVY



Chicken and Chorizo Hash with OJ Gravy image

8 ounces fresh Mexican chorizo sausage, casings removed
1 small green plantain, peeled, and diced
2 medium carrots, halved lengthwise and sliced
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 to 6 sprigs fresh thyme, leaves stripped and chopped
2 garlic cloves, thinly sliced
1 scallion, chopped (white and green parts)
1 tablespoon chopped pickled jalapenos
1/2 rotisserie chicken, skin removed, meat shredded or chopped
Chopped fresh flat leaf parsley, for garnish
For the gravy:
1 tablespoon all-purpose flour
1 tablespoon Worcestershire sauce
1 1/2 cups orange juice
2 tablespoons sour cream

Steps:

  • To make the hash, put the chorizo in a large skillet over medium heat. Vigorously break up the sausage into bits with a potato masher or wooden spoon as it cooks. Once it resembles ground meat, add the plantain and carrots. Season with a tiny pinch of salt and some black pepper. Toss to coat everything in the fat and cook, without stirring, for a few minutes to develop color on the plantains and carrots, then toss and wait again. Cook this way until the plantains and carrots are caramelized on most sides and tender, and the chorizo is browned, about 15 minutes.
  • Add the thyme, garlic, scallions, and jalapenos. Toss to coat and cook, stirring, until the garlic is tender and fragrant, about 5 minutes. Add the chicken and stir to coat.
  • To make the gravy, sprinkle the flour over the top of the hash and stir with a wooden spoon until it disappears, then cook for a few more minutes to remove the flour taste. Add the Worcestershire sauce and orange juice. Continue to stir, allowing the juices to thicken. Remove from the heat and stir in the sour cream. Garnish with the parsley and serve.

SUNNY'S CHICKEN FRIED STEAK WITH DICED POTATO GRAVY



Sunny's Chicken Fried Steak with Diced Potato Gravy image

2 eggs
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 pounds cube steak, cut into individual steaks
1 cup all-purpose flour
1/2 cup cornstarch
Vegetable oil, for frying
Diced Potato Gravy, recipe follows
3 tablespoons unsalted butter, divided
1/2 red onion, chopped
1 clove garlic, minced
2 tablespoons all-purpose flour
1 bay leaf
2 1/2 cups beef broth
1 large russet potato, diced into 1/4-inch cubes
Kosher salt and freshly ground black pepper
1/4 cup roughly chopped parsley, for garnish

Steps:

  • In a medium bowl, whisk the eggs, cumin, cayenne pepper, and salt and pepper, to taste. Add the steaks, stir to coat, and let sit 10 minutes. In a paper bag, combine the flour, cornstarch, a few pinches of salt and freshly ground black pepper. Remove the steaks from egg mixture and put into the paper bag. Roll the top of the bag to close, and shake until the steaks are evenly coated. This may be done in batches. Let the coated steak rest on a sheet tray lined with a rack for 10 minutes.
  • In a deep, heavy-bottomed skillet add enough oil to reach 1/2-inch up the sides. Heat the oil over medium heat to 370 degrees F. (When a wooden spoon inserted into the oil creates tiny bubbles, the oil is ready.) Fry the steaks, in batches if necessary, flipping only once when color is golden and a poke releases no red juices, about 2 to 3 minutes on each side. Remove to a serving platter and serve with Diced Potato Gravy.
  • In a large straight-sided skillet heat 2 tablespoons butter over medium heat. Add the onions and garlic and saute until tender, about 3 minutes. Whisk in the flour, stirring to combine with the butter. Add the bay leaf and broth and bring to a simmer. Cook until slightly thickened, then add the potatoes. Cook until the potatoes are tender and the gravy has thickened, about 8 to 10 minutes. Season with salt and pepper, to taste. Stir in remaining 1 tablespoon of butter and the parsley. Serve poured over Sunny's Chicken Fried Steak.
