FRUIT EXPLOSION MUFFINS (TIM HORTON'S COPYCAT)

These Fruit Explosion Muffins are loaded with strawberries and blueberries (or any berries you want!) and have a strawberry jam surprise inside! They are made with whole wheat flour and sour cream makes them extra moist.

1 cup light sour cream or 0% Greek yogurt
1/2 cup canola oil
1/2 cup unsweetened applesauce
2 eggs
1 teaspoon vanilla
1/2 cup granulated sugar (100 grams)
1/2 cup brown sugar (packed - 80 grams)
1 1/2 cups all purpose flour (187 grams)
1 cup whole wheat flour (135 grams)
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups mixed berries of choice (fresh or frozen*)
3/4 cup jam or jelly (nothing too runny!)

Steps:

  • Preheat oven to 350 degrees F and line 3 muffin pans with paper liners or use non-stick pans and grease lightly. You can also use silicone pans, though they will not brown as usual.
  • In a large bowl, combine sour cream, oil, applesauce, eggs and vanilla with a whisk. Stir in sugars until combined completely.
  • Add flours, baking powder, baking soda, and salt and stir just until combined. Fold in berries.
  • Spoon 1 tablespoon of batter into the bottom of each liner, spreading it cover the bottom completely. Top with 2 teaspoons of jam and cover with remaining batter (about one heaping tablespoon per muffin cup), covering the jam as best as you can.
  • Bake for 23-25 minutes (I bake mine exactly 25 minutes), until golden brown, toothpick comes out clean and batter around berries appears set. Cool to room temperature and serve.
  • May be stored at room temperature for 2-3 days or frozen for 3-4 months.

This is the best muffin ever. Fresh picked pears or apples are especially good in these muffins. But you can enjoy them any time by substituting whatever fruit is in season. Any type of chopped nuts may be used in place of the walnuts as well. Recipe from the Blooming Platter Cookbook and Betsy DiJulio.

STREUSEL TOPPING:
4 tablespoon(s) all purpose flour
4 tablespoon(s) natural sugar
4 tablespoon(s) old fashioned oatmeal
4 tablespoon(s) chopped walnuts
2 tablespoon(s) canola oil
1/4 teaspoon(s) cinnamon
MUFFINS:
1 cup(s) soy milk
2 teaspoon(s) apple cider vinegar
1 cup(s) all purpose flour
1 cup(s) whole wheat flour
1/2 cup(s) natural sugar or more for a sweeter version
1 tablespoon(s) baking powder
1 teaspoon(s) baking soda
1/2 teaspoon(s) sea salt
1 pinch(es) ground cinnamon
1 cup(s) canola oil
1 or 2 large pears, chopped (1 cup)

Steps:

  • For the topping : Combine all the ingredients in a small bowl. Mix until moist and crumbly and set aside.
  • Muffins: Preheat oven to 450^. Line a muffing tin with 12 paper cupcakes liners. Set aside. In a small bowl, whisk together soy milk and vinegar and set aside. It will curdle slightly- whisk it a couple of times just before using.
  • In a large bowl, whisk together both flours, sugar, baking powder, soda, salt and spice. Make a well in the center of the dry ingredients and pour in the canola oil and they soy milk mixture. Using a fork, stir together the ingredients until combined. Gently fold in the fruit. Divide the batter evenly among the muffin cups. Divide streusel evenly among muffins, sprinkling it on top, and pressing gently.
  • Bake the muffins for 20 minutes or until a wooden pick inserted into the center of one comes out clean. Remove the pan from the oven to a wire rack until the muffins are cool enough to handle. Carefully remove the muffins in their liners from the tin. Serve slightly warm or at room temperature. Store any leftovers in an airtight container in the refrigerator.

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

2 cups pastry flour
1/2 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 cup milk
1/4 cup vegetable oil or 1/4 cup melted butter
2 large eggs
1 teaspoon vanilla
1 1/2 cups finely chopped fresh fruit or 1 1/2 cups finely chopped dried fruit

Steps:

  • Preheat your oven to 425°F. Lightly grease the cups of a standard 12-cup muffin pan. Or line the cups with papers, and grease the papers.
  • Blend together the dry ingredients, add chopped fruit and stir.
  • Beat the liquid ingredients together - milk, oil or butter, eggs, and vanilla - until light.
  • Pour the wet ingredients into the dry ingredients. Take a fork or wire whisk and blend the two briefly - about 20 seconds should do it.
  • Fill the cups of the muffin pan two-thirds to three-quarters full. Sprinkle with sparkling white sugar, if desired.
  • Bake the muffins for 15 to 20 minutes, or until a toothpick inserted into the middle of one of the center muffins comes out clean. Remove them from the oven, and as soon as you can handle them turn them out of the pan onto a rack to cool.

These are very moist easy muffins to make. Fruit cocktail is mixed into a simple batter. Be sure to not overmix or muffins will be too dense.

2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup melted butter
1 egg
3/4 cup milk
1 cup fruit cocktail, well drained

Steps:

  • Mix dry ingredients together in a large bowl.
  • Mix together melted butter, egg and milk and add to dry ingredients.
  • Stir just until mixed and then fold in fruit cocktail.
  • Fill paper lined muffin cups 2/3 full and bake at 400° for about 25 minutes.
