Easy Fresh Strawberry Pie image

For my mother's birthday, I made this strawberry pie recipe instead of a cake. Since it was mid-May in Oklahoma, the berries were absolutely perfect. It was a memorable occasion for the whole family. -Josh Carter, Birmingham, Alabama

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

The only change I made to this recipe is the amount of strawberries I used. It calls for a pint (2 cups), but once I placed them into the baked crust, it just looked really skimpy. So, I decided to just add more until I liked the height of it, I pretty much doubled it.

1 - 9" pie crust, baked
1 cup(s) water
1 cup(s) sugar
3 tablespoon(s) corn starch
1/4 cup(s) strawberry gelatin powder
1 pint(s) fresh strawberries, hulled and sliced (i ended up doubling this)

Steps:

  • Prebake pie crust according to directions on package or prepare your own homemade crust. (If you'd like to use my Mom's Flakey Pastry, scroll down.) Cool to room temperature. Prick the inside of the pie crust all over with a fork and bake at 400F degrees for about 10-15 minutes, then allow to cool completely.
  • Wash and hull strawberries. Then cut them in half (or maybe smaller depending on how big your berries are).
  • In a sauce pan, over medium-high heat, add water, sugar, cornstarch, & strawberry gelatin. Whisk together until thoroughly combined. Whisk mixture constantly while heating to prevent clumping or scorching until mixture begins to come to a gentle boil. Remove pan from the heat and allow the glaze to cool. (I put the pan into a bowl with a couple of inches of ice water. This cools the glaze quicker and allows it to set up a bit.)
  • As the glaze cools it will become translucent in color and you should notice it will thicken a little more as well. Whisk it occasionally as it cools. It will be thickened but still pourable.
  • Add your sliced berries to the baked and cooled pie crust. Pour strawberry glaze over berries. Making sure to get it in between the nooks & crannies of the berries as best you can.
  • Chill pie in the refrigerator at least 2-3 hours before serving. When ready to serve, dollop each slice with some whipped cream.

2 cups all purpose flour, plus additional bench flour
Pinch salt
1 cup unsalted butter, chunked
1/2 cup ice water, plus more as needed
1 1/4 pounds rhubarb, trimmed, cut in 1/2-inch pieces
2 pints strawberries, hulled and sliced
1 cup granulated sugar
Pinch ground cinnamon
1 tablespoon flour
Pinch salt
Juice of 1 lemon
2 teaspoons vanilla extract
2 tablespoons unsalted butter
Milk, for brushing
Granulated sugar, for sprinkling

Steps:

  • Combine the flour, salt and butter in a large bowl. With a bench scraper or pastry cutter, cut the butter into the flour until it forms pea-size chunks. Slowly add the ice water, folding it into the flour until it comes together in a dough; be mindful not to overwork the dough. If the dough is too dry, add another tablespoon of water at a time. Turn the dough out onto a lightly floured work surface. Divide in half and form into disks. Wrap the two disks in plastic wrap and refrigerate for at least 30 minutes to let the dough rest.
  • Preheat the oven to 425 degrees F.
  • Roll out one of the disks into a 12-inch round on a lightly floured work surface. Roll it up onto the rolling pin and carefully transfer to a 9-inch pie plate. Gently press the bottom crust into the plate with your fingers. Leave the edges untrimmed.
  • To the bottom crust, add the rhubarb, strawberries, sugar, cinnamon, flour, salt, lemon juice and vanilla. Dot with pats of the butter.
  • On the same lightly floured work surface, roll the second disk of dough into a 12-inch round. Lay the top crust over the pie and crimp the edges.
  • Brush the top crust lightly with milk and sprinkle with granulated sugar. Cut vent holes in the center. Bake for 20 minutes; lower the temperature to 375 degrees F and bake for another 45 to 60 minutes, or until the filling is bubbling.
  • Cool completely before serving to allow time for the filling to set up.
