GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS
My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

- 1. Preheat oven temperature to 275 degrees. 2. Line a baking dish with foil for easy clean up! 3. Start prepare or choose dry rub. 4. Season ribs generously with dry rub! 5. After seasoning, place ribs in a single layer on your foil lined baking dish. 6. cover ribs tightly with foil and bake at 275°F. Set timer for 2 hours cooking time. (Go read a book, watch your favorite show, workout, or relax for a couple hours while your oven is doing the work! 7- After baking for 2 hours, uncover the ribs (be careful because the steam will be very hot) DRAIN OFF liquid from baking dish. Beware, the ribs look kinda gross and at this point in the process... Don't worry, next time they come out of the oven, they'll be tender and beautiful! 8- Using a brush, apply a generous coat of your favorite BBQ sauce over all of the ribs. 9- Bake uncovered for another hour. 10- Turn oven to the broil setting, broil for 2 minutes to let bbq sauce bubble and lightly brown. KEEP AN EYE ON THEM SO THEY DON'T BURN. 11- Brush with a little more sauce. 12- Let ribs rest for 5-10 minutes, and enjoy!

THE BEST BBQ RIBS

- Rub the spareribs with the dry rub. Wrap each slab tightly in a double thickness of aluminum foil. Set aside while building the fire.
- Build a charcoal fire in an outdoor grill and let burn until the coals are covered with white ash. In a gas grill, preheat on High, then adjust to Low.
- Place the foil-wrapped ribs on the grill and cover. Cook, turning occasionally, until the ribs are tender, about 1 hour. Unwrap the ribs and set aside.
- Add more charcoal to the fire and let burn until medium-hot. You should be able to hold your hand at grill level for about 3 seconds. Sprinkle the drained chips over the coals. In a gas grill: keep the heat on Low. Place the drained chips in the metal chip box. Or, wrap the chips in aluminum foil, pierce a few holes in the foil, and place on the heat source.
- Lightly oil the cooking grate. Place the ribs on the grill, brush with sauce, and cover. Grill for 5 minutes. Turn, brush with more sauce. Cover and continue grilling until the ribs are glazed, about 5 more minutes.
- Cut between the bones into individual ribs. Serve hot, with any remaining sauce passed on the side.
- Mix all the ingredients together in a bowl or a jar. Use immediately or cover and store in a cool, dry place for up to three months.
- Yield: 1/3 cup

- Preheat oven to 250 degrees F (120 degrees C).
- In a shallow baking pan or roaster, place ribs in a single layer; salt if desired. Spread the garlic on the ribs, then place the lemon slices on top. - Remove the membrane from the back of the ribs. At one end of the ribs, slide a sharp knife under the membrane and over a bone. Grab the edge of the membrane with a dry paper towel and pull it off with your hands. The membrane may come off in one piece, or you may have to remove it in smaller pieces.
- Line a half sheet pan with aluminum foil. Season the ribs with brown sugar, salt, and black pepper.
- Preheat the oven to 300 degrees Cook the ribs for 1 1/2 hours to 2 hours in the oven, until the ribs are tender. Finish them on the grill over low heat for about 30 minutes. Baste with barbecue sauce and balsamic dressing mixture and turn frequently as they cook on the grill.
