Fanouropita (Vegan Greek Raisin, Walnut, and Olive Oil Cake) image

This cake is named after the Saint Fanourios. It's said that if you've lost something, you make this cake so that St Fanourios can help you find it. While the story behind this cake is nice, the cake itself is even nicer! I love the richness of the olive oil, which helps the cake stay moist for days.

1 ⅜ cups olive oil
1 ½ cups freshly squeezed orange juice
2 tablespoons brandy
1 ½ cups white sugar
5 ½ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 ¼ cups chopped walnuts
1 cup Thompson seedless raisins
1 teaspoon ground cinnamon
½ teaspoon ground cloves
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 12-inch round springform pan.
  • Combine olive oil, orange juice, and brandy in a large bowl. Stir in sugar. Combine flour, baking soda, and baking powder in another bowl and sift into the oil mixture. Fold in walnuts, raisins, cinnamon, and cloves. Mix well. Tip batter into the prepared springform pan and level the top. Sprinkle with sesame seeds.
  • Bake in the preheated oven until a skewer inserted into the center comes out clean, 45 to 60 minutes.

Agios Fanourios Cake - Fanouropita (Spiced Raisin Cake No Eggs) image

Aghios Fanourios or Saint Fanourios is a byzantine saint who is believed to have lived around the 4th century. It is a Greek Orthodox custom to bake a cake in his honour on August 27th, cut it in small pieces and to share iit with the rest of the church congregation who, in turn, will eat it and say "May God forgive Agios Fanourios' Mother". It is a delicious cake with no eggs or butter. This recipe has been in my family for decades. Hope you like it !

1 cup oil (avoid olive oil which has quite a strong taste)
1 1/2 cups sugar
1 cup seedless golden raisin
1 1/2 cups freshly squeezed orange juice
1 cup roughly chopped walnuts
1/2 teaspoon ground cloves
1 -1 1/2 teaspoon cinnamon
4 cups flour
4 teaspoons baking powder
1/4 cup cognac (or whisky)
peel of 2 orange (grinded)

Steps:

  • Preheat the oven to 170 degrees.
  • Hidrate the raisins in water or cognac (heat water/cognac and soak the raisins til they are tender).
  • Butter and flour a 10-11 inches round cake pan or use silicon lining.
  • Mix the oil and the sugar in a bowl. With a mixer/electric blender beat it for 3-4 minutes.
  • Add the orange juice and beat for 1 more minute.
  • Add to the liquid mix the raisins, walnuts, ground clove, cinnamon, orange peel, cognac.
  • Add to the preparation the flour previously mixed with the baking powder and mix making sure there are no lumps.
  • Pour mixture in baking pan and place in oven for 55 / 60 minutes in 170 degrees.
  • Check if the cake is ready with a toothpick in the middle of the cake. Should come out clean.

Aghios Fanourios (Saint Fanourios) is the saint of revelation - that is why he is often depicted carrying a candle. Also, he had a sinful mom. In Greece, we bake this delicious raisin cake for his saint's day and offer it to guests. It is traditional to say 'God forgive Saint Fanourios' mom' before eating it (what DID this woman do?). I'm sure my kids will create a similar cake for me (it will contain chocolate, I'm sure) so that people can ask for me to be forgiven of my sins. ;-) BTW, there are no eggs in this cake, and no butter, making it suitable for the Lenten fast.

4 cups flour
4 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup olive oil
1 cup sugar, plus
2 tablespoons sugar
2 oranges, juice and zest of, plus enough extra
2 cups fresh orange juice, in total
1/2 cup brandy (but the brandy tastes better!) or 1/2 cup water (but the brandy tastes better!)
1 cup golden raisin
1 cup walnuts, roughly chopped, toasted

Steps:

  • Preheat oven to 350°F.
  • Butter and flour a 12-inch, round cake pan or a 9x13x2-inch baking dish.
  • Mix the flour with the spices.
  • In a bowl mix the oil, sugar, orange juice, brandy and the orange zest.
  • Mix well.
  • Add the flour, the raisins and the walnuts.
  • Mix well.
  • Pour batter into prepared pan.
  • Bake the cake (it is called a'pie'- pita' in Greek) for 45 min to an hour (tester inserted comes out clean).
