I found this luscious pasta dish in the paper several years ago. It was from Chef Noell Teasley of the Balsam Moutain Inn in Balsam, NC. It was very, very popular with the readers. I serve this along side of grilled chicken with a big crusty loaf of Italian bread. My family loves it!

8 ounces fettuccine pasta (why does this thing change the spelling of ingredients? I did not put an e on the end of fettuccini!)
1 (14 ounce) can water-packed artichoke hearts (I substitute a medium onion, diced because we don't like artichokes)
1 tablespoon butter
1 tablespoon flour
1 1/2 cups mushrooms, sliced
1/3 cup knorr leek soup, dip and recipe mix (1/2 package)
1/2 teaspoon dried basil
1/4 teaspoon dried dill
1 1/2 cups milk
1/2 cup cheddar cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Boil water and cook the pasta according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
  • Meanwhile, coarsely chop the artichoke hearts and set aside. Melt butter in 3qt saucepan over medium heat. Sprinkle in the flour and wisk until smooth, cook about 2 minutes, wisking the whole time. Add artichokes (or onions) and mushrooms and cook, stirring until tender, about 2 minutes. Add leek soup mix, basil and dill, stir well.
  • Add milk and cheeses and stir until melted. Reduce heat to it's lowest setting and simmer, stirring frequently while fettuccini finishes cooking.
  • Drain fettuccini, place some on each plate and top with sauce. Pass the grated parmesan at the table.

I clipped this out of Can. Liv. mag. many years ago, and have used it ever since. The spicier the radishes, the better the dressing. Sometimes when I buy radishes they are very bland. We really like it.

10 red radishes
1 garlic clove
1 1/4 cups mayonnaise
1/4 cup sour cream
2 tablespoons white vinegar
1 tablespoon water

Steps:

  • Wash radishes, dry well and trim.
  • In processor, process radishes until finely chopped.
  • With motor running, drop garlic thru feed tube. Scrape down sides of work bowl with rubber spatula.
  • Add mayonnaise, sour cream, vinegar and water.
  • Process until well combined and smooth. Store covered, in fridge for up to 3 days.
  • Drizzle over romaine and sliced tomatoes, and top with whole wheat croutons. Also good on: lettuce, spinach leaves and peppery watercress.

This simple but lovely granola comes from the Green Mountain Inn in Stowe, Vermont. I love the addition of maple syrup! A little history: Sylvester Graham develops Graham flour and Graham Crackers; later, Dr. James C. Jackson uses sheets of baked Graham flour, broken up, rebaked and broken up again to create "Granula". Then Dr. John Harvey Kellogg, a Seventh Day Adventist and director of their Battle Creek Sanitarium, develops a mix of baked and rebaked whole grains, and also calls it "Granula", which was later made famous by Charles W. Post, remaking it and calling it Grape Nuts.

Number Of Ingredients 9

1/3 cup butter
1/3 cup maple syrup
4 1/2 cups oats
1 1/2 cups coconut
3/4 cup walnuts
3/4 cup almonds or 3/4 cup pecans
1 1/2 tablespoons cinnamon
1/2-2/3 cup dried apricots (optional) or 1/2-2/3 cup any dried fruit (optional)
1 cup raisins (optional)

Steps:

  • Melt the butter in a 9"x13" pan. Add the 1/3 cup maple syrup.
  • Now mix together in a bowl the oats, coconut, walnuts, almonds or pecans, and cinnamon, then add to syrup, mixing all together, then pressing into one layer in pan.
  • Bake at 325*F. for 15 to 25 mins.(watch carefully during the last 10 minutes so they don't get too brown), remove from oven, cool, break up into chunks, and then add: ½ cup to 2/3 cup dried cranberries, apricots, or any dried fruit and 1 cup raisins. Enjoy!
