Tired of boring old meat loaf? Well give this one a try. My husband won't eat any other meat loaf but mine.

1 ½ pounds lean ground beef
½ cup crushed buttery round crackers
¾ cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
¼ cup ketchup
2 tablespoons steak sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
  • Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

1/3 cup egg substitute
1 can (6 ounces) tomato paste, divided
2 tablespoons Dijon mustard
2 teaspoons prepared horseradish, divided
1/2 cup quick-cooking oats
1 envelope onion soup mix
1-1/2 teaspoons garlic powder
1 teaspoon steak seasoning
1 pound lean ground beef
1/2 pound lean ground turkey
1 teaspoon water
1/2 teaspoon sugar

Steps:

  • In a large bowl, combine the egg substitute, 1/2 cup tomato paste, mustard, 1 teaspoon horseradish, oats, soup mix, garlic powder and steak seasoning. Crumble beef and turkey over mixture and mix well. , Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Combine the water, sugar, remaining tomato paste and remaining horseradish; spread over meat loaf., Bake, uncovered, at 350° for 45-55 minutes or until a thermometer reads 165°. Drain if necessary.

FAMILY STYLE MEATLOAF

This family favorite came from my mother in-law. Over the years, I have made a couple of minor changes, to make it even better! This is pure comfort food at it's best! Love it served with mashed potatoes and green beans. I hope you give our meatloaf a try :)

2 lb ground round or chuck (i like round)
1 medium onion, chopped fine
3 eggs, slightly beaten
saltine cracker crumbs, 38 crackers for the mixture, and 12 crackers for the topping
1/2 c milk
1/4 c ketchup
salt and pepper to taste

Steps:

  • 1. Mix above ingredients together. Everything but the cracker crumbs for the topping.
  • 2. Place the mixture in a loaf pan, and pat into place. Top with reserved cracker crumbs, dot with a little butter, and splash with a little milk.
  • 3. Bake at 350 degrees, for 1 1/2 hours, or internal temperature reaches 155 degrees.
  • 4. Let rest for 10 minutes before slicing. Enjoy!

This is the result of changes I had to make to a recipe I got from the Zaar. It was very good and I would like to be able to duplicate it again.

2 lbs ground beef
1 1/2 cups crushed saltines (1 row plus 8 crackers)
1 teaspoon salt
1 teaspoon Emeril's Original Essence, original
1 1/2 teaspoons beef bouillon powder
1/3 teaspoon black pepper
2/3 cup tomato sauce (or use tomato paste cut in half with water)
1 large sweet onion (vidalia, Walla Walla, or Texas sweet)
1/2-3/4 teaspoon canned garlic (from jar)
3 large eggs
1/2 cup ketchup
2 tablespoons packed brown sugar
1/2 cup water
1 1/3 tablespoons prepared mustard
1 1/3 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 325.
  • In a very large bowl put hamburger, crackers crumbled,salt, essence, boullion powder, and black pepper - set aside.
  • Cut onion into larger pieces and put it in the food processor with the garlic -- pulse until pieces are small. Dump onion mixture into the bowl with the meat.
  • Beat the three eggs (in the food processor if you don't want to dirty a bowl) and add them to the meat bowl.
  • Add the tomato sauce to the meat bowl and use your hands to mix all very well (I like to wear rubber gloves to save on clean-up time).
  • Divide meat mixture in half. Form into two loaves on the botton of your broiler pan or a roasting pan. Leave room between loaves for even baking.
  • In smaller bowl mix together with a fork; ketchup, brown sugar, water, mustard and cider vinegar. This is your topping -- Brush tops and sides of loaves with this before baking and again while baking.
  • Bake for 1 hour and 15 minutes to 1 hour and 25 minutes.
  • When I remove the pan from the oven I like to pour off the excess oil in the bottom of the pan. Let cool for about 5 minutes before serving. Slice thick and pieces should hold together well.

Two 8-ounce cans tomato sauce
1/2 cup water
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons Worcestershire sauce

Steps:

  • Mix together beef, crumbs, egg, onion, salt, pepper and 1/2 of tomato sauce. Form into loaf and put into shallow pan. Combine rest of the tomato sauce and all the other ingredients. Pour over loaf. Bake in a preheated 350 degree oven for 1 hour and 15 minutes. Baste occasionally.

3/4 cup finely chopped onions
1/2 cup finely chopped celery
1 teaspoon salt, divided
1/2 teaspoon freshly ground black pepper
2 tablespoons water
1 teaspoon olive oil
3/4 pound lean ground turkey
3/4 pound lean ground beef
3/4 cup bottled chili sauce, divided
2 tablespoons chopped fresh basil
2 large egg whites

Steps:

  • 1. Heat oven to 350 degrees F. Combine bread crumbs and milk in small bowl; set aside. 2. Combine mushrooms, onions, celery, 1/2 teaspoon of the salt, the pepper, water and oil in saucepan; cook, stirring frequently, over high heat until liquid is evaporated and vegetables are browned, 8 minutes. 3. Combine turkey, beef, 1/2 cup of the chili sauce, the basil, egg whites and remaining 1/2 teaspoon salt in large bowl. Stir in vegetables and crumb mixture just until blended. Pat into 9x5-inch loaf pan. Top with remaining 1/4 cup chili sauce. Bake 1 hour 20 minutes or until meat thermometer inserted in center reaches 165 degrees F. Makes 6 servings.
