HOMEMADE DEEP DISH SAUSAGE PIZZA
This came out of Quick Cooking Magazine. It is delicious. It is new to our family but will be a much repeated recipe. Kids love it too. :)

Steps:
- On a lightly floured surface, roll and stretch dough into a 9 inch circle.
- Cover with plastic wrap; let rest for 10 minutes.
- Roll and stretch the dough into a 12 in circle.
- Sprinkle corn meal into a greased 9 inch springform pan.
- Place dough in pan and press 1 inch up the sides of pan.
- Spread pizza sauce over crust.
- Top with sausage, 1 cup cheese, oregano and green pepper.
- Sprinkle with remaining cheese.
- Bake at 425 degrees for 20-25 minutes or until crust is golden brown.
- Remove to a wire rack; let stand for 5 minutes before removing sides of pan.

LEMON SOUFFLE OMELETTE
I have a fascination with sweet omelettes at the moment and this one I found on Delia online. This is gorgeous, I really enjoyed it.

Steps:
- First of all, add the lemon rind and juice to the egg yolks, together with the sugar, and whisk until the mixture is slightly thick and creamy.
- Now start to melt the butter in the frying pan and turn the heat on the grill to its highest setting.
- Whisk the egg whites until stiff, then using a metal spoon lightly and quickly fold them into the yolks.
- Now pour the lot on to the foaming butter, then fold and stir a bit to prevent anything sticking to the bottom. After about 10 seconds, place the pan under the grill, so that the top can brown nicely.
- Serve immediately straight from the pan.
- If you like to make it slightly more spectacular you can warm a small ladle and pour brandy into it. Set light to the brandy, then carry your omelette to the table, pouring the lighted brandy over just before you get there.

Steps:
- To make 1 omelette at a time: crack two eggs into a jug.Season with a little light sprinkle of salt , pepper then whisk with a fork until combined.
- Heat 1 teaspoon of oil in a small non-stick frying pan (skillet) over a medium heat. Add the eggs mixture and cook, tilting the pan so the egg covers the base. As the omelette sets, lift the edges so that the uncooked eggs runs underneath. Cook 3-4 min or until just set.
- Slide onto a plate and scatter over some of the basil leaves,, onion slices and feta. Fold over to enclose he filling.
- Repeat with the remaining ingredients to make 3 more omelettes , reheating the pan between each omeltte.

COUNTRY STYLE OMELETTE
Adaptation of a recipe I saw on a cooking show a few years ago. I've listed exactly what I used on this occasion but of course a lot of variations are possible and different styles of cheese may be used.

Steps:
- Whisk eggs in a medium bowl.
- Add grated potato, parsley, ham, pepper, sage and onion to bowl and mix.
- Melt butter in pan over medium heat and add mixture, set temperature so it is just bubbling.
- Evenly spread mushrooms, tomato, capsicum and cheeses over top.
- Cook without turning until top is starting to firm, around 30 minutes.
- If required flip over and cook other side around one minute to set egg.
- Serve cut in half without folding.
MAGIC OMELETTE
This isn't so much a recipe as a tip. Most of us make omelettes the same way: wait until the eggs are nearly cooked, then add cheese, vegetables, meat, etc., counting on the heat of the eggs to heat them, and in doing so unnecessarily overcooking the eggs. If, instead, you cover your egg pan with a pot lid, you can add the omelette filling from the outset and it cooks WITH the eggs, so your omelette's already done at the point where you'd normally add the filling. And get this - you never have to touch a utensil! Try it and I bet you'll never cook an omelette without a lid again.

- Heat a non-stick skillet until butter sizzles.
- Scramble eggs; add to skillet (no need to fuss over lifting the solidified edges to let the liquid eggs underneath).
- Sprinkle eggs evenly with cheese, ham, chives, salt and pepper (or herbs de Provence, baby spinach, smoked salmon, pre-sauteed mushrooms, onions, peppers, anything you like).
- Cover and cook over low flame until eggs solidify, about 5 minutes.
- Slide from skillet to plate, folding omelette in half with edge of skillet.
