This is a pasta salad inspired by the flavors of my go-to falafel recipe. Falafel is a traditional Middle Eastern chickpea or fava bean fritter that I've loved since childhood. When I make mine, I load up on fresh mint, parsley and cilantro, as well as coriander and a little bit of cinnamon. So with this recipe, I took all of my favorite falafel ingredients and tossed them with pasta. And I had to use farfalle because...c'mon, Falafel-y Farfalle is so much fun to say!

Yield 4 to 6 servings

Number Of Ingredients 16

5 tablespoons extra-virgin olive oil
One 14-ounce can chickpeas, drained, rinsed and dried
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Kosher salt and black pepper
Zest and juice of 1/2 a lemon
2 garlic cloves, minced or grated
8 ounces farfalle pasta (bow-tie), cooked according to package directions
2 Persian cucumbers, diced
1 pint grape tomatoes, quartered
1/2 red onion, diced
1/2 bunch fresh cilantro, coarsely chopped
1/2 bunch fresh mint, coarsely chopped
1/2 bunch fresh flat-leaf parsley, coarsely chopped
6 ounces crumbled feta

Steps:

  • Heat a large saucepan over medium-high heat and add 1 tablespoon of the olive oil. Add the chickpeas and cook, tossing occasionally, until browned, 10 to 15 minutes. Add the coriander, cumin and cinnamon and cook for another minute so the spices can toast. Season with salt and pepper, remove from the heat and let cool slightly.
  • In a large bowl, combine the remaining 4 tablespoons olive oil, lemon zest and juice, garlic, a good pinch of salt and a few turns of pepper and whisk vigorously until emulsified. Add the cooked pasta, cucumbers, tomatoes, onion, most of the cilantro, mint and parsley and most of the feta and fold together. Taste and adjust the seasoning, as desired. Transfer to a serving bowl and top with the chickpeas, remaining feta and remaining herbs and enjoy!
  • This can be made a day in advance. It's great at room temperature, too.

1 tablespoon coriander seeds
2 teaspoons cumin seeds
1 cup dried chickpeas, soaked for 10 hours or overnight and drained
1 small onion, coarsely chopped
4 cloves garlic, minced
1/4 cup lightly packed cilantro leaves with stems, roughly chopped
1/4 cup lightly packed flat-leaf parsley leaves with stems, roughly chopped
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 teaspoon kosher salt
Black pepper
A pinch of crushed red pepper
2 tablespoons flour
1 1/2 tablespoons lemon juice
Olive oil or flavorless oil, for frying

Steps:

  • Toast the coriander seeds and cumin seeds in a skillet over medium heat until lightly browned and fragrant, then coarsely grind in a spice grinder.
  • In a food processor, combine the cumin, coriander, soaked chickpeas, onion, garlic, cilantro, parsley, baking soda, cinnamon, salt, a few turns of black pepper, the crushed red pepper, flour, and lemon juice and pulse quickly, 80 to 100 times, until the mixture is combined, but still slightly grainy.
  • In a large skillet, heat 1/4 inch oil over medium-high heat until shimmering but not smoking. Fry a 1-tablespoon test patty until golden and then taste it. Adjust the seasonings in the mixture as desired. Form balls of falafel mixture, 3 tablespoons each, packing them firmly and then flattening them slightly. Fry on all sides until golden brown. Transfer to a paper towel.

4 cups dried chickpeas
1 cup split dried fava beans, without skins
4 cups fresh parsley (flat or curly), roughly chopped
1 head garlic, roughly chopped
1 small leek (or 1/2 cup chopped leeks), roughly chopped
1 medium yellow onion, roughly chopped
1 green bell pepper, roughly chopped
1 tablespoon whole coriander seeds
1 tablespoon whole cumin seeds
1 tablespoon whole fennel seeds
Salt
Oil, for frying, or nonstick cooking spray, for the waffle iron

Steps:

  • Soak the chickpeas and fava beans overnight. Grind the beans, parsley, garlic, leek, onion and bell pepper in a meat grinder, double grinding if desired, to get a smoother texture. (Extra batter can be frozen at this stage for later use.) Mix in the coriander, cumin, fennel and salt right before cooking, or the batter will turn.
  • Heat the oil to 375 degrees F in a deep-fryer or Dutch oven fitted with a deep-fry thermometer or preheat a waffle iron.
  • Use a falafel maker or hand-form the batter into flattened balls (to ensure even cooking). Deep-fry the falafel until they float to the top and the number of bubbles emanating from each falafel decreases significantly. Or, for falafel waffles, spray a waffle iron with nonstick spray, add a lump of batter and cook until brown and crispy on the outside but still green and soft inside.

You shouldn't reject deep-frying at home; I do it about once a month. It can be fast and easy, and you can deep-fry plants. (And anything else.) Frying is thought of as messy, but this can be mitigated by the simplest of measures: using a pot that is heavy, broad and deep, like a well-made stockpot. Choose this, add a fair amount of oil, and the process is simplified and neat. Add your food in batches and don't crowd; you do not want the temperature to plummet, nor do you want the pieces of food nestling against one another. (Though it's fine if they bump.) You may or may not have to turn the pieces, but that's easy, because they'll be floating and they won't stick. Remove them with a slotted spoon, tongs or spider; you'll know when they're done because the color will be evenly gorgeous.

1 3/4 cups dried chickpeas or 1 cup dried chickpeas plus 3/4 cup dried split fava beans
2 cloves garlic, lightly crushed
1/2 onion, quartered
1 teaspoon ground coriander
1 tablespoon ground cumin
Scant teaspoon cayenne, or to taste; or mild chile powder to taste
1/2 cup chopped fresh parsley or cilantro leaves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon baking soda
1 tablespoon freshly squeezed lemon juice, or more to taste
Neutral oil, like grapeseed or canola, for deep-frying

Steps:

  • Put beans in a large bowl and cover with water by 3 to 4 inches - they will triple in volume as they soak. Soak for 24 hours, checking once or twice to see if you need to add water to keep the beans covered.
  • Drain beans well and transfer to a food processor with all the remaining ingredients except the oil; pulse until minced but not puréed; add water tablespoon by tablespoon if necessary to allow the machine to do its work, but keep the mixture as dry as possible. (Too much water and your falafel will fall apart. If that happens, add more ground beans.) Taste and adjust seasoning, adding more salt, pepper, cayenne or a little more lemon juice as needed.
  • Put at least 2 to 3 inches of oil (more is better) in a large deep saucepan (the narrower the pan, the less oil you need; but the more oil you use, the more you can cook at one time). Turn heat to medium high and heat oil to about 350 (a pinch of batter will sizzle immediately; a piece of falafel will sink halfway to the bottom, then rise).
  • Scoop out heaping tablespoons of the mixture and shape it into balls or small patties. Fry in batches, without crowding, until nicely browned, turning as necessary; total cooking time per batch will be less than 5 minutes. Serve hot or at room temperature.
