- Place brisket in a large Dutch oven. Add 1/2 cup water. Cover and bake at 325° for 2 hours. , Meanwhile, in a small saucepan, saute onion and garlic in oil until tender. Add the ketchup, vinegar, lemon juice, brown sugar, Worcestershire sauce, cornstarch, paprika, chili powder, salt, pepper and remaining water. Simmer, uncovered, for 1 hour, stirring occasionally. , Add Liquid Smoke; mix well. Drain drippings from Dutch oven. Pour sauce over meat. Cover and bake 1 hour longer or until meat is tender.

A GREAT BRISKET (NOT SMOKED)
This a good brisket to make if you don't have the time or don't want to mess with the smoker. You can put it in the oven in the morning and come home from church and supper is just about ready.

Steps:
- Generously salt and pepper brisket and rub it in good.
- Put the brisket in the bag and pour the whole bottle of Liquid Smoke over it and rub it in good too.
- Pour the 2 cans of consumme over the meat.
- Pour BBQ sauce over the whole mess and tie up the bag and follow bag directions.
- Bake at 250 or 300 degrees for 5 or 6 hours.
- Be sure that the fat side of the brisket is on top so it can baste itself.
FAKE BARBECUED BRISKET
This is one of my most favorite recipes for parties because it is fast, easy, and can be made ahead of time. It's not the normal barbecued brisket because, well, it's not barbecued. Yep, this is roasted in oven, but it has all of the BBQ taste. I promise you will love this. (Oh, and this recipe can be doubled, tripled, or just duplicated as many times as you need to for the right servings.)

- Preheat your oven to 250°F.
- In a small bowl mix together all of the seasonings and set aside In a 9"-13" pan, that has been lined with foil, place the brisket fat side down.
- Sprinkle the brisket with half of the seasoning mixture, flip it over, and sprinkle the fatty side with the rest of the seasoning.
- Turn the oven temperature down to 200°F and place the brisket in oven.
- Cook for 5 hours, basting with its' juices about every hour or so When the brisket is done, remove it from the oven and let it rest for 10 minutes.
- After 10 minutes, cut it against the grain, and then pull it into shreds Place it in a bowl, and stir in the barbecue sauce.
- Enjoy this on chips, crackers, buns, pasta, salad, or just straight up!
BARBECUE BRISKET

- Season both sides of the brisket with Dry Rub and place in pan. Mix the lemon juice and water, and pour over the brisket. Let stand overnight in the refrigerator. Remove the brisket from the pan, reserving the marinade. Cook the brisket in a preheated 250-degree oven, 1 hour per pound. Baste with marinade and cover. Continue to cook the brisket at 250 degrees for another 1 1/2 hours or until tender.
- Mix all ingredients together and generously sprinkle on brisket prior to cooking.
THE ONE AND ONLY BARBECUED BRISKET
Anyone can master a "real" barbecued brisket. I think that beef brisket was the reason the barbecue process was invented. We have some great BBQ joints in Texas and I think this recipe is as good as any of them. Cook time is for 1 1/4 hours per pound of a 12 lb. brisket.

- The day before serving pat the dry rub into every pore on the brisket and place in a large bag, or wrap tightly in plastic wrap, to marinate overnight.
- Early in the morning take brisket out of refrigerator and bring to room temperature while you start your fire and heat to 210ºF.
- Place brisket on opposite side from the firebox with the fat side up, so juices will help baste the meat.
- Maintain pit temperature between 180º and 220º and smoke 1 hour to 1 1/4 hours per pound.
- Every hour or so, if you have to use mop sauce you may do so.
- (The fat is going to keep the meat moist.) Remove brisket and let sit for 20 minutes.
- Cut the fatty top section away from the top section and the second section.
- Slice both brisket sections across the grain.
- Serve the barbeque sauce on the side, not on the meat.

- In a small saucepan, combine the first nine ingredients; cook and stir over medium heat 3-4 minutes or until brown sugar is dissolved. - Pat brisket dry with paper towels; transfer to a roasting pan. In cup, mix paprika, brown sugar, chili powder, salt, black pepper, coriander, and cumin; use to rub all over brisket.
- Refrigerate brisket at least 2 hours or up to overnight.
- In bowl, combine all sauce ingredients; refrigerate until ready to use.
- Prepare outdoor grill for covered indirect grilling over medium-low heat. Place brisket in center of grill, fat side up.
- Cover grill and cook 4 1/2 to 5 hours or until very tender (internal temp of at least 170°F), brushing both sides of brisket with sauce every 15 minutes during the last hour of grilling.

DUTCH OVEN STYLE BARBECUED BRISKET

Steps:
- Combine wine, cider, honey, mustard, Habanero pepper sauce, soy sauce, brown sugar, garlic, ginger root, coriander and thyme in a large Dutch oven or heavy roasting pan.
- Add brisket,cover tightly,and place in the oven set to 350F; cook for about 1 hour.
- Remove brisket from the cooking liquid, cover and set aside.
- Pour the liquid into a medium pan and cook over medium heat until reduced to a glaze, just thick enough to coat back of spoon.
- Using covered grill, light about 12 charcoal briquettes and add small piece of water soaked mesquite, pecan, hickory, or other woods.
- Be sure to place charcoal and wood to one side of grill.
- Arrange brisket on grill, fat side up, so that it is not directly over burning wood.
- Paint it with some glaze.
- Place cover on grill and smoke brisket for about 1 1/2 hours, turning meat and coating with glaze every 15 minutes.
- Add charcoal or wood, small pieces at a time, if fire seems to get too cold.
- Remove from grill, thinly slice meat against grain and serve.
- Offer any remaining glaze on side.
