This Whipping Cream Cake is an example of vintage recipes at their finest! This luscious cake is both simple and unique and is sure to become a family favorite.

1 cup unsalted butter, room temperature
2 1/2 cups granulated sugar
6 large eggs, room temperature
½ teaspoon kosher salt
3 cups all-purpose flour
1 cup heavy whipping cream (do not whip)
2 teaspoons vanilla extract

Steps:

  • Spray a 12-cup bundt pan with nonstick cooking spray - preferably one for baking. This will help ensure a clean release of the bundt cake from the pan.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with an electric mixer on medium speed, beat the butter and sugar until light and fluffy - about 5 minutes.
  • Add one egg at a time, beating after each egg.
  • Add salt to the measured flour, whisking to combine and aerate the flour. Then alternately add the flour and heavy whipping cream starting and ending with the flour. Scrape down the sides and mix to combine. Add in vanilla extract and mix until incorporated.
  • Start the cake in a COLD oven by placing the cake into the oven, closing the door and heating the oven to 325°F. Bake for 1 hour and 15 mins or until a toothpick inserted into the center comes out clean. Allow the cake to cool on a wire rack for 45 minutes before inverting onto a serving plate.
  • Top with whipped cream and fresh berries.

1 1/4 cup whole milk
2 tsp dried lavender
2 1/4 cups cake-flour
1 tbsp baking powder
1 tsp salt
3/4 cup unsalted butter (room temperature )
2 cups granulated sugar
4 large egg whites
1 tsp vanilla extract
1 tsp lavender extract
1/2 cup water
1/2 cup granulated sugar
2 tsp dried lavender
1/2 cup unsalted butter (room temperature )
8 ounces cream cheese (super soft)
3 cups powdered sugar
1/2 tsp lavender extract
1/2 tsp vanilla extract

Steps:

  • Preheat the oven to 350 degrees.
  • In a small bowl add the milk and dried lavender and let it sit for about 15 minutes. You can also do this the day before and let it infuse in the refrigerator.
  • In a sieve sift flour, baking powder, and salt into a mixing bowl and set aside.
  • In a mixing bowl with the paddle attachment, beat butter and sugar on medium speed until light and fluffy.
  • In a large measuring cup, strain the infused milk and add the egg whites and extracts.
  • Turn the mixer to low speed and alternate the dry and wet ingredients. Use a spatula to scrape down the sides and bottom of the bowl.
  • Pour the batter into a 9x9x3 square pan OR two 8×8 round pans to make a layered cake.
  • Bake the cake for 30 minutes. This may change depending on the pan you're using. Set the time for 25 minutes and then add more time if needed. Our square 9x9x3 cake took 30 minutes to bake.
  • Once the cake is done baking and has cooled, turn it upside down and then using a wooden toothpick make 12 little holes in the cake by poking it.
  • Using a pastry brush, brush the lavender syrup over the cake. You won't use all of the syrup, but at least 1/2 of it.
  • Add water, sugar, and dried lavender into a small saucepan.
  • Simmer on low heat for about 5 minutes until the sugar dissolves.
  • Remove from the heat and let it cool to room temperature.
  • Strain the dried lavender through a sieve and into a bowl.
  • Add all of the ingredients into the bowl of an electric mixer and beat on high until it's nice and fluffy.
  • When the cake is cooled, add a layer of whipped frosting over the top and spread evenly.
  • Decorate the cake with edible flowers.

Steps:

  • In a small saucepan combine whipping cream and dried lavender. Bring to just a simmer.
  • Remove from heat.
  • Strain mixture and discard lavender.
  • Cover and chill whipped cream mixture at least 2 hours or until completely chilled.
  • In a chilled metal mixing bowl beat whipping cream and sugar with an electric mixer on medium speed, beating just until soft peaks form. Use at once or cover and chill up to 2 hours.

The frasier cake brings together tender sponge cake, luxurious pastry cream, and ripe, juicy strawberries in a classic French dessert.

3 large egg yolks
½ cup plus 1 Tbsp. plus ½ tsp. (115 g) granulated sugar
¼ cup plus ¾ Tbsp. (45 g) cornstarch
1¾ cups plus 2 Tbsp. whole milk
1 stick plus 3 Tbsp. (150 g) unsalted butter, room temperature
½ cup plus 2 ½ Tbsp. (65 g) all-purpose flour
7 large egg yolks
¾ cup plus 2 Tbsp. plus 1 ¼ tsp. (180 g) granulated sugar, divided
4 large egg whites
1⅛ lb (500 g) fresh whole strawberries

Steps:

  • In a medium bowl, vigorously whisk together the egg yolks and sugar until lightened. Whisk in the cornstarch. In a saucepan, warm the milk, then slowly pour it into the egg mixture while whisking constantly. Pour the combined mixture back into the saucepan and cook over medium heat, whisking constantly, until very thick, about 5 minutes. Cover the surface with plastic wrap and refrigerate.
  • Preheat the oven to 350°F. Line a rimmed sheet pan with parchment paper.
  • Make the sponge cake. Sift the flour. In a large bowl, whisk together the egg yolks and one-third of the sugar until lightened. In a separate bowl, beat the egg whites into stiff peaks, adding the remaining sugar a little at a time halfway through the beating time. Fold the beaten egg whites into the yolk mixture, then fold in the flour. Spread the batter evenly into the prepared sheet pan. Bake for 10 minutes. Cool completely.
  • Carefully peel the parchment paper from the cake.
  • Using the cake ring, cut out two circles from the cake.
  • Add the butter to the bowl of a standing mixer fitted with the whisk attachment and beat until light and creamy.
  • Add the pastry cream and beat until well incorporated. Transfer the mixture to a bowl.
  • Place the cake ring on a serving plate and place one cake circle on the bottom.
  • If necessary, briefly rinse the strawberries and pat them dry on paper towels.
  • Set aside one dozen of the most attractive strawberries for the top decoration. Hull and cut similarly sized strawberries in half and place them next to each other around the perimeter of the ring with the cut side touching the ring.
  • Cover the strawberries with a little of the pastry cream to seal them against the ring.
  • Hull the remaining ones and place in the center of the cake.
  • Cover the layer of strawberries with some of the pastry cream.
  • Place the second cake disk on top.
  • Evenly spread a thin layer of the pastry cream on top.
  • Hull the remaining whole strawberries then set them on top of the cake, pointed ends up.
  • Scrape the remaining pastry cream into a pastry bag fitted with a 1/3-in plain pastry tube and pipe pointed mounds of cream on top of the cake between the strawberries.
  • Refrigerate overnight. Just before serving, carefully remove the ring.

At first glance, this cake seems to contain no butter or oil. But on closer analysis, I discovered that the butterfat contained in the cream was more than equal to the usual amount of butter added.

2 1/4 cups cake flour or 2 cups all purpose flour, sifted (measured by sifting into the cup and leveling it off)
2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups heavy cream, cold
3 large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup plus 2 tablespoons superfine sugar
Special Equipment: 1 (10-cup) fluted metal tube pan, coated with baking spray with flour

Steps:

  • Preheat the Oven:
  • Twenty minutes or more before baking, set an oven rack in the lower third of the oven and preheat the oven to 375°F (350°F if using a dark pan).
  • Mix the Dry Ingredients:
  • In a medium bowl, whisk together the cake flour, baking powder, and salt and then sift them together to make the mixture easier to incorporate.
  • Mix the Liquid Ingredients:
  • In the bowl of a stand mixer fitted with the whisk beater, whip the cream, starting on low speed, gradually raising the speed to medium-high as it thickens, until stiff peaks form when the beater is raised.
  • In a medium bowl, whisk the eggs and vanilla just until lightly combined.
  • On medium-high speed, gradually beat the egg mixture into the whipped cream. The mixture will thicken into mayonnaise consistency (unless high-butterfat cream is used). Gradually beat in the sugar. It should take about 30 seconds to incorporate it.
  • Make the Batter:
  • Detach the bowl and whisk beater from the stand. Add half the flour mixture to the cream mixture and, with the whisk attachment stir and fold in the flour until most of it disappears. Add the rest of the flour mixture and continue folding and mixing until all traces of flour have disappeared. Using a silicone spatula or spoon, scrape the batter into the prepared pan. Run a small metal spatula or dull knife blade through the batter to prevent large air bubbles, avoiding the bottom of the pan. Smooth the surface evenly with a small metal spatula.
  • Bake the Cake:
  • Bake for 25 to 35 minutes, or until a wooden toothpick inserted between the tube and the side comes out completely clean and the cake springs back when pressed lightly in the center. The cake should start to shrink from the sides of the pan only after removal from the oven.
  • Cool and Unmold the Cake:
  • Let the cake cool in the pan on a wire rack for 10 minutes. With a small metal spatula, loosen the top edges of the cake and invert the cake onto a wire rack that has been coated lightly with nonstick cooking spray. Cool completely. The cake requires no adornment, but I love to serve it with a light dusting of powdered sugar or a large dollop of lightly sweetened Whipped Cream.
