GREEN TEA FROZEN YOGURT WITH SESAME BRITTLE SHARDS
Frozen yogurt is really easy to make and lower in fat than ice cream. You can find 'matcha' green tea powder in healthfood stores

- In a large mixing bowl, whisk the yogurt, sugar and matcha powder well until the sugar is dissolved. Cover and chill for 1 hr or until the mixture is very cold. Pour into an ice-cream machine following the manufacturer's instructions. Scrape into a freezable container and freeze for 4-5 hrs until firm.
- To make the sesame brittle, line a baking sheet with baking parchment. Heat the sugar in a medium saucepan. Leave to melt, without stirring, for about 5 mins until bubbling and golden. Stir the sesame seeds into the light caramel, boil for a few secs, then pour the mix onto the baking sheet, spreading as thin as possible. Once hardened, bash the brittle on the counter to crack into pieces. Can be made 1 week in advance and stored in an airtight tin.
- Remove the frozen yogurt from the freezer 1 hr or so before serving, to soften slightly. Spoon into small bowls with the sesame brittle scattered over.

FABULOUSLY EASY GREEN TEA FROZEN YOGURT NO MACHINE NEEDED!
All you need are the ingredients and very basic kitchen tools! It's up to you what you want to freeze them in, like little bowls or ramekins, pop molds, etc. I used 4 texas muffin size silicon cups. No steeping either-- just pure matcha powder, which can be found in Asian grocery stores and online. Matcha packets are typically 5 grams, I used two for ultimate flavor. WHOLE MILK YOGURT is a must for this, using low or non fat yogurt will result in a crystallizing consistency similar to ice milk! I used Sun Crystals which works like Splenda Granular (you use 1/2 of what the recipe calls for) but am posting the nutritional info for sugar because Sun Crystals didn't register.

- Whisk the yogurt in a bowl until smooth.
- Whisk in the sugar, then carefully beat in the matcha packets to make sure they disperse evenly and there are no lumps. The yogurt should be a very pale green now.
- If you want to add the food coloring, add a few drops to your liking for presentation to deepen the matcha coloring and whisk well.
- Pour the mixture into pop molds, ramekins, etc. and freeze for at least 4-6 hours or overnight.

- Cut and smash up mango until its in a coarse pulp.
- In a bowl combine the milks and add a few drops of the food coloring to give it a very light orange color. One to two drops should be enough.
- Drain pineapple well, add pineapple and mango to bowl with milks and stir well with a large spoon.
- Fold in whipped cream until well incorporated, the whip cream will dissolve some in the mixture.
- Pour into a large plastic container and freeze for at least 6 hours but more may be needed depending on temperature of freezer.

- In a large bowl, mix condensed milk and fruit puree/flavorings thoroughly.
- In a separate bowl, beat chilled whipping cream until stiff peaks form.
- Fold whipping cream into condensed milk mixture, along with any stir-ins (like cookie pieces, fruit chunks, candy, etc.) that you desire.
- Pour into a plastic or metal container (not glass), cover, and freeze for at least 4 hours or overnight. Scoop and enjoy!

- Note on flavorings: Fruit puree or a strong fruit juice (even concentrate) works well, but be sure it's unsweetened or relatively sour or your ice cream will be too sweet. Lemon juice works great, as does margarita mix; top with crushed pretzels when serving for a salty-sweet treat. Or use brewed coffee or tea. If using tea, steep 3 teabags in 1/3 cup of hot water for about 5-7 minutes and press the water out of the teabags when removing them. I just made an excellent chamomile tea ice cream this way; it had a lovely, delicate flavor.
- Another note: I've heard you can substitue Cool Whip for the whipping cream--I'd go with about 1 1/2 to 2 cups--but as I haven't tried it myself, I can't vouch for the results. It would make it lower fat and easier to put together, but the texture might suffer.
