10 to 12 wooden shish-kabob skewers
3 to 4 chicken breasts, about 2.5-pounds
2 teaspoon sea salt
4 strips raw bacon
2 teaspoons paprika
3 teaspoons smoked paprika
5 teaspoons sugar
1 cup Sweet Baby Rays BBQ Sauce

Steps:

  • Pour some water in a 9x13 pan and place 10-12 wooden skewers into it. Allow them to soak for an hour or so. Cut 3 to 4 chicken breasts, about 2 1/2 pounds, into 2-inch cubes. Place them in a medium-sized mixing bowl and sprinkle 2 teaspoons sea salt over the top. Toss the chicken to thoroughly coat. Cover with plastic wrap and refrigerate for 30 to 60 minutes. This will help to both flavor the chicken and keep it tender. Fire up your grill and heat it to 350°F. Slice 4 strips of raw bacon into 2-inch pieces. Place them into a small mixing bowl (or food processor). Use an immersion blender or food processor to turn the bacon into a thick paste. Sounds weird, I know...but it really gives the chicken a ton of flavor. It's bacon after all. King of flavor and delight. :) Into a small bowl place 2 teaspoons paprika, 3 teaspoons smoked paprika and 5 teaspoons sugar. Toss them together to combine. Pour the seasoning mixture into the bacon paste. Stir it well to combine. Take a paper towel and pat the chicken dry, then spoon the seasoning/paste mixture over the chicken. Toss the chicken thoroughly to combine. I just put both my hands into the bowl and mixed and mixed it all around, until the chicken was well coated. Make sure to wash your hands (super well!) when you are done. Thread the chicken pieces onto the skewers. Lay a large piece of tin foil on your grill and spray it with cooking spray. Set the chicken kabobs on the foil. Cook for about 8 minutes per side. When the chicken has cooked through brush each kabob with Sweet Baby Rays BBQ Sauce. Allow them to cook for 2 to 3 additional minutes so the sauce has a chance to heat through. Serve with additional BBQ Sauce.

1/2 cup barbecue sauce
1/4 cup orange marmalade
1 lb boneless skinless chicken breasts, cut into 3/4-inch pieces
1/2 medium red onion, cut into 1-inch chunks
1 medium red bell pepper, cut into 1-inch chunks
2 tablespoons olive or vegetable oil
1 teaspoon seasoned salt

Steps:

  • Heat gas or charcoal grill. In small microwavable bowl, mix barbecue sauce and marmalade. Remove 1/4 cup of the sauce mixture to small dish; set aside.
  • On each of 4 (11-inch) metal skewers, thread chicken pieces, leaving 1/4-inch space between each piece. On 4 additional skewers, thread onion and bell pepper chunks, leaving 1/4-inch space between each piece. Brush chicken and vegetables with oil; sprinkle with seasoned salt.
  • Place kabobs on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning kabobs 2 or 3 times and brushing chicken and vegetables with reserved 1/4 cup sauce mixture during last 5 to 8 minutes of grilling, until chicken is no longer pink in center.
  • Microwave remaining barbecue sauce mixture uncovered on High 20 to 30 seconds or until thoroughly heated. Serve sauce with kabobs.

1/4 cup lemon juice
4 tablespoons olive oil, divided
3 tablespoons white wine
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 medium lemons, halved
Minced chives

Steps:

  • In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours., Drain chicken, discarding marinade. Thread chicken onto 6 metal or soaked wooden skewers. Grill, covered, over medium heat until no longer pink, turning once, 10-12 minutes., Meanwhile, place lemons on grill, cut side down. Grill until lightly browned, 8-10 minutes. Squeeze lemon halves over chicken. Drizzle with remaining oil; sprinkle with chives.
