EXTRA SPECIAL GRILLED CHEESE SANDWICH
Friends taught us to do this when we were kids. I just don't think a 'plain' grilled cheese sandwich is near as good.

Steps:
- Butter one slice of bread and place in frying pan or on griddle. Place cheese on bread.
- Butter the second slice of bread and place butter side up on top of cheese.
- Fry on medium heat until golden brown, turn over and fry other side of sandwich. Remove from heat and spread jelly on the TOP of the sandwich and serve.
- I prefer mozzarella or Colby jack cheese with strawberry jelly or American cheese with grape jelly.

- Combine mayonnaise and mustard; spread over 2 bread slices. Layer with cheeses, onion, tomato and bacon; top with remaining bread. Spread outsides of sandwiches with butter., In a small skillet over medium heat, toast sandwiches until cheese is melted, 2-3 minutes on each side.

I have had many different variations to a grilled cheese sandwich, but this is my all time favorite.

Steps:
- Heat a non-stick pan on medium heat.
- On one unbuttered slice of bread place cheese, bacon and onion.
- I have used a thin slice of sweet white onion also.
- Top with remaining unbuttered slice of bread.
- Butter top side of bread slice.
- Place in heated pan, buttered side down.
- Butter top side of bread slice.
- Cook until medium brown.
- Flip.
- Cook until medium brown.
- Enjoy with tomato soup.

- Stir together butter and parmesan cheese in a small bowl.
- Spread 1 1/2 teaspoons butter mixture on 1 side of each bread slice.
- Place 4 bread slices, buttered sides down, on wax paper. Top with provolone and mozzarella cheeses; top with remaining bread slices, buttered sides up.
- Cook sandwiches, in batches, on a hot griddle or in a nonstick skillet over medium heat, gently pressing with a spatula, 4 minutes on each side or until golden brown and cheese is melted.
