COCONUT OATMEAL COOKIES

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

Number Of Ingredients 12

1/2 cup shortening
1 cup brown sugar, packed or 2 tablespoons molasses
1 cup white sugar (or Splenda or 1/2 cup Splenda for Baking)
2 large eggs
1 teaspoon vanilla
1/2 cup butter
2 cups flour
1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°.
  • In mixing bowl cream shortening,butter,and sugars.
  • Add eggs and vanilla until blended.
  • Set aside.
  • In separate bowl, combine dry ingredients.
  • Withholding coconut until all other ingredients are blended.
  • Add coconut.
  • Combine wet and dry ingredients until moist.
  • Drop on greased cookie sheet about 1-2 inches apart.
  • Bake for 10 minutes or until golden brown.
  • Remove from oven immedietly- if overcooked cookies get HARD.

Number Of Ingredients 13

1 cup butter (2 sticks) or 1 cup margarine (2 sticks)
2 cups old fashioned oats
2 1/2 cups flour
2 eggs
1 1/4 cups flaked coconut
1 1/2 cups white sugar
3/4 cup light brown sugar
1 (10 -12 ounce) bag chocolate chips or 1 cup raisins
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Cream butter and sugars together. Add vanilla, eggs and spices.
  • Add rest of ingredients except for chocolate chips if using.
  • Mix well.
  • Add chocolate chips.
  • Drop large spoonfouls about 3" apart on large greased cookie sheet or ungreased parchment paper (works much better!).
  • Push tops down slightly with back of a spoon.
  • Bake in preheated oven at 350 for about 10-12 minutes or when edges are turning brown and centers are almost set.
  • Enjoy!

When our family gathered at my aunt's summer home on Mackinac Island a few years back, she pulled out her tried-and-true recipe and made these wholesome cookies. I think of her and that memorable vacation every time I make these for my own family.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups quick-cooking oats
2 cups cornflakes
1 cup sweetened shredded coconut
1 cup salted peanuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in remaining ingredients. , Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

2 cups quick-cooking oats
1 cup shredded coconut
1 cup butter (2 sticks) or 1 cup margarine (2 sticks)
1/2 cup sugar
1/4 cup brown sugar
2 eggs
4 tablespoons milk
1 1/2 teaspoons vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400°F Lightly grease 2 cookie sheets.
  • Spread the oats and coconut on an ungreased baking sheet. Bake until golden brown, 8-10 minutes, stirring occasionally.
  • With electric mixer, cream the butter or margarine and both sugars until light and fluffy. Beat in the eggs, one at a time, then the milk and vanilla. Sift over the dry ingredients and fold together. Stir in the oats and coconut.
  • Drop spoonfuls of dough 1-2 inches apart on the prepared sheets and flatten with the bottom of a greased glass dipped in sugar. Bake until golden. 8-10 minutes. Cool on a rack.

A co-worker shared this recipe with me a long time ago. I begged her for the recipe and finally she did share it. Every time I make these, they are gone in a flash. I will often double just so we will have for more than a day. Nobody can ever eat just one!

2 cups sifted flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2/3 cup margarine
1 cup granulated sugar
1 cup brown sugar
2 eggs, unbeaten
2 teaspoons vanilla
1 cup quick-cooking rolled oats
2 cups coconut

Steps:

  • Preheat oven to 350°F.
  • Sift flour, baking powder, baking soda, salt together. Set aside.
  • Cream together margarine, sugars, eggs and vanilla until light and creamy. Add flour mixture. Stir in oatmeal and coconut.
  • Place small spoonfuls on lightly greased cookie sheet. Bake for 12-15 minutes. Take out of oven when they don't look done and let set on cookie sheet for a minutes.
  • I spray my cookie sheet with PAM about every 2-3 times. The secret to these cookies is to not over bake them. Store in airtight container.
