I'm always entering cooking contests and experimenting with big, bold flavor combinations. This espresso-laced spice rub is equal parts sweet, hot and exotic-it's awesome for grilled ribeye. -Sandi Sheppard, Norman, Oklahoma

Yield about 1 cup.

Number Of Ingredients 7

1/3 cup instant espresso powder
1/4 cup packed brown sugar
3 teaspoons kosher salt
3 teaspoons lemon-pepper seasoning
1 teaspoon cayenne pepper
1/4 teaspoon Chinese five-spice powder
1/4 teaspoon garlic powder

Steps:

  • Mix all ingredients until well blended. Transfer to an airtight container. Store in a cool, dry place for up to 6 months.

2 teaspoons espresso powder
2 teaspoons coarse salt, plus more for seasoning
1 teaspoon smoked paprika
1 teaspoon light-brown sugar
2 strip steaks
Roasted broccoli or other vegetables

Steps:

  • Combine espresso powder, paprika, sugar, and 2 teaspoons salt. Rub on both sides of steaks. Cook as desired; season with salt. Serve with roasted broccoli or other vegetables.

1 1/2 teaspoons ancho chili powder, or other chili powder
1 1/2 teaspoons fine ground espresso coffee
1/2 teaspoon brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/4 pound shoulder center steak (Ranch Steak), or top sirloin, about 1 1/4-inch thick

Steps:

  • Spray a large nonstick skillet with cooking spray and preheat it over medium-high heat. In a small bowl combine all the ingredients for the rub and coat the steak well on both sides. Cook steak for 14 minutes, turning once, for medium to medium-rare. Allow steak to sit for 5 minutes before slicing.

1/4 cup ancho chili powder
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.

Steps:

  • Mix all ingredients with a small wire whisk. Store in an airtight jar.
  • When you want to use it. oil all sides of steak with olive oil. Sprinkle liberally with the steak rub and rub well into all sides of meat. Grill 5 minutes per side per inch of thickness for steak for rare. Longer for more doneness. Or brown in a skillet with oil on all sides for a roast, then bake in oven till done.

  • Let steaks sit 1 hour to come to room temperature, which will help them cook quickly and more evenly.
  • Preheat oven to 400°. Heat oil in a large skillet over medium-high. Cook steaks 2 minutes or so on each side to create a nice crust. Transfer skillet to oven; cook steaks until an instant-read thermometer inserted into the thickest part registers 120° for medium-rare, about 5 minutes. Transfer steaks to a cutting board; let rest 10 minutes. Slice ½" thick.
