OAT BISCUITS

Oat Biscuits image

A slightly sweet biscuit with a crisp exterior and tender interior. We especially love them with sausage gravy or hamburger gravy over them. Because they aren't a flaky biscuit, you will need to cut them open or just put any butter or spreads on the top. They are also good with a stew.

BUMPER OAT COOKIES

Bumper oat cookies image

Oaty, chewy, spicy cookies - ready in under an hour and great for tea time

Provided by Good Food team

Categories     Afternoon tea, Snack, Treat

Time 50m

Yield Makes 18

Number Of Ingredients 11

175g butter
175g demerara sugar
100g golden syrup
85g plain flour
½ tsp bicarbonate of soda
250g porridge oats
1 tsp ground cinnamon
100g each of ready-to-eat dried apricots, chopped and stem ginger , chopped
75-80g pack dried sour cherries
2 tbsp boiling water
1 medium egg , beaten

Steps:

  • Heat the oven to 180C/fan160C/gas 4. Line several baking sheets with baking parchment or non-stick sheets. Warm the butter, sugar and golden syrup in a large saucepan over a medium heat until the butter has melted. Stir in the flour, bicarbonate of soda, oats, cinnamon, dried fruits and ginger, then the water and finally the egg. Leave to cool until easy to handle.
  • With dampened hands, shape the mixture into 18 large balls, then flatten them onto the baking sheets - allowing plenty of space for spreading - and bake for 15-20 mins until golden. (This will give a soft, chewy cookie. For a crisper one, reduce the heat to 160C/fan140C/gas 3 and bake for a further 5-10 mins.)
  • Allow the cookies to cool on the trays briefly, then lift onto to a cooling rack. Will keep in an airtight container, separated with baking parchment, for up to 1 week.

HOBNOBS (AKA CRUNCHY OATY COOKIES) | FOOD
hobnobs-aka-crunchy-oaty-cookies-food image
Web Sep 4, 2018 Pretty simple & very nice. Hobnobs get their flavor from oats and a lovely ingredient called golden syrup, a British baking staple.

  • Preheat the oven to 300 degrees Fahrenheit. Line 2 rimmed cookie sheets with parchment paper.
  • In a food processor, pulse 1/2 cup of the quick cooking oats until they are closer in texture to oat flour, but not completely broken down. This will probably be around 7-10 pulses. In a medium mixing bowl, whisk together the processed oats, the other 1/2 cup of oats, all-purpose flour, whole wheat flour, baking soda, and kosher salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar on medium-high speed with an electric hand mixer until lighter in color and fluffy, scraping down the sides of the bowl as needed. Add the golden syrup and milk and mix until incorporated. Using a wooden spoon or a heavy-duty rubber spatula, fold the dry ingredients into the wet ingredients. It will take a bit of folding to come together. It will look really dry and crumbly but keep folding and it will come together!
  • Once it's combined (there may be a few stray crumbs in the bowl & that's fine!) scoop the cookie dough. I use a medium cookie scoop to portion the dough, but you could also use heaping tablespoon. As you portion the dough, roll each piece quickly into a ball and place on the prepared cookie sheet, leaving about 2 inches of space between the cookies. Once you've filled one cookie sheet with ten cookies, lightly flatten the cookies with your fingers until they are each about 1 1/2 inches in diameter. The edges might split a little as you do this because it's a dry dough. That's ok. You can press the edges back together if you want or just leave it if you can't be bothered.
