PROPER BRITISH APPLE PIE



Proper British Apple Pie image

A good old-fashioned apple pie really takes some beating for comfort. This recipe is both quick and easy a lovely dessert or perfect tea time treat.

For the Pastry:
1 2/3 cups (200 grams) all-purpose flour
Pinch of salt
4 ounces (110 gram) cubed butter, or an equal mix of butter and lard
2 to 3 tablespoons cold water
For the Filling:
1 1/2 pounds (700 grams) cooking apples (peeled, cored and quartered)
2 tablespoons lemon juice
4 ounces (110 grams) sugar
4 to 6 tablespoons cold water
1 teaspoon ground cinnamon, optional
1 ounce (25 grams) butter
1/4 cup milk, more or less, to glaze

Steps:

  • Gather the ingredients.
  • Place the flour, butter and salt into a large, clean bowl.
  • Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.
  • Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry.
  • Wrap the dough in clingfilm and chill for a minimum of 15 minutes, up to 30 minutes. Heat the oven to 425 F / 220 C / Gas 7.
  • Gather the ingredients.
  • Simmer the apples with the lemon juice and water in a large pan until soft. Add the sugar and cinnamon to the cooked apples. Remove from the heat and add the butter and leave to cool.
  • Roll out half the pastry and line a 7-inch (18-centimeter) pie dish. Put the cooled, cooked apple mixture into the pastry case.
  • Roll out the remaining pastry to make a lid for the pie. Damp the edges of the pastry in the dish with a little cold water, cover with the lid, press the edges firmly together and crimp to decorate.
  • Brush the top of the pie with milk and bake in the middle of a hot oven for 20 to 25 minutes.
  • Serve hot or cold with cream, ice cream or custard sauce.

This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

6 cups thinly sliced apples
¾ cup white sugar
1 tablespoon butter
1 teaspoon ground cinnamon
1 recipe pastry for a 9-inch double-crust pie

Steps:

  • Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
  • Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
  • Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
  • Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

I got this recipe out of cook book called "Calling all Cooks". It is more like a cobbler/crisp type pie than the traditional apple pie, but it is oh so good. Serve it cold or hot with vanilla ice cream.

4 large tart apples
1 cup white sugar
1 teaspoon cinnamon
1/2 cup melted butter
1 cup flour
1 teaspoon sugar
1/2 cup brown sugar
1/2 cup chopped nuts

Steps:

  • Peel and slice apples and lay in deep dish pie plate.
  • Sprinkle white sugar on top of apples.
  • Sprinkle cinnamon on top of sugar.
  • In separate bowl melt butter and mix with dry ingredients.
  • Spoon and press this to cover apples.
  • Bake for 45 minutes on 350°F.

Kids will love to help make and eat this comforting, classic fruity pudding with homemade shortcrust pastry

225g plain flour
140g butter or margarine
3 large cooking apples
2 tbsp honey
pinch of cinnamon
pinch of mixed spice
1 egg, beaten
crème fraîche, vanilla ice cream or natural yogurt, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. To make the pastry, sift the flour into a large mixing bowl and add the butter or margarine. Using your fingers, mix together until the mixture resembles breadcrumbs.
  • Add about 3 tbsp cold water - 1 tbsp at a time - to bind the mixture into a ball. Then wrap it in cling film and leave to chill in the fridge while you prepare the apples, or for 30 mins if you have time.
  • While the pastry is chilling, core the apples, then cut into even-sized chunks so they all cook in the same amount of time. Put the apples into the pie dish, drizzle over the honey and add the cinnamon, mixed spice and about 2 tbsp water.
  • Roll out the pastry on a floured work surface until it is large enough to cover the pie dish. Using the rolling pin, carefully lift the pastry and lay it over the top of the apple mixture. Carefully trim off the excess pastry (this can be rerolled and cut into shapes to decorate the pie crust if you like) and press the pastry edges onto the dish to create a seal.
  • Make a small cut in the pastry so that the air can escape during cooking, then brush with beaten egg to glaze.
  • Bake the pie in the oven for 20-30 mins until the pastry is golden and sandy in appearance and the apple filling is bubbling and hot. Serve while still warm with crème fraîche, ice cream or natural yogurt.

I found this recipe in Ohio magazine this month (October 2005). Bramley's Seedling apples are good for cooking. They have a greenish-yellow skin with red and brown stripes and are commonly used for baking in the British Isles. This recipe is said to have come from Thomas Dawson of London in 1587.

6 large bramley's seedling apples
1/2 cup water
1 cup sugar
2 teaspoons cinnamon
1 teaspoon ginger
2 tablespoons butter
2 eggs, lightly beaten
2 tablespoons Applejack (apple brandy)
1 pie crust, refrigerated

Steps:

  • Gently boil the apples (it's not necessary to pare, core or slice them) in water in a covered saucepan until the fruit is very tender, about 30 minutes. Drain the apples, return to pot. Using a potato masher, mash the apples. Force the mashed fruit through a strainer with the back of a spoon.
  • Preheat the oven to 425 degrees. Flavor the mashed fruit with the sugar, cinnamon and ginger. Mix in the butter, eggs and applejack. Line a 9-inch glass pie pan with crust. Pour in the mixture and bake for 10 minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes.
