1 teaspoon salt
185 milliliters (6 fl oz, 3/4 cup) iced water
500 grams (1 pound 2 ounces) all-purpose flour (plus extra for dusting)
250 grams (9 ounces) unsalted butter (melted)
2 tablespoons olive oil
2 large white onions (finely chopped)
500 grams (1 pound 2 ounces) ground beef
1 teaspoon ground cumin
1 teaspoon mild paprika
1 teaspoon sea salt
1 egg (beaten)

Steps:

  • Combine the salt and water in a small bowl and stir until the salt is dissolved. Tip the flour into the bowl of a food processor. With the motor running, slowly pour the melted butter into the flour, followed by the salt water. Process until the mixture begins to come together to form a rough dough (do not overmix).
  • Tip the dough onto a lightly floured work surface and knead for a couple of minutes until you have a smooth dough ball. Divide the dough in half (this makes it easier to work with) and cover with a clean tea towel. Leave for about 1 hour at room temperature before using. The dough can also be wrapped in plastic wrap and refrigerated for up to 1 day or frozen for up to 1 month. Bring to room temperature before using.
  • Working with one piece of dough at a time, on a lightly floured work surface, roll the dough into a 2 mm (1⁄6 in) thick circle. Cover, and set aside for a further 1 hour. Use a pastry cutter to cut out 12 cm (43⁄4 in) circles of dough, stacking the circles as you go, until you have 24 circles.
  • Heat the oil in a frying pan over medium heat. Add the onion and cook, stirring occasionally, for 10-15 minutes, until softened. Stir through the minced beef and cook, stirring to break up any larger pieces of meat, for 8-10 minutes, until browned. Stir through the cumin and paprika. Add 250 ml (81⁄2 fl oz/1 cup) water and cook, uncovered, for 30 minutes, until most of the liquid has evaporated. Remove from the heat and allow to cool completely.
  • Preheat the oven to 180°C (350°F). Line two baking trays with baking paper.
  • Place 2 tablespoons of the beef mixture in the centre of each dough circle and lightly brush the edges with beaten egg. Fold the dough to enclose the filling and press the edges together to seal. Crimp or pleat the dough, then transfer to the baking trays. Brush the tops of the empanadas with beaten egg, then bake in the oven for 15-20 minutes, until puffed and golden.

4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons curry powder
1 teaspoon salt
1 teaspoon turmeric
1 1/3 cups shortening
1/2 cup butter
1 cup cold water
2 tablespoons vegetable oil
2 medium onions, finely chopped
2 garlic cloves, minced
2 lbs ground beef
1 tablespoon curry powder
1 1/2 teaspoons salt
1 1/2 teaspoons dried thyme
1 teaspoon black pepper
1 pinch cayenne pepper
2 cups water
1 cup plain breadcrumbs

Steps:

  • To make the pastry: In a large bowl, stir the flour, baking powder, curry, salt and turmeric. Cut in the butter and shortening until the mix resembles fine crumbs. Pour water in and make a soft dough. Gather the dough into a ball and wrap in wax paper. Chill for 1 hour.
  • To make the filling: In a small bowl, mix the water with the breadcrumbs and let it sit while you prepare everything else. In a large pan, heat the oil over medium heat. Cook the onions and garlic until soft. Place in a small bowl and set aside. Increase the heat to high. In the same pan, cook the beef until it is no longer pink. Drain the fat and stir in the onion mix, curry, salt, thyme, black and cayenne peppers. Cook over medium heat for 3 minutes.
  • Assembly: Divide pastry in half and roll 2 long sausage shapes. Slice each roll crosswise into roughly 12 equal pieces. Roll each piece out into a 6" circle. Spoon some filling into the circle. Wet the edges of the circle with a little water and fold in half, making sure the edges meet. Trim into a neat half moon shape and imprint the edges with fork prongs.
  • Bake in a preheated 350 degree oven for 28 minutes or until the pastry is lightly brown.

1 tablespoon caul fat or any other type of fat
1 pound bottom round or sirloin, hand-chopped or ground
5 to 6 scallions, thinly sliced, white and green parts separated
1/2 cup seedless raisins
2 tablespoons dry oregano
1 tablespoon crushed red pepper
1 tablespoon ground cumin
2 tablespoons Spanish sweet paprika
Salt and pepper
2 roasted peppers, diced
Empanada dough discs*
10 green olives, pitted
3 eggs, hard boiled and sliced
Oil, for frying

Steps:

  • In a large skillet, heat 1 tablespoon caul fat. Add the chopped meat and white scallion slices, and saute until slightly browned. Add raisins and spices and cook until meat is cooked through. Stir in green scallion slices and roasted peppers. Let mixture cool.
  • Fill empanada discs with meat, add 1 olive and 1 slice of egg. Seal the empanada.
  • Preheat oil in a deep sauce pot fitted with a frying thermometer to 375 degrees F. Deep fry the empanadas in the oil for about 3 minutes. Remove from oil with slotted spoon. Drain on paper towels.

1 cdta. de Comino GOYA®
1 / 8 cucharadita de Pimienta Roja Molida GOYA®
1 Lb. de carne molida
Adobo GOYA® con Pimienta, al gusto
2 huevos duros, pelados y picados (opcional)
1/4 de taza de uvas pasas, remojadas en agua caliente y escurridas (opcional)
12 Aceitunas de Manzanilla Rellenas con Pimientos GOYA®, (alrededor de 1/4 de taza) picadas
2 paquetes (12 oz cada uno) de Tapas para Empanadas GOYA® Hojaldrada, descongelar
1 huevo, ligeramente batido con 2 cucharadas de agua

Steps:

  • 1. Heat oil in large skillet over medium-high heat. Add onions; cook until soft and translucent, about 7 minutes. Add garlic, paprika, cumin and crushed red pepper; cook until fragrant, about 30 seconds more. 2. Add ground beef to onion mixture. Cook, stirring and breaking up meat with wooden spoon, until cooked through, about 8 minutes. Season meat mixture with adobo. Gently mix in chopped eggs, raisins and chopped olives. Set beef mixture aside to cool. 3. Heat oven to 375˚F. Place dough round on work surface. Using heaping tablespoon measure, spoon meat mixture onto center of dough round. Using pastry brush, paint edges of dough with egg wash. Fold dough into half-moon shape; gently press down edges and twist down to seal. Repeat with remaining ingredients. 4. Divide empanadas among baking sheets, leaving 1½" space between each empanada. Brush tops of empanadas with remaining egg wash. Cook until pastries puff, turn golden brown and filling is hot, about 20 minutes.

ARGENTINE MEAT EMPANADAS

My original version for the Argentinean recipe. Rich and delicious. Any meat can be used for this recipe, just be sure to cut it up into tiny pieces.

½ cup shortening
2 onions, chopped
1 pound lean ground beef
2 teaspoons Hungarian sweet paprika
¾ teaspoon hot paprika
½ teaspoon crushed red pepper flakes
1 teaspoon ground cumin
1 tablespoon distilled white vinegar
¼ cup raisins
½ cup pitted green olives, chopped
2 hard-cooked eggs, chopped
salt to taste
1 (17.5 ounce) package frozen puff pastry sheets, thawed

Steps:

  • In a saute; pan melt the shortening and add the chopped onions. Cook the onions until just before they begin to turn golden. Remove from the heat and stir in the sweet paprika, hot paprika, crushed red pepper flakes and salt to taste.
  • Spread the meat on a sieve and pour boiling water on it for partial cooking. Allow meat to cool. Place meat in a dish add salt to taste, cumin and vinegar. Mix and add the meat to the onion mixture. Mix well and place on a flat to dish to cool and harden.
  • Cut puff pastry dough into 10 round shells. Place a spoonful of the meat mixture on each round; add some of the raisins, olives and hard boiled egg. Avoid reaching the edges of the pastry with the filling because its oiliness will prevent good sealing. Slightly wet the edge of the pastry, fold in two and stick edges together. The shape should resemble that of a half-moon. You should have a 2/3 to 1/2 inch flat edge of pastry to work with. Seal by twisting edge, step by step, between thumb and index finger, making sure to add pressure before releasing the pinch and moving on to the next curl. Other sealing procedures like pinching without curling or using a fork to seal will not prevent juice leaks during baking, and empanadas must be juicy.
  • Preheat oven to 350 degrees F (180 degrees C). Place empanadas on a parchment paper lined baking sheet. Be sure to prick each empanada with a fork near the curl to allow steam to escape during baking. Glaze with egg for shine and bake until golden, about 20 to 30 minutes.

2 puff pastry sheets, pre-rolled
2 egg whites
2 tablespoons olive oil
1/4 lb lean ground beef
1/4 lb ground lean pork
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon cumin
1 tablespoon chili powder
1/4 cup onion, minced
1 minced garlic clove
1 jalapeno, minced
1 tablespoon butter
2 eggs, hard cooked and finely chopped
3 tablespoons stuffed olives, chopped
3 tablespoons raisins, seedless
1/2 cup tomato sauce

Steps:

  • In a skillet heat the oils and brown the meats. Add the seasonings, onion, garlic and jalapeno. Saute until tender. Drain any excess fat. Add the remaining ingredients and simmer until very thick. Cool to room temperature.
  • Preheat oven to 425°F.
  • Roll the pastry dough out on a floured surface. Cut into 2" rounds. Place 1 tbsp of meat mixture on each round. Fold the round in half and crimp the edges with a fork to seal. Brush the pastry with egg whites. Place on a greased baking sheet and bake for 15 to 20 minutes, or until golden brown.

  • For the dough, melt the ghee in a small saucepan over low heat. Put the flour and salt in the bowl of an electric mixer with a dough hook attachment and mix to combine. Mix the melted ghee and water in a jug. Leave the mixer running on low speed, and gradually add the ghee mixture to the flour until a dough forms. Add another splash or two of water if the dough feels too dry or crumbly. Set aside to rest for an hour.
  • Quarter the dough and roll out to a 2mm-3mm thickness and cut out rounds using a lightly floured 15cm round cutter.
  • Holding a round of dough in one hand, wet the outer edge, then place 2 tbsp of filling in the centre. Fold the dough over the filling to make a half moon, then press the edges together and fold the lip over itself, pressing and pleating as you go. Repeat until you’ve used up all the dough and all the filling.
