MICROWAVE POTATO-AND-CHORIZO SCRAMBLE



Microwave Potato-and-Chorizo Scramble image

We scrambled some spicy chorizo sausage and tangy goat cheese into a traditional Spanish tortilla to make a dish that is perfect for brunch or supper. A bit of half and half is the secret to these fluffy and tender eggs.

Number Of Ingredients 10

2 medium Yukon gold potatoes (3/4 pound), peeled and sliced into 1/8-inch half moons
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 large eggs
1/4 cup half and half
2 scallions, greens and whites sliced
2 scallions, greens and whites sliced
2 ounces fresh goat cheese
2 ounces Spanish chorizo, paper casings discarded, meat cut into small pieces
2 teaspoons chopped fresh parsley, for garnish

Steps:

  • Toss the potatoes with the oil, 1/2 teaspoon salt and a few grinds of pepper in a microwave-safe 9-inch pie dish. Cover completely with a piece of wax paper. Microwave on high (at 100 percent power), stirring halfway through, until the potatoes are soft and translucent, 6 minutes in an 1,100-watt oven, 9 minutes in a 700-watt oven. (When removing the wax paper, be careful to avoid the hot steam.) Pierce the potatoes in a few places with a paring knife; if it doesn't go through easily, microwave again, covered, in 30-second increments.
  • Whisk together the eggs, half and half, scallions, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Pour over the potatoes, and stir. Microwave, uncovered, on high (at 100 percent power) until the edges of the eggs are set, 1 minute in an 1,100-watt oven or 2 1/2 minutes in a 700-watt oven. Stir completely to redistribute the more-cooked eggs toward the center and the less-cooked eggs near the edges. Microwave, uncovered, until most of the eggs are set, 1 minute in an 1,100-watt oven or 1 minute 45 seconds in a 700-watt oven. Dot with small pieces of goat cheese, and stir as before. Gently smooth the top of the potato-and-egg mixture (it's OK if the top is slightly uneven), and sprinkle with the chorizo. Cover with a piece of wax paper, and microwave on high (at 100 percent power) until all the eggs are set and the cheese has melted, 1 minute in an 1,100-watt oven or 2 minutes in a 700-watt oven. Let sit, covered, for 3 minutes.
  • Garnish with chopped parsley, and serve warm or at room temperature.

1 large shallot, thinly sliced
8 ounces sweet Italian sausage, casings removed
1/4 teaspoon red pepper flakes, optional
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups cooked small pasta, such as elbow or pennette
1 cup cooked vegetables, such as green beans or broccoli, chopped into 1/2-inch pieces (4 ounces)
6 large eggs, at room temperature, beaten
1/2 cup shredded provolone (4 ounces)
1/3 cup freshly grated Parmesan

Steps:

  • In a 12-inch nonstick skillet, heat the oil over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the sausage, red pepper flakes, if using, salt and pepper. Using a wooden spoon, break the sausage into 1/2-inch pieces. Cook, stirring occasionally, until cooked through, about 8 minutes. Add the pasta, vegetables and beaten eggs. Stir until the eggs are almost scrambled, about 2 to 3 minutes. Remove the skillet from the heat and stir in the cheese. Allow the cheese to melt slighty. Transfer the scramble to 4 plates and serve.

VEGAN TOFU AND SPINACH SCRAMBLE

One 14-ounce package firm tofu, drained and cut into 1/2-inch cubes
1/2 teaspoon ground turmeric
Kosher salt and freshly ground black pepper
1/8 teaspoon ground cayenne pepper, optional
2 tablespoons extra-virgin olive oil
3 scallions, thinly sliced, green and white parts separated
5 ounces fresh spinach, chopped (about 5 packed cups)
1 to 2 teaspoons fresh lemon juice
1 cup grape tomatoes, halved
1/2 cup fresh basil, roughly chopped

Steps:

  • Combine the tofu, turmeric, 1/4 teaspoon salt, 1/2 teaspoon black pepper and cayenne, if using, in a medium bowl. Toss well to combine and set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the scallion whites and cook, stirring, until soft, about 1 minute. Add the tofu mixture and cook, stirring occasionally, until the tofu is lightly browned and resembles scrambled eggs, about 5 minutes.
  • Add the spinach, lemon juice and 1/2 teaspoon salt and stir until the spinach is wilted, about 1 minute. Add the tomatoes and scallion greens and stir until the tomatoes are just heated through and begin to soften, about 1 minute. Remove from the heat, add the basil and stir to combine. Season with salt and pepper.

KENTUCKY FARMHOUSE SCRAMBLE

1 tablespoon butter
1 tablespoon canola or vegetable oil
8 ounces diced boneless country ham
1/2 cup diced roasted red peppers
12 large eggs, whisked until well blended
4 ounces grated Jarlsberg cheese (recommended: Kenny's Country)
Salt and pepper

Steps:

  • Heat a nonstick 12-inch saute pan over medium heat. Add butter and oil and swirl around the pan until melted. Add the country ham and saute until it begins to brown, about 3 minutes. Turn heat to low. Stir in roasted red peppers and beaten eggs. After the eggs begin to set, stir slowly from edge to edge with a heat-resistant rubber spatula until large curds form. This will take 5 minutes or so. When eggs are still moist and slightly runny, fold in the grated cheese and season with salt and pepper.
  • Remove the pan from the heat and serve with fried green tomatoes and buttermilk biscuits with sorghum butter.

2 (6 inch) corn tortillas (or flour tortillas)
2 ounces vegetarian soy chorizo, chopped
2 scallions, chopped
3 large eggs, lightly beaten
1 ounce monterey jack cheese, coarsely grated
kosher salt & freshly ground black pepper

Steps:

  • For the salsa:.
  • In a small bowl, combine the tomatoes, onions, cilantro and jalapeno. Stir together, season with salt and pepper and set aside.
  • For the scramble:.
  • In a medium nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add the tortillas and cook until golden, about 3 minutes per side. Transfer to a paper towel-lined plate to drain. Add the remaining 1 tablespoon oil to the skillet with the soy chorizo. Cook until the chorizo begins to sizzle, about 2 minutes. Add the scallions and cook 2 minutes. Stir in the eggs with a spatula until the eggs begin to set, about 1 minute. Add the cheese and season with salt and pepper. Cook, stirring constantly, until the eggs are set, 30 seconds to 1 minute.
  • Serve the scramble on top of the fried tortilla and scatter salsa over top.

3 large lemons, cut in 1/8ths
2/3 cup sugar
2 1/2 cups water
1 cup ketchup
1/3 cup brown sugar
1/2 cup soy sauce
1/3 cup apple cider vinegar
1 small onion, finely chopped
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic
1 teaspoon cracked black pepper
1 teaspoon ginger
1/2 teaspoon basil
1/2 teaspoon thyme
6 pork chops (rib or 1st cut preferred)
1 cup flour, for dredging

Steps:

  • In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
  • Strain the mixture.
  • Place the lemon mixture & remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
  • Simmer for 1 hour on medium, stirring often, being careful not to burn.
  • Remove from heat & set aside to cool.
  • Preheat oven to 325°.
  • Dredge chops in the seasoned flour.
  • Brown chops in olive oil over med.-high heat until golden brown -- cook in batches, if need be.
  • Place chops in roaster & pour lemonade sauce over.
  • Cover roaster & place in oven.
  • Cook for 1½ hours or until tender.
