In Chinese tradition, eight is a lucky number. It's represented here by the delicious "treasures" that comprise the dish: eggs, shrimp, shiitake mushrooms, edamame, sausage or ham, pineapple, cashews and cilantro. Cooking and chilling the rice the day before makes it easy to crumble into separate grains, which is essential for fluffy, flavorful fried rice. From Cooking Club of America.

4 cups cooked long-grain rice, chilled
3 tablespoons vegetable oil, divided
3 eggs, well-beaten
1/4 cup chopped onion
1 lb shelled deveined uncooked medium shrimp
6 ounces shiitake mushrooms, stems removed, sliced
3/4 cup frozen shelled edamame or 3/4 cup baby peas, thawed
1 cup diced chinese smoked sausage or 1 cup ham
3/4 cup well-drained canned pineapple tidbits or 3/4 cup diced fresh pineapple
3/4 cup dry roasted salted peanut
1/2 cup thinly sliced green onion
1/2 cup purchased stir-fry sauce
1/3 cup chopped cilantro
2 tablespoons dark sesame oil

Steps:

  • Break up rice into individual grains, using your hands to crumble it gently.
  • Heat 1 tablespoon of the vegetable oil in large nonstick skillet over high heat until hot. Add eggs; tilt or swirl pan to cover bottom with eggs. (Lift cooked edges and tilt pan to allow uncooked egg to run underneath.) When set, gently turn eggs; cook 10 seconds. Place on cutting board; cool. Roll up; cut crosswise into 1/8-inch-wide ribbons. Fluff to loosen.
  • Heat remaining 2 tablespoons vegetable oil in same skillet over medium heat until hot. Cook onion 15 seconds or until shiny and fragrant. Add shrimp; cook 1 to 2 minutes or until shrimp just begins to turn pink. Add mushrooms and edamame; cook 1 minute or until mushrooms are shiny and softened and shrimp turn pink.
  • Add rice; toss to combine. Add egg ribbons, sausage, pineapple, cashews, green onions and stir-fry sauce; cook 2 to 3 minutes or until rice is tender and all ingredients are heated through. Stir in cilantro and sesame oil.

4 cups glutinous rice (naw mai)
water
2 links pork sausage, Chinese, slice half moon
3 links liver sausage, duck, Chinese, slice half moon
1 1/2 lbs barbecued pork, Chinese and slice small cubes
1/8 cup shrimp, dried and presoak
6 black mushrooms, Chinese, presoak and 1/4-inch cube
1/4 cup radish, salted, Chinese, small cubes
1 cup water chestnut, 1/4-inch cube
1/4 cup bamboo shoot, soak and cut into 1/4-inch cube
1/2 cup frozen green pea
oil
garlic powder
onion powder
salt
white pepper
oyster sauce
cashew nuts

Steps:

  • Combine the rice and water and wash 3 times. Bring the rice to a rapid boil and continue to cook by the absorption method. Simmer and covered, on low heat for 20 minutes. Turn off the heat, and allow standing for 20 minutes.
  • In a mixing bowl add all of the meat and vegetables and combine together.
  • In a wok add in 3 tbsp oil and all of the meats mixture, garlic and onion mix, salt and white pepper and stir-fried ingredients after 3 to 4 minutes. Take a spoonful and taste for seasoning and salt and pepper to taste mixer and add in the rice and combine through. Add oyster sauce to taste and top with cashew nuts.

POP'S EIGHT TREASURE RICE FLAMBEE AND GRAND MARNIER ORANGES

2 cups sweet (sticky) rice
1/3 cup each of the following, all 1/4-inch dice
Dried lotus seeds (soaked)
Dried lichee
Dried dragon eye, (soaked)
Dried orange peels, chiffonade
Dried mango
Toasted almonds
Candied ginger
Golden raisins
1 (18-ounce) can red bean paste, sweetened
1 tablespoon butter
3 fresh mandarin or other oranges, segmented
1 cup Grand Marnier

Steps:

  • Wash and soak the sweet rice overnight.
  • Add the rice to a medium sized pot and pour enough water to cover about 1-inch more than the level of the rice. Bring the water to a boil, then reduce the heat to low and cook for 30 minutes. Remove the rice from the heat and let cool.
  • Coat the inside of a large, shallow bowl or deep plate with oil or non-stick spray. Place a thin layer of the cooked rice into the bottom of the bowl. Cover the entire inner surface of the bowl, making sure that there are not any gaps or holes. Press the nuts and fruits into the rice layer. Be sure that the pattern is comprised of different nuts and fruits so that each piece of the rice will contain all of the components.
  • Add the bean paste above the rice layer. Make sure that the paste is just about flush with the top of the bowl. Cover the paste with another layer of rice.
  • Place the rice-coated bowl into a large bamboo steamer. Using high steam, cook the filled bowl for 2 hours until the rice and the nuts are very soft.
  • Flip the bowl over onto a plate. In a sautee pan, add butter and sautee the oranges. Deglaze with Grand Marnier and flambe. Pour on top and serve as soon as possible. Plating: Slice the rice dome in slices like you would a round cake or a pie and serve.

EIGHT-TREASURE GLUTINOUS RICE CAKE

This is a most special sweet, a classic from Shanghai that has come to be a festive dish throughout all of China, particularly in Nanjing and Suzhou. Historically the "8 treasures" included lotus seeds, almonds, red dates, sweet bean paste and pieces of preserved or candied fruit, over which a sugar syrup was poured at serving. It requires some effort to make and involves steaming rice twice, so it is rarely, if ever, a dish made in the home. It is, however, a wonder and satisfying dish to prepare.

1/4 cup dried apricots
1/4 cup dried pears
1/4 cup dried mango
1/4 cup dried pineapple
1/8 cup dried peaches
1/4 cup honey dates or preserved dates, pitted
1/8 cup raisins
2 1/2 cups cold water
1 1/2 cups glutinous rice
1 1/2 tablespoons peanut oil
1 cup red bean paste

Steps:

  • Cut all dried fruit, except the raisins, into 1/3-inch dice. Place all fruit, including the raisins, in a large bowl. Reserve.
  • Wash the glutinous rice 4 times in room-temperature water and drain well. Place in a cake pan. Add 2 1/2 cups cold water to the rice. Place the cake pan in a steamer, cover, and steam for 30 to 40 minutes, until the rice is cooked. It will acquire a glaze and be translucent. Turn off the heat. Scoop out the rice, add to the bowl of fruit, and mix well to combine all ingredients thoroughly.
  • Coat a steamproof bowl, 1 1/2-quart size, with 1 1/2 teaspoons of peanut oil, making certain the bowl in well coated. Coat the hands as well, so the glutinous rice may be handled. Pick up half of the rice-fruit mixture, coat it with the remainder of the peanut oil, and pack it into the bowl, pressing it to the sides. Place the red bean paste in the center of the rice mixture and spread it a bit. Place the remainder of rice on top and press down gently.
  • Place the bowl in a steamer, cover, and steam for 45 minutes. Turn off the heat. Remove the bowl and allow to cool for about 5 minutes. Pass a blunt dinner knife around the edge of the rice to loosen it. Place a serving plate, inverted, on top of the bowl, and upend it. The cake should slip out easily. Its fruit-dotted texture will glisten.
  • Use a large spoon to divide among individual bowls. Because of its texture, the steamed glutinous rice is virtually impossible to slice as one might a cake. Often a sugar syrup is poured over Eight-Treasure Glutinous Rice Cake when served. It is not at all necessary, because the various fruits, their sugars concentrated from drying, and the red bean paste are sufficiently sweet.
