1 (19 ounce) can fava beans or 2 cups young fresh fava beans, out-of-the pod and steamed
1 medium English cucumber, coarsely chopped
1 large roma tomato, coarsely chopped
1 cup pitted kalamata olive, chopped
1 medium red onion, finely chopped
1 head romaine lettuce, finely chopped
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 teaspoons dried sweet basil leaves
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 cup flat leaf parsley, finely chopped
coarse-ground black pepper
sea salt

Steps:

  • Combine fava beans, chopped cucumber, tomato, olives, red onion, romaine, and parsley in a bowl.
  • For the dressing, combine olive oil, red wine vinegar, water, and the remainder of the spices in a lidded jar.
  • Shake jar until dressing ingredients are thoroughly mixed.
  • Pour dressing over salad and mix ingredients until well coated.
  • Refrigerate at least 1 hour before serving.
  • Serve salad on top of extra romaine or butter lettuce leaves for an attractive presentation.
  • Makes 4 main dish or 6 side-dish servings.
  • Variations on a Theme: If fava beans are not available or not in season, substitute 2 cups cooked cannellini (white kidney) or Great Northern white beans in the recipe.

1 medium cucumber
1 lb fava beans or 1 lb red kidney beans, rinsed drained cooked
1 cup tomatoes, diced
1/2 cup of fresh mint, chopped
1/2 cup fresh flat-leaf parsley, chopped
1/4 cup red onion, finely chopped
1/4 cup tahini (sesame paste mixed with 1 tablespoon cold water)
1/4 cup fresh lemon juice
2 garlic cloves, finely chopped
1 dash ground red pepper
salt & freshly ground black pepper, to taste

Steps:

  • Pare and seed cucumber; cut cucumber lengthwise into eighths; dice.
  • In large mixing bowl, combine all ingredients.
  • Toss well and serve at room temperature or warm slightly.
  • EACH SERVING (1 cup) PROVIDES: 3/4 Fat, 1 1/4 Vegetables, 1/4 Protein, 2 Breads, 10 Optional Calories.

2 kg broad beans, in the pod
5 tablespoons olive oil
1/2 lemon juice
2 garlic cloves, chopped
1 teaspoon ground cumin
2 teaspoons paprika
1 tablespoon coriander, finely chopped
1 preserved lemon, chopped
1/4 cup black olives

Steps:

  • bring a large pan of salted water to the boil.
  • Meanwhile pod the beans, put beans into boiling water and boil for 2 mins.
  • drain and refresh under cold running water.
  • slip off and discard the outer skin of the bean.
  • put beans into heavy pan with the olive oil, lemon juice, garlic, cumin and paprika, cook gently over low heat for about 10 mins.
  • season to taste with salt and pepper and leave to cool in the pan.
  • tip beans into a serving bowl, scraping in all the juices from the pan, toss in the preserved lemon, coriander and olives.

This is a very common food here in Egypt. Due to its cost, which is extremely low, it is a popular dish for many. With this recipe you can enjoy a traditional Egyptian breakfast in the comfort of your home! There is a LONG way to make this too, using dried fava beans and soaking and then cooking, this recipe makes it A LOT easier and in my opinion is even better! Enjoy!

1 (16 ounce) can fava beans (you can find at any middle eastern store, maybe even like a trader joe's or organic store)
1 small lemon, juice of, only
3 tablespoons canola oil (or any oil you prefer)
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 teaspoon ground cumin
1 onion (Small size and chopped- optional, if you don't want to use just skip step number 1)
pita bread

Steps:

  • Chop up a small onion with a bit of oil and sauté in small pot until tender, remove from heat.
  • Open can of fava beans and dump into pot, along with juices, do not drain.
  • Take a potato smasher and smash up the fava beans. I leave a few whole, but basically smash up most of them.
  • Add salt, ground cumin and cayenne pepper to your liking.
  • Squeeze juice of lemon into pot.
  • Add a splash of olive oil.
  • Heat just to boil and then that's it.
  • Spoon some beans into a flat bowl, splash some oil on top of them. I like to add the following garnish, but you can leave garnish out and just eat that way they are just as yummy too.
  • This is something I do sometimes to this dish as well-MY SPECIAL GARNISH. 1. Chop a few slices of red onion fine. 2. Chop a small (or half) green bell pepper finely. 3. Chop a handful of black olive slices finely. 4. Chop a small tomato finely. 5. A little bit of chopped parsley 6. Drizzle of tahina.
  • Okay now you add all these finely chopped veggies around the bowl edge and finish off with a drizzle of tahina in middle of bowl. Looks beautiful! Then i mix all together and eat it mixed up!

If you live in the Seattle area, a little store in the Pike Place Market called The Souk sells fava beans in cans; The store has a lot of great food items.

1 (15 ounce) can cooked fava beans or 1 1/2 cups cooked fava beans
1 small onion, chopped
3 garlic cloves, chopped
1 large tomatoes, chopped
1/2 teaspoon chili powder
1/2 teaspoon curry powder
1/2 teaspoon cumin (but season to your own taste!)
1 dash cinnamon (but season to your own taste!)
1 dash clove (but season to your own taste!)
1 dash turmeric (but season to your own taste!)
1 dash cayenne (but season to your own taste!)
1 tablespoon lemon juice (or to taste)
salt
1 small potato, peeled and cooked, added when onion is cooking (optional)

Steps:

  • First, cook onion in vegetable oil until limp.
  • Add garlic and cook a little.
  • Add large chopped tomato and cook until it just starts breaking apart.
  • Add spices and lemon juice and stir.
  • Add fava beans and salt to taste.
  • Leave on low heat for about 15-20 minutes.
  • Put in blender and puree until smooth.
  • Place in serving dish and drizzle generously with olive oil.
  • Eat with Carol's pita bread (warm crusty french bread is good too).

1 lb small dried fava beans, soaked overnight
1/4 c extra virgin olive oil
3 Tbsp fresh flat leaf parsley, minced
3 Tbsp fresh dill, minced
1 tsp ground cumin
1/4 tsp ground cinnamon
1/8 tsp ground cardamom
1 fresh bay leaf, bruised
2-4 clove garlic, finely minced
large lemon, juice of
salt, to taste
cracked black pepper, to taste
1/4 tsp nigella seeds, for garnish (optional)

Steps:

  • 1. If using DRIED beans: Drain beans and place in a 4-qt. saucepan, cover with water by 2″, and bring to a boil over high heat; reduce heat to medium-low, and cook, covered and stirring occasionally, until tender, about 50 minutes. Note: You can also cook the beans in a crock pot or pressure cooker.
  • 2. If using CANNED beans: Rinse beans well in a strainer. Set aside to drain.
  • 3. Drain beans, and transfer to a bowl; add olive oil, parsley, dill, cumin, cinnamon, cardamom, bay leaf, garlic, lemon juice, salt and pepper; let sit for 30 minutes to meld flavors before serving. Best flavor @ room temperature.

2 (15 ounce) cans kidney beans, drained or 1 1/2 cups dried brown beans, soaked overnight
3 sprigs thyme
2 bay leaves
1 onion, halved
4 garlic cloves, crushed
1 1/2 teaspoons cumin seeds, crushed
3 green onions, finely chopped
6 tablespoons fresh parsley, chopped
4 teaspoons lemon juice
6 tablespoons olive oil
3 hard-boiled eggs, chopped
1 -2 dill pickle, chopped

Steps:

  • If using dried/soaked beans, place in a saucepan, cover with water and boil 10 minutes, then proceed. If using canned kidney beans, place in a saucepan, cover with water, and add thyme, bay, and onion. Bring to a boil, then reduce heat to simmer 10-15 minutes for canned, one hour for dried.
  • Drain and discard the herbs and onion. Chill beans while you mix together remaining ingredients ("dressing"), except the egg and pickle.
  • Stir "dressing", and pour over beans and toss lightly to coat.
  • Gently fold in eggs and pickle, then serve.
  • *We chilled this salad an hour more, then served.
