1 box (10 oz) frozen broccoli & zesty cheese sauce
1 can (10.2 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (5 Count)
9 eggs
1 1/2 cups whole milk or 2% milk
1 3/4 cups diced cooked ham
1/3 cup chopped green onions
1 1/2 cups shredded extra sharp Cheddar cheese (6 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Microwave broccoli 1 to 2 minutes or just until thawed. Separate dough into 5 biscuits; cut each into 8 pieces. Place evenly in dish.
  • In large bowl, beat eggs and milk with wire whisk until blended. Stir in ham, onions, broccoli and 1 cup of the cheese. Pour over biscuits in dish.
  • Bake 20 minutes. Cover loosely with foil sprayed with cooking spray; bake 35 to 40 minutes longer or until center is set. Top with remaining cheese during last 5 minutes of bake time. Garnish with additional chopped green onions, if desired.

1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded part-skim mozzarella cheese
2 tablespoons butter
1/2 pound sliced fresh mushrooms
1 medium sweet red pepper, chopped
6 green onions, chopped
1-3/4 cups cubed fully cooked ham
8 large eggs
1-3/4 cups 2% milk
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Sprinkle cheeses into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat; saute mushrooms, red pepper and green onions until tender. Stir in ham; spoon over cheese. , In a large bowl, whisk together eggs, milk, flour, salt and pepper; pour over ham mixture. Refrigerate, covered, overnight. , Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 35-45 minutes. Let stand 5 minutes before serving.

1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.

These simple little ramekins make for an easy brunch. You can add almost anything you like - bacon, mushrooms, diced artichoke hearts. Just make sure the additions are fully cooked, and you don't overflow the cups. You could add a few drops of hot sauce if you like, or a spoonful of salsa. You could add a pinch of nutmeg, or a pinch of ground mustard. These are easy and real refrigerator velcro, infinitely adaptable

2 tablespoons olive oil
1/2 onion, chopped
1 large garlic clove, finely minced
3 ounces breakfast ham, diced
3 tablespoons chopped fresh chives, divided
1 tablespoon chopped fresh basil
4 tablespoons grated cheddar cheese (1/4 cup)
salt, to taste
fresh ground black pepper, to taste
4 tablespoons half-and-half (1/4 cup)
4 eggs
4 teaspoons grated parmesan cheese

Steps:

  • Preheat oven to 425°F Spray four 8-ounce ramekins with non-stick cooking spray.
  • In a small saute pan, heat olive oil over medium heat until shimmering. Add onion and saute until soft but not colored, 3-5 minutes. Add garlic and saute until fragrant, about 1 minute more. Divide evenly between prepared ramekins.
  • Divide ham equally between ramekins. Add about 1/2 tbsp of chives to each ramekin, reserving the remaining tablespoon for garnish. Divide basil evenly between ramekins. Add 1 tbsp grated cheddar to each ramekin. Season each dish with salt and pepper.
  • In a small bowl, beat 1 tbsp half-and-half with one egg. Pour into one ramekin and stir well to combine. Repeat until all four ramekins are prepared. Top each dish with 1 tsp grated parmesan. (Ramekins can be refrigerated at this point for up to two hours.).
  • Place ramekins on a baking sheet and place in the preheated oven for 20-25 minutes (25-30 if refrigerated) until tops are golden and slightly puffed. Divide remaining chives between the ramekins, and serve warm with toast or biscuits. Leftovers can be kept refrigerated, covered, for up to 3 days.

The genius move behind these easy sandwiches is cooking enough scrambled eggs for twelve on a baking sheet; no stovetop required. Top with sliced cheese and sandwich between pillowy pull-apart rolls, then let the oven do the rest of the work for you!

10 large eggs
4 scallions, finely chopped (about 3/4 cup)
Kosher salt
One 12-pack pull-apart dinner rolls
2 tablespoons unsalted butter, at room temperature
6 slices American cheese (4 ounces)
4 slices deli ham, finely chopped (4 ounces)
Hot sauce, such as Tabasco, for serving

Steps:

  • Position a rack in the lower third of the oven. Preheat the oven to 350 degrees.
  • Place two 2-foot-long pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
  • Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
  • Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
  • Add 1 tablespoon of butter to the prepared baking sheet and place in the oven to melt, about 3 minutes. Spread the butter all over the foil with a pastry brush and then pour in the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and return to the oven. Bake until the eggs are completely set, about 10 minutes.
  • Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Bake until the cheese is melted, about 5 minutes.
  • Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Cut or pull the rolls apart. Serve with hot sauce.

a good slice of lean ham
1 egg , beaten
2 tbsp milk
small knob of butter
1 tbsp olive oil
ready-made tomato salsa , to serve

Steps:

  • Lightly butter and sandwich the bread with a good slice of lean ham. Cut the sandwich in half diagonally. In a shallow bowl, beat the egg and milk, then season to taste. Melt a small knob of butter and 1 tsp olive oil in a non-stick frying pan until the butter foams. Dip the sandwich halves into the egg on both sides, then add to the pan. Cook over a medium heat for 2 mins each side or until set and golden. Serve with spoonfuls of ready-made tomato salsa.

Easy Ham, Cheese, Egg Quiche image

Delicious prepared with either real ham or turkey ham, this simple quiche has become a favorite in our house. I remember eating it periodically at church potlucks as a child. Butter and cheddar add to the flavor, as does using Omega 3 eggs (Saunders or Eggland's Best). I also use Bisquick for the biscuit mix but do recommend you make your own biscuit mix for health reasons. I use unsalted butter and skim milk. You may use a round 10" cake pan instead of a pie plate. We tend to get 4 large servings out of this, but one could get 6-8. Enjoy!
