Cheddar, cherry tomatoes and avocado are the key ingredients in this simple and fun meal-for-one

Ingredients

2 eggs , beaten
50g cheddar , very finely grated
2 chunky slices bread from a small crusty loaf, or 3 from a baguette
handful cherry tomatoes , halved
½ avocado , diced
chunk of cucumber , diced
small handful rocket

Steps:

Heat a good non-stick frying pan (if you don't have one, heat a normal pan with a knob of butter and drizzle of oil). Whisk the eggs and cheese with some seasoning in a shallow dish. Lay the bread in so it soaks up a little egg, and scoop out any extra cheese, pressing it to stick onto the bread. Fry for 2-4 mins on each side until golden.
Mix salad ingredients together with some seasoning and serve alongside.

Ingredients

2 medium eggs
1 tbsp milk
2 slices white bread or brown bread
1 tbsp butter

Steps:

Lightly beat the egg in a shallow bowl along with the milk. Season with salt and black pepper.
Dip each slice of bread into the egg mixture, making sure it has soaked up all of the liquid. Heat a frying pan over a medium heat and add the butter. Swirl the butter around the pan and when it's beginning to foam, add the bread and fry on each side for 1 min or until golden brown. Transfer to a plate and serve with crispy bacon or fruit compote.

Boiled hot dogs are place on a buttered slice of bread with cheese, folded in half and baked until golden brown and the cheese is melted. Baking time will vary with your oven. These are easy to make and really good.

Ingredients

8 hot dogs
8 slices white bread
2 tablespoons butter
8 slices American cheese

Steps:

Cook hot dogs in boiling water until done.
Preheat oven to 350°.
Spray a 9 x 13 baking pan with non stick spray.
Spread butter on both sides of each piece of bread.
Put a slice of cheese on one side of bread.
Place a hot dog in the middle.
Fold up the sides.
Pin with a toothpick.
Then lay hot dog sandwiches side by side in the baking pan.
Bake until bread is toasted brown and cheese is melted.
Watch carefully so they don't burn.
