BAKED HAM AND EGG CUPS

12 thin slices Black Forest ham (about 10 ounces)
1/2 cup shredded Swiss cheese
6 large eggs
6 tablespoons heavy cream
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh chives

Steps:

  • 1. Preheat the oven to 400 degrees F. Line the ramekins with nonstick aluminum foil and place on a baking sheet.
  • 2. Stack 2 slices of ham directly on top of each other and fit into a ramekin to form a cup, making sure the ends of the ham hang over the ramekin slightly. Repeat with the remaining ham. Dividing evenly, sprinkle half of the cheese into the bottoms of the ham cups. Crack an egg into each and add 1 tablespoon cream. Divide the rest of the cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper evenly among the cups.
  • 3. Bake until the egg whites are set and the yolks are still soft, 20 to 24 minutes, rotating the baking sheet halfway; some cups may cook faster than others. Sprinkle with the chives and then carefully lift the ham cups out of the foil so you do not tear the ham or break the shape of the cup. Place on a large platter or on individual plates and serve.

These cunning little ham and cheese cups make for an easy breakfast or a fun brunch treat-you can even prep this recipe, easy as they are, the night before.

6 thin slices of ham
6 tablespoons cheddar cheese (grated)
2 green onions
6 eggs
1 tablespoon milk
Cooking oil spray

Steps:

  • Gather the ingredients.
  • Preheat an oven to 350 F.
  • Spray a muffin pan (6 tins) with cooking oil or grease with butter. Ideally, use a nonstick muffin pan. Line each tin with a piece of ham. Let the center of each piece of ham drop into the bottom of the tin, then press it down and along the edges, letting the ham fold to fit the tin. Put 1 tablespoon of cheese in the bottom of each ham-lined tin. Set aside.
  • Trim the green onions and finely chop the white and light green parts. Discard the dark green tops or reserve for another use. Divide the chopped green onion evenly between the 6 tins.
  • Crack the eggs into a medium bowl. Whisk the eggs until smooth, with no puddles of yolks or strings of whites. Add the milk and whisk to combine.
  • Divide the egg mixture evenly between the 6 tins. Pour the mixture gently into the tins. As you pour, some of the egg mixture may flow in between the tin and the ham-don't worry, that's why you've sprayed the tin with oil!
  • Bake until the egg mixture puffs slightly and is set, about 20 minutes.
  • Let the ham and egg cups sit a few minutes before removing them from the tins. Use a spoon or small spatula to gently remove the ham and egg cups from the tins.
  • Serve immediately (although they aren't bad just warm or even at room temperature). Enjoy!

I have not tried this yet. The recipe came from the Clean Home Journal Website. It is a pretty simple recipe with impressing results. They would be pretty for a brunch.

2 tablespoons unsalted butter or 2 tablespoons margarine, melted
10 ounces ham, black forest cut slightly thinner than a slice of American Cheese (12 slices of meat total) or 10 ounces virginia smoked ham, cut slightly thinner than a slice of American Cheese (12 slices of meat total)
2 tablespoons maple syrup
2 tablespoons finely chopped fresh dill, use 1 1/2 teaspoons or 2 tablespoons chives, if using dried herbs, use 1 1/2 teaspoons
12 large eggs
1/2 teaspoon salt
1/4 teaspoon black pepper (optional)

Steps:

  • Position one baking rack in the middle of the oven & preheat to 400 degrees F. Using a pastry brush & the melted butter or margarine, generously coat the inside of all 12 cups in a standard-size muffin tin.
  • Fit 1 slice of ham into each cup, pressing down to gently line the cup. The ends will stick up over the edges of the cups before cooking. (The ham shrinks during baking resulting in a more cup-like appearance.).
  • Spoon 1/2 teaspoon of maple syrup into the bottom of each ham cup, followed by 1/2 teaspoon of dill or chives. (If using dried herbs, use 1/8 teaspoon.) Crack 1 egg into each ham cup.
  • Bake until whites are cooked and yolks are firm, about 20 minutes If any large bubbles form on the eggs during baking, pierce them with a toothpick or wooden skewer while they cook.
  • Remove the baking pan from the oven and season eggs with salt and pepper. Using 2 teaspoons or small spatulas, carefully lift the full ham cups out and place them on a serving plate. Garnish with fresh herb sprigs if using. Serve immediately.

Tasty toast cups with a hint of maple syrup, an egg, and a tasty surprise of bacon inside. A delicious and fun breakfast or brunch; serve with a cup of coffee or glass of orange juice. Make these in regular muffin cups (or you can use buttered ramekins, but increase the time to about 16 minutes because it takes longer for the heat to penetrate the ramekins). 2 tablespoons pure maple syrup, plus more for serving (optional)
6 slices bread
3 slices bacon, cooked until crisp and broken into small pieces (or use diced ham)
6 large eggs
fresh ground black pepper (optional, to serve)

Steps:

  • Preheat the oven to 400 degrees F. Butter six muffin cups.
  • In a small saucepan, melt the butter and add the syrup. (You can also do this in a microwave).
  • Remove the crusts from the bread. Flatten each slice with a rolling pin. Brush both sides of each slice with the syrup mixture.
  • Put one slice into each muffin cup and sprinkle the bacon pieces in the cups.
  • Break an egg into each cup and bake until the eggs are set; start checking after about 5 minutes.
  • Lift the toast cups from the pan and serve immediately, drizzled with additional syrup, if desired.
